I would do the seven night Southern in a non-concierge stateroom and use the difference to also do the four-night in May.

looking at the schedule, the Wish’s maiden voyage is June 9th with the first available to book right now June 17th.

I thought this too. Why not skip concierge and sail both cruises? I know it wasn't listed as a choice but that would be my vote.
