What's for dinner? Was it "budget"?

Anybody have any good recipes that are low carb/low sugar. My DH is a diabetic.

I saw this the other day and thought of you. Kraft Food and Family offers a free (monthly I think) recipe booklet for diabetics too. If you go to this website and register you should start receiving the booklet soon. It also has coupons and lots of good information. :)

ETA- We're having pizza tonight! Red Barron 4 cheese thin crust and I'll add pepperoni.
 
Tonight will be pork chops (bought on sale). I'll brown them in a pan and then bake them with some sage sprinkled on top.

Not sure what the side will be. Perhaps mashed potatoes. I'll make some homemade applesauce to go along with it (I love porkchops and applesauce :)). And a veggie - most likely broccoli.
 
tonight is spaghetti totally cheap...I think I got everything for less than $2:cool1:

I have hamburger steaks and I don't know what to do with them....hmmm might be time to do some recipe searching!!
 
Tonight is Chorizo ($6) Bean Salad (about $2) and corn bread- lessthan $1.

$9 and I am sure we will have Bean salad leftover for lunch tomorrow.

Pecan-Crusted Chicken: 1 cup pecans (free from Dad who can't eat them), 1/2 cup of bread crumbs (.25), chicken breasts (3.00), 1/4 cup honey mustard (.25), seasonings

Frozen Carrots: 1.00

Roasted Red Potatoes: 2.50

Total: $7.00

Tonight we are having Rigatoni with sausage and meatballs. For desert I am making a recipe I got online looks yummy and hubby just loves apples and this looks very simple.

Apple Dumplings

2 Granny Smith apples
2 cans crescent rolls
2 sticks butter
1 1/2 cups sugar
1 teaspoons vanilla
cinnamon
1 small can Mountain Dew

Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

Pretty budgetty to me!!! Whew! Because I've WAY overspent out of my food budget this week!!!! YIKES!! Pizza and fast food and junk, I'm totally regretting it now!

Tonight we're having mini-meatloaves (put meatloaf mixture into muffin tins), pasta and veggie. My cupboards are getting bare!! Thank goodness tomorrow is shopping day.
 
Tonight is french dips and baked potatoes. YUM!!! One of our favorites!

3 lbs. sirloin roast $6 (will have tons for leftovers!)
1 pkt. au jus .50 cents
3 hoagie buns .80 cents
onion .25 cents
3 baked potatoes .75 cents

For the meatless chili, I always use my same recipe but substitute 1 extra can of beans for every 1/2 lb meat I don't use. That always works for me.

Pork and Beans...I add barbeque sauce and make baked bean. Add some hotdogs for beanie weinies or some ground hamburger or turkey meat for a meal.
 
Grilled Cheese Brats (2.50..they were b1g1 free), rolls (1.00), onion (.25), pepper (1.00)

French Fries (1.00..store brand)

Frozen Corn on The Cob (2.50)

Dessert: Pudding Parfaits: (.25 pudding), cool whip (1/2 container .50), 2 cans of mandarin oranges (.50)

Total: 9.50
 
I hate going to Costco:headache: I know we need the food I just hating putting out the money...thank goodness we usually only go once a month.

Tonight is either rot. chicken or tuna melts....gotta decide!!

Eh, not budget friendly tonight. We went to Chili's. My dh and I had water though, so that in itself saved us a few bucks!
 
Happy Sunday!

Yesterday, I started Spring cleaning. Started early, ended late. We had cheeseburger macaroni (Hamburger Helper). Thank goodness I had some on hand! I was in a pinch. I was in such a rush I grabbed a can of corn thinking it was green beans! I just saw the side of the can with Green Giant on it and opened it. :crazy: So we had the corn with it. :upsidedow The kids loved it. It wasn't bad! :) I made some of my short cut banana bread and we had that for dessert.

We have a birthday party to attend today that ends around 6pm. I know I'm not cooking that late! So I threw a roast, some green beans and whole potatoes in the crock pot with some Lipton onion mix. We'll have dinner a little late tonight.

More Spring cleaning in a few minutes! I'm on a roll!

What about you guys?

SOO. . . a grand total of $1.35 (0.68 a serving). . . and it was sooo yummy. . .
