well I guess for a comfort food that isn't that bad is my new way of making Shepards pie using mostly mashed cauliflower in place of the potatoes.. even my Hubs eats it that way..
but if I am stress eating comfort food then all I want is a bowl of white jasmine rice with butter and salt or some tortilla chips and salsa or maybe some white toast with butter and jelly..
 
I do not usually answer the questions of the day, but this one really hit home! For the first time in my life I feel like I am completely on board with a healthy lifestyle and it is really starting to show! I do think there is always room for improvement and feel like sometimes I need to take a deep breath and realize there will be bumps in the road and may have to take a few detours. My husband and I were just having a conversation today about how he has never seen me at my current weight and we have been together for 15+ yrs. I have made so many positive changes in my life over the last 18 months and am so proud of what I have accomplished. I still have a ways to go and still have so many things I want to accomplish, but for the first time it really seems like they are not nearly impossible to reach. Thank you guys for being such inspirations and support!

Sounds like you are really on a roll. My DH and I are both are pretty much our all-time low "married" weights right now and it feels GREAT that we are both there! You are right.... those things you want are NOT impossible to reach!~ You are well on your way to getting them!

I guess I'd better introduce myself. I am an elementary school teacher. I've taught for 18 years. I have an 11 year old and 5 yr. old- both girls.I'm a little overwhelmed with how everyone on here keeps everyone straight. It seems a little daunting to me.
A long time ago I was super aware of nutrition and calories; I had to take a break. Like, a 15 year break. Now, I'm kind of playing around with it. It is hard for me to always plan every thing I eat, so I'm entering my food in at the end of the day. Since I'm adding it up at the end, I go over some days. I'm going to continue for a little while doing this to see if I can get closer to my target calories with good choices; not obsessive planning.
Today wasn't too bad. I ate some great choices, some not so good. And I'm only 123 calories over. I think my calories might be too low anyway.

I applaud you for teaching for 18 years. It is a daunting job and takes great skill and the patience of Job. I salute you!!:thumbsup2

pjlla, I love to make soups as well. I made a great tomato soup a couple weeks ago and took that with some veggies on the side to work. For breakfast, one of my favorite things to make on a Sunday and then take to work all week are mini crustless quiches - I sautee whatever veggies I want, mix it with the eggs, milk, and some shredded cheese or even feta, add just a touch of salt and pepper, then scoop the mixture into a muffin tin and bake it. So great and very portable, I usually eat 2 for breakfast with a slice of GF toast. I also always take an afternoon snack to have at work, my favorite lately being either an apple or a pear with string cheese.

I've made those little egg pattie things before for DD.... not sure why I never think to make them for myself! :confused3 They are really yummy. Maybe I'll make up a batch next time I have a chance! Thanks for the reminder.

Steel cut oats are a huge comfort "treat" type food for me. I made them last week when my belly was acting up and YUM! Peanut butter is another comfort "treat" for me... so obviously that list was right on!

I make soups and stews a LOT in the colder weather and find them really comforting on a daily basis. For lunch today I finished up the mulligitawny soup and it was even better today. I'm going to make it again soon. My broccoli cheddar soup is super comforting as well. The recipe is on the healthy recipe thread if anyone is interested!

Pamela, glad that you are feeling better! :flower3: That was a tough bug that you had. Glad your menfolk survived, too. ;) Your stew recipe sounds like perfect comfort food. ::yes::

Yesterday's pork recipe for the crockpot was THREE THUMBS DOWN! So needless to say it was NOT comforting and the recipe will NOT be appearing on our recipe thread! :rotfl2:


My favorite comfort food is homemade macaroni and cheese. :love: I grew up on the stuff in the box but my mac and cheese is healthier and tastier with skim milk, a bit of butter, and smaller amounts of more flavorful cheese, and my secret ingredients: nutmeg and chile powder. Yum!

Time to head off to the the gym so I will be there when it opens at 5 a.m. That feeling that you have walking back out at 5:50 a.m. and being done with your workout -- priceless! :goodvibes

I haven't had that feeling in a long time and I actually miss it! Good for you! And I'll be looking for that mac and cheese recipe!!

I love chicken noodle soup for comfort food. I've found a great gluten-free canned version, or I make my own but with rice instead of noodles - that way, it's also lower in sodium.

I also love Italian food. There are some decent gluten-free pastas, but I've been using lately spaghetti squash in place of pasta - it makes a ton, it fills me up, and it adapts well to whatever I'm serving with it.

