WISH Away the Pounds June Challenge -- Starting a Successful Summer!

Seems like we have plenty of people signing up!! I hope to get around to update the first page tonight with all the participants. So far I got quite a few PMs!! Great to see some new people joining!

For all the newbies: I can only encourage you to take part in the discussion now and then. Reply to a question of the day, just add a comment, come here to vent about things or let us know if you had a good moment! This thread thrives on lots of chat! Personally, I found that taking an active part always gives some positive energy and new motivation!

What is your favourite summer fruit and summer vegetable? If you have a recipe to go with your answer we would all love to read it!


I think my favourite fruit are peaches - for a treat I love eating them with a little bit of blue cheese, but they are great in my morning cereal as well or just as a snack.

My favourite vegetable are tomatoes. While they are available year round, I think they are soooo much better in summer!

Tomatoes also make for one of my standard dinner recipes: Chop up some tomatoes (about 6 to 7 for one person) into cubes. Gently fry a clove of garlic (chopped or put through a crusher) in one or two teaspoons of olive oil, then add the tomatoes. Let it bubble for a while and then season with salt, black pepper and lots of fresh basil (finely chopped). Serve with wholewheat pasta and if you want one tablespoon of grated parmesan cheese.

I love love love avocados. I usually just eat them with salt. Salt is my weakness and I eat way too much of it. Planning on trying a recipe that I found for baked avocado with a breadcrumb crust.

I'm a blueberry fan - I used to pick them off the bushes at my grandparents house, and I can easily eat pints of them - my favorite way is with a little bit of whipped cream - simple and yummy.

And I agree with the tomato!!! I'm a born and bred Jersey girl, and there is nothing like picking up a bunch off the side of the road at a farmers stand - so good with salt and pepper - I can eat them like apples!

Favorite summer fruit and veg.....is it a cop-out to say ALL OF THEM? :rotfl: If I was forced to choose I would probably say blueberries.... fresh and warm from the bush. My Dad grows them and they are delightful!! They are also wonderful combined with fresh peaches in yogurt or on cereal or in cottage cheese or in a crumble! And for veggies....tomatoes I guess, but I love them all! One of my favorite summer recipes is my layered ratatouille. The recipe is over on the Eating Healthy recipe thread. It can be made any time of year but it is the absolute BEST in the late summer. Plus it uses up lots of summer produce abundance like summer squash, tomatoes, and eggplant. And it freezes well. I'll add a link in here in a minute.

Crazy day here at school! They are interviewing teachers for a few positions for next year so I am hopping from class to class as teachers are attending these interviews, etc. But it will definitely make my day easy and fast!

Since I am working all week, I did my meal plan for the week and prepped most everything, so I happy about that. Tonight I am trying my "beef and broccoli" recipe with lean pork instead. The beef I usually use wasn't on sale and the pork was. That is all cut and marinating, so it will be quick to stir-fry at dinner time. Tomorrow night is meatballs in the crockpot for the men (since I work Tuesday evenings) and a side salad and I will have a veggie burger when I get home. Wednesday night is (unfortunately) pork again in the form of my Red, White, and Green Chili. Thursday night will be veggie egg pie and Friday will be homemade pizza, to keep things easy, since it will be a busy evening.

I also checked the weather report and planned out my outfits through mid-week. And I caught up with the laundry over the weekend and did some housecleaning, so hopefully this will be a smooth week. I am in charge of the robotics team yard sale this coming Saturday, so Friday night will be getting everything sorted and organized and priced And Saturday will be a BLUR, I'm sure, as I plan to be at the yard sale site no later than 6 am and will be working hard all day! I am planning sloppy joes and green beans for dinner that night, and will probably make up the sloppy joe tonight and put it in the freezer until Saturday.

Lunch today you ask???? Taco salad (leftovers from yesterday) and an apple. Breakfast was an eggwhite and veggie sandwich on a low carb pita [did some package reading today and discovered that a Joseph's flaxseed pita is half the carbs of a Joseph's flax seed "sandwich thin" style roll (4 gr vs 8 gr)]. It is also less calories, so since I enjoy them both equally, I'll be sticking with the pitas most of the time now. Every calorie and carb counts, right??::yes::

Ate pretty good yesterday. Subway for lunch with baked chips. Can't say I cared too much for the chips and didn't even finish the bag but was kind of full with my 6 inch sub anyway.

