I have my book in front of me but for the life of me can't find spaghetti squash and I think Spaghetti Squash must be 0??? but not sure since it is a veggie. Anyway, does anyone know how many points per serving and the easist fastest way to cook it (I hate cooking). Thank you very VERY much!

It's definitely 0 points like any other veggie. It has about 40 calories per cup, almost no fat, and about 2 grams of fiber. It's very, very good for you!

The easiest way I've found to cook it is to microwave it. Just poke some holes in it and pop in in the microwave for about 20-30 minutes or until it's tender. You can also roast it in a 350 degree oven for 40-60 minutes.

Once it's tender you would just slice it in half, scoop out the seeds, then use a fork to pull up the strands of squash. It will look just like spaghetti, hence the name.

Once it's out you can serve it with tomato sauce, some garlic and olive oil, or work it into a casserole in place of the starch.

pearlieq-THANK YOU very much!
Does it matter which way I cut it? I guess the long way, correct?
I will just nuke it and then cut and put some crushed cooked tomatoes on top. I can't wait to try it out. Thank you again and please just let me know about cutting it.
Thanks again.

ooohh, mabye I can use some shrimp and some margarine? That would be good too!

you can cut it longway's - easier to deal with.
I also cut the hard/stem end off before I put it in the microwave. Be sure to poke plenty of holes in it.
I am addicted to spaghetti squash! Enjoy!

Boil it??? Please explain? You boil it after you take it out of the squash.
Type slowly, I'm slow LOL
Thanks so much!

I just chop the squash in half, toss out the seeds and put it into boiling water - it is still in two large chunks at that time. I boil it about 20 minutes or until it starts to spaghetti up when I poke at the edges.

Oohh this sounds good. I'll have to get some this weekend. I like those 0 point foods!

I cut off the stem end, cut the squash in half lengthwise, scrape out the seeds with a spoon, and nuke until soft. About 25 min. I put it in a covered casserole. I like it better with some grated cheese and margarine than with spaghetti sauce.

I also boil it. I cut it, scoop out the seeds and then cut it into smaller pieces and boil it as I am boiling pasta for the rest of my family. It may take only a few minutes longer than the pasta I am making.