I also sometimes really like having breakfast for dinner as a way of comfort food - usually eggs, some kind of lean meat, and GF toast.

I do miss soft, warm bread though, especially rolls or biscuits - GF bread just doesn't compare! :rolleyes:

Breakfast is definitely a comfort meal! Sorry you haven't found a decent GF bread. :sad:

I am not as serious as I should be, I give myself a lot of slack because "I'm only 20" and I'm young and have a "high metabolism" but that is no excuse! I should be focusing on my health at any age! I hope to make this better by just simply trying harder. Not ordering spinach and artichoke appetizers
choosing healthier suppers, and not buying junk food!

Tuesday's QOTD:

Yay! One of my comfort foods is chicken noodle soup, so that's a good one!
But unfortunately being from the South, I have quite a few unhealthy ones as well! :lmao:

Fried chicken, I know how stereotypical!
Any alfredo pastas! I guess I can try to make a healthy version!
Mac and cheese is a favorite of mine!
Roast and green beans, at least the green beans are healthy!
Chocolate! Nothing healthy there, ( I don't like dark chocolate)
Seafood! This actually fairly healthy if you eat it without melted butter or dipping sauce, so yay again!
Baked potato soup! I have seen healthy recipes of this one, so I will have to try it!
And lastly, I love my local Chinese restaurants Egg Drop Soup! I don't think it's overly unhealthy, besides the sodium!

There are plenty of recipes that I can try and make my favorites healthier, so hopefully I can try them out soon!

Which leads me to the QOTD Monday, November 11, 2013: Do you feel like you are as serious about your healthy lifestyle as you need to be or do you feel like it could use a little improvement? If so, what can you strive for to get yourself where you need to be? It can be one of the ideas from the article or something else.

I am serious about my healthy lifestyle, but I could use some improvement. I haven't been tracking my food since this weekend and I need to start getting serious about tracking again. I feel like I do so well, then one bad snack (usually a treat like a cookie) and I crave more. It's so hard to get back on track once I am really off!

:rotfl2: I literally laughed out loud at this! My sister and I do the majority of the cooking, so when we run (or walk) this 5k, we move our family dinner to Saturday. DH and DSs will be going to his grandma's about an hour away on Thanksgiving day, but I am skipping it because of the race and sleep to get prepped for shopping :)


I had a good WI at my different WW meeting on Saturday and am now down to my lowest weight of the year so far. :cool2: It was interesting see another leader. It is good to have a backup for those days I can't make my regular meeting.

And I am very happy to report that I saw a new chiropractor last week and even after one adjustment I can tell that I finally going to find my running mojo again here very soon! :yay: I did 75 minutes on Saturday and that is the longest workout I've been able to do since August. So I am raring to go and have a great week!

I missed you all - but the last 10 days or so have been so busy with the move! And work on top of that... :crazy2:

I hope I got through all the stress (oh and my birthday :goodvibes) without too much damage. At least I feel like I did get quite some exercise with packing and unpacking and sorting through things. I have unpacked all the boxes, but things still need to be sorted more and so on. At least the new place looks like a home again! And a lovely one that I am very happy about!

I am really looking forward to having my kitchen back so that I can get back into a healthy eating routine. Also need to find a new exercise routine as I no longer can walk to work. I can bike, but currently my bike's light is not working properly and it is already dark when I get home from work. So currently I am taking the train home. I guess I need to go running more regularly again!! Need to figure out new running routes from the new place...

I had a lovely non scale victory last week - on my birthday on top! I was browsing a store as I need new pants. My old ones literally fell apart. I did not find the type that I wanted, but saw a very lovely pant suit for the office. And tried it on for fun. It turned out that the size 8 pants did fit very well! And then I tried on the matching jacket and looked at myself and nearly did not recognize myself. I always thought that pant suits did not fit me very well, they made me look boxy and fat. But this one made me look tall and slim! :thumbsup2 I liked it so much that I nearly bought it (would not have been wise since there are lots of expenses with the move this month...). In the evening I had dinner with a very good friend and I told her about it. And her comment was that she was not surprised because I do look tall and slim and that one can really tell that I lost quite a lot of weight! She knows about my weight loss efforts, but it was the first time that she told me that she could really notice a difference!! :goodvibes

I noticed recently that I am getting too lazy to track - and decided to restart with an effort to make sure to track every little thing I eat. If I know that I have to track it, it is so much easier to withstand the little temptations during the day!!

