Inspired by the thread, "What's your best summer meal idea?". :) I like quick to make, easy, summer desserts. Always great to have more ideas!

1.) My kids love the Go-Gurts (come in tubes) frozen. That's probably my quickest.

2.) Yogurt (not frozen), pudding, or Cool Whip and fruit to dip.

3.) Homemade trail mix with popcorn, chocolate chips, pretzels, and goldfish. Or any variation.

4.) Pudding pies. Make pudding as directed on the box. After the pudding has almost set, fold in 1/2 tub of Cool Whip. Pour the mixture into a graham cracker pie shell and chill for about an hour. Really good!

What do you like to prepare during the summer?
 
Here's an oldie but a goodie:

Graham Cracker Crust
1 20 oz can crushed Pineapple
1 16 oz container fat free sour cream
1 sugar free/fat free instant vanilla pudding

mix last three ingredients together and pour into crust. Refrigerate one hour.

I've also made these like parfaits and layered them with low fat graham cracker crumbs...even fewer calories and fat!:thumbsup2

Make a strawberry trifle.....

1 frozen sara lee pound cake
1 tub strawberry cool whip
fresh strawberries

YUM!

We always love Dirt pudding too!

1 box of instant (we use sugar free) banana pudding
couple of ripe bananas
1 box of vanilla wafers
1 tub of lite cool whip

just layer it up in any container/bowl! It tastes best if you let it
sit in the fridge overnight because the cookies get soft and yummy.
 
Eclair pie:
box honey graham crackers
prepared french vanilla pudding (1/2 the milk it calls for, then fold in small tub cool whip)
tub chocolate fudge icing

In pan put 1 layer crackers, then pudding, repeat, ending with crackers on top when you run out of pudding. Nuke the icing about 15 seconds, stir and spread over top of final graham layer.
Chill in fridge at least 2 hours. Graham crackers need to soften a bit. Yummy!

The best thing is you can change all ingredient to the fat or sugar free versions and it still tastes good.

Cool Whip Cool-n-Easy Pie

1 graham cracker crust
1 package jello ( I use sugar free)
1 tub cool whip (again I use light)
2/3 C. boiling water
1/2 c. cold water
ice cubes

Stir boiling water in jello for 2 minutes. Mix cold water and ice cubes to make 1 1/4 C.Add to jello and stir until slightly thickened. Remove any remaining ice. Stir in whipped cream with wire whisk until smooth. Refrigerate 10 minutes or until mounds on a spoon. Spoon into pie shell. refrigerate 4 hours or until firm.

YUMMY and lo-fat!

POPSICLES!!!!
Mud pie is one of my favorites, but I am rarely that motivated!
 
Another quickie: frozen grapes. I wash mine, let them dry off in the strainer, and then freeze them on a sheet pan (then put them in a freezer bag). A very cool and healthy sweet treat!
 
My favorite isn't fancy, but it is fast and usually a crowd pleaser. Vanilla ice cream w/ chocolate syrup and fresh raspberries. :goodvibes
 
Blueberry Cobbler


1 cup self rising flour
1 cup milk
1 cup sugar
1 stick of margarine
blue berries, peaches or apples (fruit of choice)
or 1 can of fruit

If I use blue berries, I cook them a few minutes and add a little sugar.
Place fruit in bottom of glass baking dish.
Melt margarine in microwave.
Whisk together flour, milk, sugar and butter.
Pour evenly over fruit mixture.
Bake at 375 until golden brown (about 30 minutes)

Serve with ice cream or by itself.
 
Conneticut Pie...I won a pie contest with this!!!

Prepared graham cracker pie crust (homemade one is better)
1 pint sour cream
28 ounce can sliced peaches drained and strained
1 cup heavy cream whipped

combine peaches and sour cream, pour into crust.

Bake 20 minutes @ 325 degrees.
Cool pie and top with sweetened whipped cream.

Bon Appetite!!
 
We enjoy fresh homemade warm applesauce over vanilla ice cream...

Homemade applesauce

3-4 apples cubed
lemon juice
sugar
cinnamon

put enough lemon juice in the bottom of a medium sauce pot, add 1/3 cup sugar and as much cinnamon as you like. Put on medium high heat. Once apples begin to soften I use a potato masher to crush to a chunky consistancy. Cool to warm. Use over ice cream......
 
Jello Cake......I just made this tonight for our dessert for Father's Day:

1 box white cake mix - follow package directions and bake accordingly. Cool 15 minutes.

Prepare jello (any flavor, I like lime a lot, but tonight I made it with orange jello) according to package. After dissolving the jello in boiling water, add one cup cold water. Poke holes in cake (I use a plastic toothpick or a shish-ka-bob skewer) every 1/2 inch so that there are holes all over the cake. Pour jello over cake. (the cake will immediately soak up all the jello). Put cake in fridge for 3-4 hours, then top with cool whip.

This is great for summer as it's served cold and can be garnished with fruit.

confectionary sugar in a bowl

Dip the strawberries in the sugar and eat :love:
 
This is so lovely, I make it all the time and keep it in a glass cake container before serving, its always the "Piece de resitance":thumbsup2

I had weightloss surgery a year ago and dont eat sugar, but use the sugar free pudding mix and sometimes will get the no sugar added angel food cake...either way, this is light and refreshing and a real crowd pleaser!

This is so good - very light and summery!
Angel food cake, pineapple, Cool Whip, pudding mix and strawberries. We do it using all sugar free products most of the time.
 
Pink Lemonade Pie:

1 prepared graham cracker crust
1 tub cool whip (I use fat free)
1 can sweetened condensed milk
1 package unsweetened kool aid (I use pink lemonade, you can also use lemon lime, strawberry, etc.)

Mix ingredients with a hand mixer, pour into pie crust, refridgerate for at least an hour. Enjoy!
 
Oh there are so many good recipes here.

Here's one of our favorites.

I take a yellow cake mix and substitute lemon juice for 1/2 the amount of water called for. I also toss in the zest of a lemon. Bake as instructed.

I then top it with a lemon glaze made from the juice of another lemon and the zest and 1/2 stick butter and powdered sugar to the consistency.

I usually bake this in a bundt pan and slice it in 1" slices putting 2-3 on a plate. It is so refreshing and really lemony like we like it.

Our easiest and most favorite dessert is to take fresh strawberries and dip them in melted chocolate. It has to be good quality chocolate. We get ours at a local store but I have been known to use Nestles or Dove. We have small glass bowls we melt it in in the microwave. It only takes about 30-50 seconds and is so good.
