What's for dinner? Was it "budget"?

Earlier this week I make a pork roast in the crock pot and shredded it, then froze it in sections.

Yesterday I defrosted some and mixed it with black beans, green chilis, a can of tomatoes, a can of refried beans and taco seasoning. We rolled that in tortillas topped with cheese and lettuce for pork burritoes.

Today I had those leftovers and mixed it with 1 package of Spanish rice to make pork burritoes again, but stretched a bit. ;-)

wow that sounds really good. ou guys have actually inspired me to make a dinner list for each night....DD is really into it ( ok, I actually on got through two days but I swear this weekend we will do a whole week plan!) she wanted to know what was on our list for tonight! Um..leftovers from yesterday?
 
I like fried chicken but I hate the mess I make and it just takes a long time so I found a way to make it where it doesnt take any time at all...basically no mess and takes just a few minutes....I buy the bag of breast tenders and take 2 ziplock freezer bags....1 I put some flour and the other regular bread crumbs and parmesan cheese...I take 2 eggs and whisk them then I do an assembly line...I dunk the chicken in the flour, the rub the chicken in the egg mixture and then put it in the bread crumb mixture...

In a frying pan I put olive oil and some butter to melt and I fry the chicken pieces and they usually take about 8 minutes or so...drain on a paper towel and your good to go...

I usually serve them with potato salad and baked beans and maybe some corn on the cob...

1 bag makes a huge batch that you can freeze or make half the bag now and half at another time.....
 

Tonight I'm making crockpot sweet Italian sausage (it was b1g1 for 3.50..so 1.75 for one package), jar of spaghetti sauce (1.00), pepper and onion (.50) and some seasonings. I'll serve this over whole wheat noodles (1.50). I'm also baking up some homemade breadsticks (1.00). For dessert, we're having pudding parfaits with bananas (1.00 for about 6 parfaits).

Total: 5.75 for 3 people including dessert! Not bad. And super yummy.

Do you brown the sausage before you put iit in the crock pot? Do you leave the casings on? How long in the crock pot?

Sounds good! I just bought italian sausage on sale too!

Wish I had your problem.. right now it's 48°. At 3:45 in the afternoon. This has been our HIGH for the day. *grumble, grumble* :mad:
 
Last night was going to be breakfast for dinner - pancakes and bacon - but DFIL called and wanted to take us out for a steak. So last night was steak for free (definitely budget!) and tonight will be pancakes and bacon. I have a few more meals left in the fridge/freezer/pantry and then I may have to buy one or 2 more before we leave on vacation to WDW next weekend!

I have been working a lot lately and had a very busy day today (although I did take time out in the middle of the day to make all my ADRs for our Disney vacation in December - whoo hoo) so we did a quick and easy dinner:

Whole wheat spaghetti (99 cents)
topped with a jar of primavera spaghetti sauce (store brand, $2) with chopped green peppers, celery and onions added (maybe another $1?)
Large salad, mixed greens - $3?
Chocolate digestive cookies for dessert (I had planned strawberries but my son ate them for a snack while I was working upstairs!)

Total: $5.

I have my daughter-in-law and grandchildren (ages 6, 3 and 1) coming to stay for the weekend as my son is putting down new floors in their house. So I'm trying to plan some meals that the kids will all enjoy too. They love chili, so we'll probably do that for Saturday night and I'm thinking homemade pizza for Sunday dinner. Fortunately, they are not at all picky eaters and love vegetables - if I put out a plate of veggies and hummus to dip them in, they're happy.

These were the last of the party foods that needed to be eaten. I budgeted for all this food in May so I am saying FREE!

Yesterday we had porkchops on the grill ( Grandma won them in a Meat Raffle and brought them to me last week because she lives alone and it was too much for her. Free meat!

$3.45 ($1.15 a serving, for 3 servings, DH has enough sausage and plantains for lunch tomorrow)

Well, since MarcyinPA never got back to me about needing some company.:confused3 J/k. I ended up making mac n cheese and tuna salad sandwiches. I added a cup of macaroni to the mac n cheese to stretch it out a bit.

.50 mayo, onions, celery, dill, bread
$1.50 grand total

Tonight we are having my BIL and SIL and my niece over for dinner and we are having homemade stirfry.

Chop some fresh beef, chicken, or pork into bite sized pieces and toss that into a hot wok with a little oil and some crushed garlic. Stir-fry till done. Next, I will mix up and add 2 envelopes of "stir-fry seasoning", 2 bags of frozen stir-fry veggies (broccoli, carrots, snow peas, and water chestnuts), and one can (drained) of those tiny little baby corn (the ones that look like miniature corn-on-the-cob). Stir-fry that till the veggies are al dente. Meanwhile, cook a package of stir-fry noodles (can't recall the exact name, but they look like spaghetti and are found in the "ethnic foods" aisle of the market), drain, and add to the mixture in the wok. Mix this all together, stir-fry for just a few minutes and then serve! Top with those yummy crunchy noodles, serve with soy sauce, and enjoy!:thumbsup2

You can really always alter this recipe to fit your family's tastes, and what's in the pantry. Any kinds of veggies can be used, and it can be served over rice if you don't have or don't like the noodles.

Sounds good! I just bought italian sausage on sale too!

I was wondering the same thing...it sounds yummy and I would love to try it sometime!