I just spent the last couple of hours reading this thread and (sort of) getting to know (and really like) all of you, soooooooooo - here's a little bit about me:


I'm a SAHM of 3, used to be pretty active until about 10 years ago when I busted up both of my legs in a car accident. I'm healed, but arthritic and crooked, under too much extra weight (sometimes having babies will do that, and too much pizza and wine I guess!).

My plan of attack has been to limit my calories and track everything I eat on MFP, walk at least 30 min. a day and see my chiropractor once a week to help put everything back where it belongs :D

Jumping right in:

I think I am right where I need to be for now, staying disciplined but not beating myself up too much; I have found that in the past I had gotten obsessive and overthought everything, which tends to make me burn out too quickly. My mantra as of late has been "Slow and steady wins the race".

I've been so distracted lately and haven't come to check this thread much! Getting ready for our cruise on Saturday.

QOTD: I feel like I'm doing well on my journey. Sometimes I think I'm being too strict with myself because I only eat what's on my idea of the plan and feel guilty to eat anything fun. But other times I feel like it's the way I should be because I'm making up for what I will be eating next week! Overall, I guess I'm doing fine. Always could use more water, of course.

If you read along and start chatting away, you'll get to know everyone and keep everything straight. Lots of us have been around for years, so we "know" each other and families, too. I'm also a teacher :) I've been teaching alternative education (special education and History) for almost 13 years.

It sounds like you're on the right track with adding up your calories. One you start, you'll even start remembering the calories for foods without looking them up. Good luck!

I love steel cut oats in the crockpot for breakfast. I also love the comfort foods of lasagna and chicken and dumplings. I'm really not sure that a good lasagna and dumplings can be made any healthier :lmao: So when we have these meals, I just watch my portion sizes.

Oh yeah...macaroni and cheese is another one I love. I use whole wheat noodles, 2% milk and low fat cheese. It's probably still not all that healthy, but it's better than what I used to make!

Good evening! I woke up this morning to that darn 4 letter S word :mad: I mean, I DO live in western PA and get lake effect snow off Lake Erie, but come on! I am not ready for snow yet! In fact, my 2 maple trees still haven't lost all their leaves. Apparently they did not get the memo that it's fall! The one finally turned yellow and after the snow last night and today, it is dropping leaves. The other is still green and stubborn. I guess I'll be raking leaves in the snow this year!

Our football team played a hard fought playoff game last night, but lost with 13 seconds left. The support of surrounding communities for these 2 boys who died in the accident is tremendous. Our big rival school took their whole football team to Erie to watch the game (it's about 1.5 hours). Their teachers sent our high school teachers food and other items yesterday (including their own counselors to be there for students), and their cheerleaders made a huge banner that is hanging in the cafeteria. It's such sad, sad event, but it really shows the class that people have.

Ok, I am off to scope out some Black Friday ads and have DSs make Christmas lists so I can give ideas to the grandparents. Have a great night and stay warm!

QOTD: why are they so much easier to whip out than a "healthy" meal??? I did it tonight, made homemade mac&cheese for dinner but had a reasonable serving! WOOT for me! I have not been good this week tracking, but plan to do better. This month has a lot of emotional challenges for me, but I would really like to try and get through semi-intact, if at all possible.
 
Still really busy here, the hits keep on comin'.

But I wanted to tell y'all that I joined Planet Fitness with 2 friends, hoping a 3rd will take the plunge.
Talk about motivation to go to the gym. I have people to hound me if I don't feel like going. LOL

Seems a bit quiet around here at the moment (but then I've been absent too!!)

Managed a few minutes online at work today, so thought I'd poke my nose in and see what's going on. Had a victory on the scales this week...164 officially at diet class, that's at the END of the day, instead of the early morning that I usually weigh for this thread. No WI from me until Monday though as I am going away tomorrow.......did I mention much that it's my birthday on Friday???? My 50th!!!!

QOTD about comfort foods...all of mine seem to involve starch!!! Potato starch to be more specific...I just love potatoes.

Mashed is my fave, but these days I do them with laughing cow light cheese instead of butter and cream!!

Baked comes next, love them with cottage cheese and strong cheddar mixed, and a sprinkle of cajun seasoning on the top.

Basically, I love anything with potato in it!!!

Running is going well, but had to miss my session on the treadmill on Monday as I was busy with other things. Am going out to run on the road tomorrow with OH though - he likes to keep me company in the dark (I wouldn't go outdoors on my own at this time of year anyway in an evening.) All ready for my 1st ever 10K on Sunday, and I've got over £100 in sponsorship too as it's for charity.

