What's for dinner? Was it "budget"?

I would love your crab rangoon recipe if you are willing to share.::yes::

Like all the good recipes it is one of the ones that there really is no recipe:
1 8oz brick of cream cheese softened
add to taste
garlic powder (~1-2 tsps)
green onions (~3) or garlic chives
crab meat (1/3 pack imitation crab or the real stuff)
sugar (approx 3 tsp)
You can mix and match to taste depending on what you have available
Place by spoonful onto wonton wraper, seal the edges with finger dipped in water and fry lightly.
Super easy and a little different every time depending on what I have at hand. We always have extra packets of sweet and sour sauce left over from when we eat out at work.

ah tonight im having homemade carnitas, beans and rice and its all free whoo hoo...Im going to a graduation party lol

6 grilled chicken strips with teriyaki sauce and white rice. The whole dinner cost about $5.

On a similar note - my church had a BBQ at a park. . . so we had burgers/hotdogs, choice of chips, potato salad, watermelon. . . etc :)

Baked spaghetti with homemade garlic toast. Whole meal, probably about $4. I had the sauce in the freezer from the last time I made spaghetti and the garlic toast is being made from some leftover crusty bread.

That sounds delicious and surprisingly easy. I will have to put wonton wrappers on my grocery list. Thanks!

Tonight's dinner was Sonic. Not at all budget. But it was way, way, way too hot and humid to cook today(96 degrees). Tomorrow we are getting together with my family to watch a free concert in the park. So, it will be ham sandwiches, deviled eggs, chips and grapes for dessert.

Took the pot roast I had made a couple of days ago and shredded it, and made beef and cheese enchiladas (never made before beyond simple and pretty good just had to get enchilada sauce which is something I don't keep in my pantry). My nephew and I ate some last night, and me and the parents are eating tonight. Will probably even have a lunch left. Made rice last night for the boy, will probabaly have rice (1.00 a box) and then a veggie (frozen broc&cali bought on sale for free w/q) tonight. Overall pretty good run of dinners this week for budget eating.

Last night was "spaghetti sauce" with hamburger, served over rice with shredded cheese and sour cream. The younger two don't like sauce with meat so they had plain rice with corn, and shredded cheese. Oldest DS had his rice wrapped in a tortilla burrito style. Very inexpensive all the way around.
Tonight DH is grilling London broil steak we got for $1.99 lb along with some potatoes, and we'll have salad ($1 bag lettuce) too. YUM!

We are having Rotel Chicken 'n' Rice on tortillas. Cheap and easy!

We had grilled pork tenderloin. baked potatoes, salad and fruit salad for dessert. Not quite budget but the pork was on sale for $7 and I had a coupon for 1.50 off so it was 5.50 and there was half of it left so I will make tacos with it tomorrow.

We had Subway tonight...2 footlongs for $5 each. We were at the Pocono 500 NASCAR race all day, and I was not about to cook! LOL

I had my daughter-in-law and three grandchildren visiting today as well as my two younger sons who live with me. My youngest son eats meat, and my grandchildren do, too, so my son made some from-scratch burgers for the meat-eaters, and we had veggie burgers for those of us who don't eat meat. We also grilled asparagus (on sale this week, and we all like it!) and red peppers along with the burgers. Served the burgers in whole wheat buns. I also made a platter of veggies and dip (orange and green peppers, celery and baby carrots). I also served some zucchini muffins that are supposed to be made with applesauce, but I substituted a chunky pureed peach "sauce" that I bought a few weeks ago. Because it was was sweeter than applesauce I left out the 1/4 cup of sugar in the recipe and the muffins (I made "mini-muffins" so we had 3 dozen) came out just fine. For dessert, we had chocolate-dipped digestive cookies and grapes.

When I set out the burgers and the mini-muffins and the platter of veggies and dip, my 3-year-old granddaughter looked at the table and said "It all looks so yummy!" She's quite enthusiastic about her food!

And I have some mini-muffins left to take with lunches this week.

OMG! You must have been dying(or melting) in that heat yesterday. We didn't venture out into it until after 5pm yesterday and that was bad enough. I can't imagine sitting out in that heat all day, especially on a race track.

Sunday's meal was a picnic in the park. Chipped ham, turkey breast and cheese, deviled eggs and chips. Tonight will be parmesan chicken breast and probably some asparagus and rice.

tonight is vegetarian chili

4 cans of various beans (I use chili and black) $1.33
chili ready tomatoes: .33
tomato sauce: .30

so.. a hair less than $2

we'll all add fritos and DS's and myself will add cheese.

Tonight is Spicy Pepper Steak over brown rice w/steamed brocolli and fruit. DD will have a chicken breast...

Steak 1# $2.50
2 cans tomato sauce $.50
peppers $.50
onion $.25
1/2 package of brown gravy mix $.25
rice $.50
chicken breast $.75
fruit - budgeted weekly - no cost

$5.25 for a family of 4 with leftovers for 2 lunches...

I am making strawberry triffle w/ last weeks leftovers for dessert/snack.. no cost since it was already budgeted and still good so it will be yummy. I put it in champagne flutes for some Monday night finesse!:thumbsup2

Teresa Pitman, will you share how to make the peachsauce? We're headed peach picking this week and that would be great!

Last night's dinner was Taco Dip. 2 cans of fat free refried beans mixed with taco seasoning, spread in the bottom of a 9x13 pan and topped with 1 small tub light sour cream, a layer of homemade guacomole, shredded cheese, and chopped black olives. Serve it as a dip with tortilla chips. It's great on hot days because there's no cooking involved!

This sounds SO good. DH doesn't eat meat, or dairy, and hates Peas, so I don't think he'd be thrilled with me for cooking it.. but man.. this makes my mouth water!
