Do any of the parks or resorts have Red Bull or Monster drinks? Or do I need to ship some for my addicted DH before we arrive? We are staying at the Poly.

I have tried finding Red Bull at the resorts, but no luck. HOB actually serves Red Bull; I am, like your DH, addicted and remember noticing all the adverisements there. Perhaps your DH can get some to go at the bar. However, I assume that they would be more expensive at WDW. I would just bring down a few and pack them in my carry on.
Okay, not to sound like I lead a sheltered life, but I have never tried either drink, although I see them everywhere.............what do they taste like, is it like a Coke-type-beverage, or fruity, or coffee-like???

They are "high energy" super caffeinated drinks. I think they taste like cough syrup, but many like them, including my DH. This is him on Monster energy=
SO and I are Red Bull fiends as well and have never found them at the parks. I'd guess, based on the fact that WDW is Coke based, that you'd have an easier time finding one of the Coke brand energy drinks like Full Throttle or Fury, but I can't say I've seen those there either.
1 Can of Red Bull has the same amount of caffine as 2+ 20oz bottles of Mountain Dew Code Red. while it does give a boost of energy in the short term, the side and long term affects are not very good. my BIL is a doctor and said in his medical journals he gets that they will soon announce that that any high energy drink is as bad for the body as smoking 1-2 packs a day! hopefully your DH isn't "addicted" to these drinks!

And just out of curiosity, what are those long term affects? I don't really see the comparison of drinking 1 can of red bull to smoking 1-2 packs of cigarettes. That just sounds absurd. The only cases I have ever heard of people getting sick from red bull is people who mix it with alcohol.
3 THINGS. THE 1ST IS TOO MUCH CAFFIENE (JUST LIKE SUGAR) IS NOT GOOD FOR THE BODY. IT RAISES CHOLESTERAL LEVELS AND IS HARDER ON THE HEART CAUSING IT TO BEAT AT HIGHER RATES WHILE THE BODY ISN'T DOING AN ACTUAL PHYSICAL ACTIVITY. 2ND LIKE ALCOHOL IT IS HARD ON THE LIVER WHEN IT TRY'S TO "CLENSE" IT THROUGH YOUR BODYAND BREAK IT DOWN (SWEAT/ URINE AS WE COMMONLY KNOW IT AS) THIS LEADS TO THE 3RD PROBLEM KIDNEYS AND CIRCULATION/ARTERY PROBLEMS. WHEN ANY OF YOUR MAIN ORGANS ISN'T WORKING PROPERLY IT CAUSES THE OTHERS TO WORK EVEN HARDER, WHICH ISN'T GOOD IN THE LONG RUN. i'M NOT TRYING TO SCARE YOU BUT THIS IS LIKE TAKING FAT BURNER PILLS, MAKES YOU FEEL AND LOOK: GOOD NOW BUT IT IS TAKING YEARS OFF YOUR LIFE DOWN THE ROAD.
I'm glad you asked this question. I have always stopped at a store for redbull before getting to the Disney resort because Disney does not carry this product or anything like it. I'm not hooked on redbull but it does help when you are running around the parks all day and all night. I would drink one in the morning and then come back to the resort later and before going back out drink another one. It kept me going thats for sure! I wish Disney would carry one of these drinks. I know coke makes a tab Energy drink thats pretty good.