Not so sure I have anything to woohoo about, but I am still hanging in there. Eating choices still could be better. Life has just been a bit crazy recently. But I am hoping to be firmly back to tracking and eating sensibly as of today! :thumbsup2

I also decided to give the 30 Day Shred another try. I will not do it every day, but will take some rest days. Still need to figure out a sensible schedule - hopefully so that I can finish before Christmas. I feel like I need to get some more exercise and thought that that DVD was a great workout all around!

As to Tuesday QOTD: My comfort food is pasta. Does not seem to be very good for weight loss, but I have improved it! First, I managed to reduce my normal portion by a lot (I now eat only a little over half of my old portion size) by religiously weighing the pasta before I cook it. Then I am using whole weat pasta - and I must say that by now I really prefer it because it has more flavour. And then I add a lot of sauce that has lots of vegetables (mostly tomatoes). And with that it makes for a very easy, filling meal.

I also decided to give the 30 Day Shred another try.
Flossbolna, I'm a 30-Day Shred fan as well. I also listen to Jillian Michaels' podcast - I'm not sure what your exact goals are, but she recommended her Ripped in 30 DVD to a caller because she thought 30 Day Shred was too dated. It's still a great workout, though! I really like her Body Revolution, it's a 90-day program with 3 phases of DVDs and lots of variety. I highly recommend it! I've done it twice, but an injury sidelined me both times at Week 10. My goal for 2014 is to start that in January and make it all the way through! :)

Thank you, lisah0711- I needed to give myself a "woo hoo" this morning! I woke up at 4:00 AM, wide awake, and finally gave up and got up at 4:30 AM. It's gonna be a long day, and I hope I have the energy this evening to exercise.

Last night, I went with a coworker to a French restaurant, one of Anthony Bourdain's home restaurants - dangerous! I think I did well overall - we split the escargots appetizer, I didn't have any alcohol and just drank water, I had mussels in a tomato broth with haricots verts, I only about about 1/3 of the fries that came with my entree, and I didn't have dessert. I'm hoping the scale shows how good I was come Friday morning! ;)

- I am pretty sure sodium is gonna be the next thing on my list, once I think I've conquered calories and fat. It's really hard because most of the lower calorie things I like to fill up on (chicken broth, for example) are TEEMING with Na. Still, I'm looking at the numbers, just making myself aware so far.

lisateaches - Have you tried any of the smartphone apps that you can track your food/exercise on? I plan my meals on MFP, and adjust it throughout the day if my plans change, so I don't go over my limit by accident.

DisneyJillian18- I started reading your comfort food list and I thought you were raiding my fridge until you said seafood :D Fried Chicken, Alfredo sauce, pasta, PIZZA, rice (with Kikkoman soy sauce) are among my favorites. I don't think you can really get the same thrill from the healthier versions of some of these. Most of the time I try to adapt, but I figure if it's planned well, balanced with healthier foods, and portion controlled, none of these can be too harmful.

Baked potato soup! I have seen healthy recipes of this one, so I will have to try it!
And lastly, I love my local Chinese restaurants Egg Drop Soup! I don't think it's overly unhealthy, besides the sodium!

There are plenty of recipes that I can try and make my favorites healthier, so hopefully I can try them out soon!

I love the idea of taking "regular" recipes and making them fit our healthy eating lifestyle. I do it all the time! I'll bet you could find a way to make a whole bunch of those comfort foods lighter and healthier!

To help with my goals.... I made a big batch of healthy black bean and vegetable stew and packed it up so I have about 10 health lunches ready to grab! Of course, I couldn't have done that if I hadn't gone to the market Saturday morning and stocked the fridge with lots of healthy produce! And today's lunch?? A SUPER YUMMY vegetable roast.... sweet potatoes, beets, carrots, onions! Can't wait!

Seems a bit quiet around here at the moment (but then I've been absent too!!)

Managed a few minutes online at work today, so thought I'd poke my nose in and see what's going on. Had a victory on the scales this week...164 officially at diet class, that's at the END of the day, instead of the early morning that I usually weigh for this thread. No WI from me until Monday though as I am going away tomorrow.......did I mention much that it's my birthday on Friday???? My 50th!!!!

And of course... HUGE WOOHOO on hitting that great number!!


