What is everyone making for Easter dinner??

We are having an "all Mediterranean" dinner:

Hummus with pita
Spanikopita- spinach and Feta in filo dough (Greek)
polpettes- like a potato pancake with lots of Feta cheese (Greek)
zuchinni sauteed in Moroccan spices
roasted plum tomatoes w/garlic (Italian)
Turkish green salad (Turkey)
Moroccan roasted chicken (Morocco)

Dessert is more All American- we went to the u-pick strawberry place today, so we are going to have fresh strawberry shortcake.
 
Mine is Southern all the way: brown sugar ham, turnip greens, green beans, carrot casserole, deviled eggs, and strawberry shortcake. :goodvibes Yum!
 
easy peasy stuff at our house...

ham, cheesy potatoes and green beans almondine.

Just the three of us, so no sense having too much more!
 
Nothing at all! We're doing a fancy brunch at a hotel in the morning.. so we'll just pick at whatever food is around at night if we're hungry!
 

That med. meal sounds good! I love some southern cooking too!

My mama is cooking tomorrow & I'm just bringing the salad.
Spiral ham w/ honey spice glaze
asparagus
scalloped potatoes
stewed squash, ham, & onions
mac & cheese
yeast rolls
deviled eggs
HOP salad (spinach, carrots, diced eggs, bacon bits, pom dried cranberries, chopped tangerines, & poppyseed dressing)
fruit cocktail cake (best cake ever-only get it once a year)
orange cupcakes w/ sheep, bunnies, & chicks for the kids
 
Kinda traditional, but instead of the ham, we're having ham rollups, stuffed with a cream cheese spinach mixture topped with a wine sauce baked in the oven~
asparagus with Bernaise sauce
rice pilaf
fresh salad
yeast rolls

Dessert:
homemade chocolate covered pretzels
fresh strawberries
Pepperidge Farm Coconut cake

not low cal for sure :)

pork roast (FIL doesn't eat turkey)

The menu is very similar to thanksgiving but it's what i'm most comfortable making for a crowd.
 
nothing fancy, just honeyed ham, potatoes, brocolli , beans and a baked chicken for those not eating ham...

Sounds AMAZING!

We will be having roasted lamb w. cooked baby carrots, corn, roasted sweet potatoes and peppercorn sauce. Ice cream and fresh fruit as a dessert.

Au Gratin potatoes (home-made)
Cheddar biscuits (also home-made)

FIL is bringing dessert and hasn't told us what he's bringing.
 
For lunch we are frying a ham steak and having sandwiches with deviled eggs.

For dinner, we're grilling steak (for me) and lamb chops (for my husband) and having twice baked potatoes and rolls with it.

This is the first Easter where we're not getting together with extended family (we saw them last week) so basically DH and I are making our own tradition!
 
Well, we took a vote. And since nobody in my family (besides me) loves the traditional Easter ham and turkey, we're going out to brunch. Then we're having Chinese for dinner. Works for me, no cooking!
 
I'm not cooking. After being grumpy that nobody is hosting or even wants to have a family dinner, I said "scr*w this" and decide that we are going to the casino for buffet.

We usually do a big big big brunch and then eat Brinner(breakfast/dinner) at night. :lmao:
 
All I know is we're having grilled pork loin roast w/a beer marinade, and baked potatoes. I know there is other stuff, but that's DW's area of expertise as she coordinates what the rest of the family is bringing (we're hosting). Tough part will be this is the first holiday w/no DS (at college), so the busier she is, the better she'll handle it.
