What's your favorite way to make boneless pork chops?

Mine are quick and easy. n the oven putting garlic powder and season salt on each side. Cooking them on a baking rack in a pan with water in the bottom of the pan so it evaporates and keeps the chops moist. Cook my chicken cutlet the same way only marinating it in Italian dressing overnight, then cooking in the oven on the same baking rack with water in the bottom of the pan.
 
Braise them. Very easy, really, and you can season them any way you prefer; it's a technique, not a recipe.

Use a deep skillet that has a lid. Put the chops in with some non-stick spray and brown them. (I also like to saute some chopped onion and garlic in with them at this stage.) Once the outside has been browned, add enough water to cover, whatever seasoning you prefer (though not too much salt, because braising is a reduction, which intensifies saltiness), cover with the lid, and simmer for as long as it takes for the water to reduce down to a thick glaze on the bottom of the pan, normally about 45 min. DO NOT BURN.

Take off the lid and again add enough water to cover the chops, then repeat the simmering process. When the broth has reduced down to less than 1/2 inch, the chops are ready.
 
Browned with some onion in the frying pan, and then finished in a combination of cream of mushroom soup and sour cream. We put it over noodles, and it is very good!
 
I do mine in the oven, with some garlic, onion and capers added for flavor. I put olive oil in the bottom of my baking dish and over the top as well, bake at 425 for 20 minutes, flip and do it again, they come out tasty and not overcooked.