QOTD about comfort foods...all of mine seem to involve starch!!! Potato starch to be more specific...I just love potatoes.

Mashed is my fave, but these days I do them with laughing cow light cheese instead of butter and cream!!

Baked comes next, love them with cottage cheese and strong cheddar mixed, and a sprinkle of cajun seasoning on the top.

Basically, I love anything with potato in it!!!

What's not to love about potato!!??? Have you tried potato soup?

Running is going well, but had to miss my session on the treadmill on Monday as I was busy with other things. Am going out to run on the road tomorrow with OH though - he likes to keep me company in the dark (I wouldn't go outdoors on my own at this time of year anyway in an evening.) All ready for my 1st ever 10K on Sunday, and I've got over £100 in sponsorship too as it's for charity.

Not so sure I have anything to woohoo about, but I am still hanging in there. Eating choices still could be better. Life has just been a bit crazy recently. But I am hoping to be firmly back to tracking and eating sensibly as of today! :thumbsup2

I also decided to give the 30 Day Shred another try. I will not do it every day, but will take some rest days. Still need to figure out a sensible schedule - hopefully so that I can finish before Christmas. I feel like I need to get some more exercise and thought that that DVD was a great workout all around!

As to Tuesday QOTD: My comfort food is pasta. Does not seem to be very good for weight loss, but I have improved it! First, I managed to reduce my normal portion by a lot (I now eat only a little over half of my old portion size) by religiously weighing the pasta before I cook it. Then I am using whole weat pasta - and I must say that by now I really prefer it because it has more flavour. And then I add a lot of sauce that has lots of vegetables (mostly tomatoes). And with that it makes for a very easy, filling meal.

That is a wonderful way to fit a comfort food into your healthier life!

Last night, I went with a coworker to a French restaurant, one of Anthony Bourdain's home restaurants - dangerous! I think I did well overall - we split the escargots appetizer, I didn't have any alcohol and just drank water, I had mussels in a tomato broth with haricots verts, I only about about 1/3 of the fries that came with my entree, and I didn't have dessert. I'm hoping the scale shows how good I was come Friday morning! ;)

Happy Wednesday friends! I was convinced that I would be called to work today, but I wasn't so I am going to make the VERY MOST of this day! I already stripped the beds and have the washer chugging along with load #2. Load #1 is on the line, but my fingers truly FROZE doing it. I unloaded the dishwasher, reloaded with breakfast dishes, washed a few plastics by hand, wiped down the counters and picked up the living room.

Next up I'll check email and move the laundry along. Then ??? need to decide what is a priority.... straightening up the garage (yuck) or something inside.... fun, fun fun...:sad2:

I didn't get back last night to share my amazing bargain! Anyhow.... I use Fiesta Ware in my kitchen.... I asked for it for my birthday a few years ago and while I have plenty, I'm always on the look out for a new piece/new color. I was at the Goodwill yesterday and found a piece...and then another.... and then another. By the time I was done scouring the shelves, I had found 11 pieces of Fiesta Ware.... mostly serving pieces, a few dinnerware pieces. Most all are currently available colors, one piece is a retired color.

Anyhoooo... I went online and tallied up the regular retail price of all of these pieces and discovered I bought $311 worth of Fiesta Ware.... for a grand total of $40.38 !!!!

I'm going to keep the pieces I really want and sell the rest. Hoping to recoup the original $40 and maybe a bit more! I guess it will depend on what pieces I decide to sell.

I can't wait to read about EVERYONE'S WOOHOO Wednesdays!!.......P

I am having an off week. The weather is changing here and my fibromyalgia is surly acting up. Been in pain all week :( my hands are cramping up so it has actually been hard to use the computer. No fun this week! I also am on injured reserve from running. I slipped on my stairs and fell. I don't think I bruised anything up too bad, but I am sore. So I decided it would be best to take a rest week. I would rather take a week now instead of 3 weeks if something starts to hurt later on! But I find since I have not been exercising, I have gained a pound or two back. I am hoping it is just water weight! I also find myself snacking this week, I always find I do better dieting if I have exercised that day. So hopefully next week will be better!!

I love chicken noodle soup for comfort food. I've found a great gluten-free canned version, or I make my own but with rice instead of noodles - that way, it's also lower in sodium.

I also love Italian food. There are some decent gluten-free pastas, but I've been using lately spaghetti squash in place of pasta - it makes a ton, it fills me up, and it adapts well to whatever I'm serving with it.