Brought lots of fruits and veggies to work today to snack on if I get cravings. Skipped the coffee this morning and am having yogurt for breakfast.

Also got my best friend and her husband to join in on my challenge. Hoping to stay motivated

HI Ladies I am back in for June - sent my PM..

QotD Sunday : I am going to work hard being my healthiest no matter what us going on around me.. I have done alot of prep work for the next 11 weeks of summer dinner wise.. I do have a plan in place for myself for low carb bfast in that same timeframe.. Luches are little more lax only because it will depend on leftovers and how much salad I think I can eat in a week! (5 days of salad sometimes is just TOOO much for me) so there is always a can of tuna/chicken salad I can make for a few days worth of lunches or an atkins frozen dinner with cut veggies because that is different then salad and I could eat those everyday HAAA .. I also have 9 more weeks of Zumba on Tues and Thurs nights after work and I just got my Wii Zumba belt so I can use the DVD I got from an Online Yard sale.. hoping to work up to Zumba 5 days a week by June 15..

I called my Dr on Friday as I didn't not see any drops in my daily Blood Sugar when I was being very strict on Atkins at the beginning of May (which was discouraging so I fell back off off the wagon by mid month) and said that I am ok with going back on the Bydureon once a week shot because it appeared he was correct saying that the shot brought it down not the so much the diet.. However I've not heard from him so maybe we are just wating till my July 16 appt..

Thank goodness the Sun has finally returned !! This def. helps me stay on plan .. Take care and Happy Monday !! :wave2:

We leave for WDW in 12 weeks so I just want to get more active. My goals for this month are to hit my 10,000 steps everyday on my FitBit...week days are fine because I can take a couple laps around the building on my breaks and lunch but I have a hard time getting even halfway there on weekends. And I have absolutely NO excuse for that! I am also doing a 6 month DietBet and today I just won my first 4 week DB. Looking forward to some spending money for our DCL cruise in January after my DietBet10 ends in November!

In the summer I love watermelon and tomatoes! My step-dad has an amazing garden so he keeps me stocked but due to the nasty winter we had, he is very late getting things going. He is only planting 150 tomato plants instead of his usual 250 :D
 
I am new to the W.I.S.H. challanges but I am trying to get in better shape not only for my Disney trip in September (woohoo!!:cheer2:) but also just in general. I am doing an ab challange with a few friends of mine this month, I am on day 3 of no soda (wayyyyyy harder then I thought it would be but I am taking it day by day!) and I am just trying to be more active. I have a few really fun things planned for the summer that also involve being active which will be great. I have started wearing a pedomiter to track my steps to see where I have to go and to track myself getting there! I am excited! I have a low goal of 10 pounds lost this month just to get started this month and I am sure that once I succeed I will give myself a more difficult goals in the future to finally get to my goal weight, which sadly is very, very far away. :sad:

Just trying to take it one day at a time!!

I use the app NOOM on android to track my food intake, steps per day and all other activity. I love it! I think my sister uses FitBit. She loves it.

Pineapples. I could eat them all day long. They are high in sugar so I have to be careful but I usually use them to make my morning shakes. Here is the what I do:

In a single serving blender cup I mix 1/4 cup whey protein, 1 tablespoon of flax seed meal, 1 cup of coconut or almond milk unsweetened and as many frozen pineapples that I can fit until I get to the full line lol. Then I blend it up and I am out the door. It carries me over until lunch with no issues!! Plus it is sooooo yummy!!

Zucchini is a close second - scoop out the seeds and maybe a bit of the inside flesh and saute that up with a bit of garlic, red pepper flakes and some cooked ground sauage - like Jimmy Dean's mild - stuff it back into the hollowed out Zucchini and top with 1T of spaghetti sauce and some shredded cheese (any kind works but I like mozzarella or parm the best) and bake for 20 - 30 mins till tender.. MMMMM I could eat this every night! :yay::yay:

I'm here. I'm in. Gotta try to remember what the scale said yesterday. Or maybe this morning. Not a lot gets committed to memory at 5:45 in the morning. (I usually have to write it down for Friday weigh-ins and since it wasn't Friday, I didn't.) :confused3

Berries, berries, berries! I pile a few different kinds in a bowl with a little Stevia sprinkled on top - it tastes so wonderful! It feels like a much bigger treat than it is.

