You could have her make a frame with a picture in it. Several ways to do that if your interested. If you have a home depot anywhere near you they have kids classes one Sat. a month(days vary by store). She can pick her project to make there get help if she needs it and take it home to decorate. Those classes are free by the way. Micheals does this too sometimes there is a fee involved.

My dds have made dh t shirts and sweatshirts in the past. We always include their hand print, and name, then I let them paint whatever else they like. One year we even did footprints!!! :)
 

Consider having her make him a Christmas Tree ornament. This will be treasured year after year as they unpack all the Christmas decorations but won't be "clutter" the rest of the year. As much as we love our kids, there is a limit to how much of their artwork/crafts that we can keep on display!

My 5 year old daughter and I are going to make magnets for family members. She is going to draw a picture for each family member, and I will scan it, shrink it, and print it out on a color printer to fit into those premade plastic magnets (they could also hold a small picture).