I also sometimes really like having breakfast for dinner as a way of comfort food - usually eggs, some kind of lean meat, and GF toast.

I do miss soft, warm bread though, especially rolls or biscuits - GF bread just doesn't compare! :rolleyes:

well I guess for a comfort food that isn't that bad is my new way of making Shepards pie using mostly mashed cauliflower in place of the potatoes.. even my Hubs eats it that way..
but if I am stress eating comfort food then all I want is a bowl of white jasmine rice with butter and salt or some tortilla chips and salsa or maybe some white toast with butter and jelly..

Your Shepard's pie sounds like a delicious twist on a classic! ::yes:: I have to admit sometimes only a bowl of rice will do, too. :rolleyes1

And I'll be looking for that mac and cheese recipe!!

Sorry, Pamela, there isn't really a recipe for the mac and cheese per se. It's kind of a joke in our family because it is one of DH's favorites that his mother used to make. As a new bride I asked her to share the recipe and she pretty much lost me right off the bat when she said "first you make the roux." :confused3 :rotfl2: This was before we had the internet and could search everything. :rotfl:

I usually do a couple of T of butter and a couple T of olive oil and mix that with an equal amount of flour -- I use Wondra because it doesn't seem to be so lumpy. I add a cup of skim milk -- it's better if it's room temperature. Add some salt, pepper, nutmeg, and chile powder. Then I add whatever cheese I have left in the drawer than needs to be used up and heat over medium low heat until I have a cheese sauce. Toss it with whatever pasta I cooked up and bake it in the oven at 350 for about an hour. I use a shallow casserole because I like my mac and cheese kind of crunchy on the edges. Portion control is the key to enjoying this.

Good evening! I woke up this morning to that darn 4 letter S word :mad: I mean, I DO live in western PA and get lake effect snow off Lake Erie, but come on! I am not ready for snow yet! In fact, my 2 maple trees still haven't lost all their leaves. Apparently they did not get the memo that it's fall! The one finally turned yellow and after the snow last night and today, it is dropping leaves. The other is still green and stubborn. I guess I'll be raking leaves in the snow this year!

Wowza! Amazing that your trees still have green leaves. Hope the snow goes as quickly as it shows up. Just think of all the extra calories you will burn raking wet leaves! :thumbsup2

QOTD: why are they so much easier to whip out than a "healthy" meal??? I did it tonight, made homemade mac&cheese for dinner but had a reasonable serving! WOOT for me! I have not been good this week tracking, but plan to do better. This month has a lot of emotional challenges for me, but I would really like to try and get through semi-intact, if at all possible.

I am having an off week. The weather is changing here and my fibromyalgia is surly acting up. Been in pain all week :( my hands are cramping up so it has actually been hard to use the computer. No fun this week! I also am on injured reserve from running. I slipped on my stairs and fell. I don't think I bruised anything up too bad, but I am sore. So I decided it would be best to take a rest week. I would rather take a week now instead of 3 weeks if something starts to hurt later on! But I find since I have not been exercising, I have gained a pound or two back. I am hoping it is just water weight! I also find myself snacking this week, I always find I do better dieting if I have exercised that day. So hopefully next week will be better!!

well my Whoo Hoo is that I must have worked a bit harder a Zumba last night because my abs were sore this morning!

I'll share my Mac and Cheese recipe -- it is NOT low fat.. but its GOOOOOOD :)

1 can (10 3/4 ounces) Campbell's® Condensed Cheddar Cheese Soup
1/2 soup can milk (I use 1%)
2 cups shredded cheddar
1/2 teaspoon dry mustard - or a few good shakes
1/8 teaspoon ground black pepper
2 cups cooked and drained Elbows (I use dreamfields)
1 sleeve of crushed Ritz crackers (I have been using the everything ones lately YUM)
2 teaspoons butter, melted

Heat the oven to 400°F.

Stir the soup, shredded cheese, dry mustard, milk, black pepper in a sauce pan on low to melt the shredded cheese
Add the pasta tossing to coat then pour into a 1.5 quart casserole or 9x13.
Mix the cracker crumbs and butter in a small bowl. Sprinkle the crumb mixture over the pasta mixture. We like an even crust on the whole M & C so sometimes more crackers are required
Bake for 20 minutes or until the pasta mixture is hot and bubbling.

I have to admit that my MIL did the same thing to me! Kept telling me how to make her Swedish meatballs.... "make the roux and add...." (she is French and it rolled right off her tongue!).... and I went... :confused3 as well!!!