For veggies, I love corn on the cob and fresh shelled peas. My mom used to grow peas when I was a kid, and my sister and I had to shell them. We'd end up eating half of what we shelled! :)

Evening all! The school day was easy and quick... just the way I like them! Dinner prep over the weekend is paying off already and so I don't have much to do to get ready for dinner! I will wait until it cools off a bit before I head out for a walk/run tonight. And I need to do some prep for tomorrow's WW meeting.

I fell asleep during last night's Food Network Star, so I think I'll pop it on and finish folding yesterday's laundry, then head out for my walk/run and we will eat about 6:30. I will also make tomorrow's lunches tonight because it makes the morning so much easier! And DS is going on a whale watch tomorrow with school, so he will need some extras in his lunch, just in case.

Question of the Day:

A new month and a new season: What are your goals for the month (no need to give an actual number, but feel free to do so if you want)? Are you planning on making best use of all the good things summer has to offer to help with weight loss (like lots of fruit and vegetables being in season) or are you giving yourself a bit more slack because of having to deal with heat and summer treats like ice cream?

My goal for the month... to keep the momentum of weight-loss success I've had for the past couple weeks.

After steadily gaining from August to May and achieving a new all-time high weight for myself, I recently discovered Plexus products and they have REALLY gotten me back on track. I also signed up as a Plexus Ambassador so, it's also rather motivating to know that I stand the chance of making more money based on how well I succeed in improving my own health. (**I will not be peddling products or recruiting ambassadors here on the DIS but, if you're interested in more info, please PM me.)

As far as making best use of the summer, I am LOVING the outdoor projects that I've thrown myself into the past couple weekends. I can't wait to get back out there. Well, as soon as this stinkin' sunburn heals, anyway. Boy, was I stupid this past Saturday... wearing a tank for the first time this season and not using sunblock on my back and shoulders. ouch. ouch. ouch.

PEACHES!! Love, love, love fresh Texas peaches. Several good orchards around here that come out to our community farmers market. I'm even toying with the idea of planting my own peach tree.

And... SQUASH. Any variety. Definitely need to get myself out to the farmers market this Saturday. (Okay. Now I'm actually craving squash.)

It's a few minutes after 5:00 so I better get the heck outta Dodge. TTYL.

My goal for June is to keep track if my weight each week even if I get off plan and hold myself accountable. It is also to actually meet my goal for the month for the first time.

As for fruits and veggies, I love them all! But hands down favorite fruit are cherries! Veggies are anything I can put in a salad, especially tomatoes. I love caprese salad especially.

I LOOOOOVE a good ripe peach, but they are few and far between here in NH. Our peach season is crazy short and if you are lucky you might find good local peaches for a few weeks in August. I think the idea of planting your own peach tree is a great one!

Another beautiful weather day here today, thank heavens! I'm so ready for this! Wore a skirt yesterday (with bare legs!) and capris today.... I feel so summer-y!

We are growing our own greens this spring and will probably be ready for a big harvest tomorrow, so I anticipate FRESH SALAD with our dinner tomorrow! I haven't had much success with my gardening in the past few years (since we moved our garden location), so it is exciting to see so many lovely organic greens thriving here!

Yesterday's exercise ended up being just a 1 mile walk in the evening with DS. Not as much as I had planned, but better than nothing. I wish I didn't HATE exercise so much~!

Sounds like you are ready to go for June! If you don't mind me asking, how do you track? Paper? Online?

I use MyFitnessPal. I know a lot of people here also use it - if anyone else needs another MFP friend, I am eclemens428 over there. There are a lot of DIS ladies on MFP and we all support each other, especially when recording exercise!

Hello. New here. I'm hoping to lose at least another 30 lb before our wdw trip mid - December. I have lost 15 since 4/1. I have a lot of physical issues that make exercise (and many days even cooking) extra tough, but I have good motivation now, with the trip coming up. Anyway, I will read back on your posts in the morning, just wanted to say hi. :)
