I am making this for dessert tonight and as my family always enjoy it I thought that I would share the recipe, one word of wawrning when you pour on the chocolate sauce just prior to putting it in the oven it looks awful! but when its cooked its magic as the sauce has thickened and is under the sponge. Always comes up a treat.
100g (4 oz) Caster Sugar
100g (4 oz0 margarine
2 eggs - lightly beaten
75g (3 oz) self raising flour
4 tbsp cocoa powder
25g (1oz) pecan nuts, chopped - optional
75g (3 oz) demara sugar
Preheat the oven to 190 degrees C (375 degrees F, Gas 5). Cream together sugar and magarine until soft and fluffy. Gradually beat in the eggs. Sift the flour and 2 tbsp cocoa powder into creamed mixture and fold in. Fold in pecan nuts, (add some cold water if necessary to reach a dropping consistency). Spoon mixture into an ovenproof dish and level surface. Mix together the remaining cocoa powder and demerara suggar. Blend with 300mls/1/2 pint boint water until smooth, and pour over the sponge mixture. Bake for 35-40 mins. until sponge is cooked and sauce has soaked through to bottom of dish.
This dessert is delicious served with ice cream, fresh strawberries and kiwi fruit.
