We stayed at Pop in May and found it to be very enjoyable. (In fact, we're headed back there in Septmeber!) The noise level was low compared to other hotels we've stayed at. That could be the luck of the draw, but it was much quieter than the apartment complex that we live in!
I'd choose Pop and request a lakeside room in Building 3 or 4. These rooms do not face the noisy pools, and some even offer a view of Epcot. They are standard, not preferred rooms, but they are still fairly close to the pools, bus stops and main building.
If you have an adjoining room door in your room and noise coming from the other side, open your side of the door, roll up a towel and place it on the floor as if you were blocking a draft, then close and lock you door.
Worst case scenario, pop in some earplugs!
Also, I hear that a lot of couples without kids choose All Star music because it seems quieter and smaller than the other value resorts. The rooms there are refurbished also. However, I've never stayed there myself.
