What's for dinner? Was it "budget"?

I am having. . .
salmon ($1.25)
with mango salsa (about 1/6 of jar, so $0.50)

DH is having (He is allergic to fish). . .
Spicy Italian Sausages (6 total, he will probably eat 1/2 and have other 1/2 for lunch tomorrow) ($2.75)

and. . .
brown rice (for both DH and I): $0.50
drinks: $0.50

GRAND TOTAL: $5.50 (or an average of $1.83 per serving since DH will have enough for lunch)
 
We had spaghetti with tomato sauce (with added vegetables and some minced garlic),(vegan) "meatballs" and salad (mixed spring greens with mushrooms, yellow peppers, carrots and cauliflower florets) with mandarin oranges for dessert. About $8 in total, to feed four of us. And it was yummy too!!

Tonight is chicken parm with pasta. I always slice my chicken breasts in half because I hate when they are fat (I like them thin!!), so I'll use three, and that will give me 6. 1.99/lb.

I have a half jar of spaghetti sauce in the fridge (it was .99 on sale)

I'll bread them with bread crumbs and parm cheese (.50?)

Top with Mozzarella (1.00)

and serve with pasta (.50)

So, like $4.50? Not bad!

OK, this was a keeper! I can't believe I never thought to make this before...it was so easy and REALLY good. Even my DS8 ate it, and he doesn't like anything!:rolleyes:

gotta figure out tomorrow's menu....the parm chicken sounds so good that might be what we have:goodvibes
 
Tonight we just had popcorn cooked on the stove while watching a movie.

I think I'm fixing Chicken Parm tomorrow too for lunch/supper with a salad!
 
Tonight was leftover chicken parm for DS8 and I. DH and DS12 ate dinner at church, after doing a 24 hour fast to raise money for World Vision.

Tomorrow is dinner at Mom's house...yay!!! I don't have to cook!!
 
BBQ Chicken Breast on sale for .99 lb
Calico Potatoes probably about $2 for the onion, russet potatoes, sweet potato and green pepper
Mashed Potatoes (for the boy)
Steamed Broccoli .99 lb for crowns

Probably about $5-6 feeds three with lunch for DH and I had left over Calico potatoes for dinner.

This is my ultimate fall back on meal. I always keep the supplies on hand. It's one of those things that make you go "hmmmm?" to my kids. Both hate tomatoes, but love mater soup.

I haven't posted here lately, but have been keeping an eye out on all these fabulous meal ideas.

Last night was smothered steak (5.00 for 6 pieces), au gratin taters (.20), stuffing (1.00) because dh doesn't like the potatoes, and corn (.66), bisquits (.75). So that would be 7.61 for the meal, plus drinks, maybe 0.75? That fed two adults, three kids, and enough leftovers for DH to take to the shop for lunch today. Don't know what tonight will be yet. Might go throw a roast in the crock pot and have some BBQ sandwiches tonight. Sounds easy enough. Don't know what we will eat with it. I have cooked breakfast last two days, so I got to use up stuff that was just setting in the fridge.

Talk about stretching a free meal. I had a lucnh that a drug rep bought on thursday. I at part for lunch thursday, part for dinner thurs night and finished the rest up on friday for lunch. DH and kids did McD's thurs night. I splurged with them. My son was starting a 30 hour fast friday his church program at school and wanted a Bacon cheeseburger. My dh paid for his and dd with the business money so really I just paid for my son's meal . Friday was frozen pizza (6.50).

It's been a really tough week at work so I haven't cooked too much this week. Just wanted to get by.
 
Good to see you, Labgeek. :) Is smothered steak like salisbury steak? Lately, I've been having a craving for salisbury steak & gravy with some mashed potatoes. I think we'll have it sometime this coming week.

Tonight we're having chicken parmesan. I think this thread is on a roll with chicken parm! :) After seeing it posted a few times, I had a craving for it. :upsidedow I bought ours pre-made (Michael Angelos). It was $10 for a two pack and I had a coupon for $2 off so I couldn't resist. I've gotten Michael Angelos lasagna and it's always good, this should be too. Don't know what we'll have with it yet. And I want to have a light dessert.

Was your son participating in the 30 Hour Famine for World Vision? My son also did this this weekend. He only did 24 hours because he's in middle school. The high school kids did 30 hours. He made it through unscathed! LOL He said the hardest part was going door to door in our neighborhood collecting food for the food bank, and seeing all of the food that they collected. It made them hungry! ;) My DH was an adult leader, so he also fasted, and his only complaint was that it made him tired. It was a really good experience for my DS12, though, to see what these kids in Africa live through on a daily basis. It's made him much more sensitive!!:hug:
 
Last night was chicken thighs (dh made a sauce using honey mustard and some other stuff - yummy), pasta and broccoli.

Tonight will be tacos. I have a taco kit that I got on sale (and coupon) last week and the ground beef that I purchased on sale a couple of weeks ago. Just had to buy the lettuce and tomato today (already had cheese - again on sale), which cost about $2.
 
we are eating the chilli I made early this week. Man it was soooo good. I am adding sour cream to it:cool1: . The total was 5$ for 2 batches.. It was yummy:goodvibes
 
We had split pea and ham soup.

2 bags of split peas (@1.79)
part of a bag of carrots (@99¢)
6-7 potatoes (2.99 5lbs so I used less then $1.50)
quart of chicken broth (@2.19)
2 slices of ham that was in the freezer, I don't remember to cost but I bought it on sale.
We also had bread (1/2 loaf) which we bought for 50¢ at the Aunt Millie outlet store.
So was around $10. There are 5 of us but oldest DS and Dh ate at least 2 serving last night, so I guess it will make at least 20 servings. We will eat it again today and maybe tomorrow.
 
We're having turkey (frozen leftovers), stuffing (1.50), mashed potatoes (1.50's worth), fresh corn on the cob (10 for $2.00) and cranberry sauce (1.00). It will be enough to feed 5 (4 adults, 1 small child) for $6.00. My parents are bringing the dessert and rolls.

We were craving a nice homemade Thanksgiving meal. LOL

This recipe is out of a local cookbook I have had forever. You use cubed steak in it. My grocery store always seems to have cubed steak "reduced for quick sale" so I can stock up on it. You season the steak with seasoning salt and pepper. Brown in a bit of flour and oil. Remove the steaks. I put them on a paper towel to soak some of the oil out of them. Then take some flour to make a base for gravy. Then add 1-2 cans of beef broth and make gravy. Put steaks in a baking dish, pour gravy over it and bake uncovered at 350 for 45-60min. My whole family likes it. It's a recipe I came across when I was looking for something that wasn't the same old thing to cook.

He did start, but ended up eating lunch! LOL. They were supposed to have a lock in at the middle school, but I live in KY and with the snow storm everything was canceled. Since they called off school at 9am, he went to our shop, then ate lunch. I told him just because the lock in was canceled didn't mean he couldn't fast. He couldn't have made it long anyways. He has a fundolipation, for severe GERD and when his stomach is completely empty, all that trapped acid churns and causes stomach pain that doesn't resolve till he eats something. But, he wanted to try at least, which means a lot.

That's great that he tried! I have severe reflux so I know the feeling of the churning stomach! Our church planned it out so that the middle school kids fasted from 6pm Friday night to 6 pm Saturday night. A good portion of the fasting was during sleeping hours. I know my DS was happy to have some food in his belly come 6 pm last night!
