What's for dinner? Was it "budget"?

Tonight is leftover night as well. Sween N Sour Chicken over rice with crunchy noodles on top, YUM!
 
Tonight is chicken toes, mashed taters and gravy...I am going to guess at about $5 for the whole dinner and oh so yummy!!

chicken toes are my answer to restaurant's chicken fingers....I just brown up lightly seasoned chicken breast strips (no batter, no frying).
 
We're having Ham and Beans. Been simmering all afternoon. Probably have Jiffy Cornbread with them. Yum! Hope they help me fight this cold/flu crud !
 

Tonight is homemade pizzas with turkey pepperoni, mushrooms, olives, and whatever leftovers we can find to pile on top. ;-)
 
Today is homemade chicken noodle soup

I got the chicken buy one get one free so the total cost was probably around 8.00 and I have tons of leftovers....

Tonight burger king has 59 cent hamburgers and 69 cheeseburgers. So for 15.00 we had burgers and Fry's, cant beat that for a family of 5 :yay:

I thought I'd introduce myself:

I am Theresa, mom to two kiddos....Cassidy is 15 and Abi is 11.

Next year I am marching band meal planner mom...I will be coming to you all for healthy but inexpensive ideas!!:thumbsup2

tommorow I am going to do a pork roast in cranberry sauce and onion dip mix.....a DIS friend says it's fabulous...I'll tell you all when I've tasted it:lmao:

With the Rice a Roni I would say this meal will cost us about $6

We had to seriously cut back our expenses this year (DH had to take the Ford buyout after being there for 12 years because his dept. was shutting down :sad2: and there are NO other jobs around here that pay the same so even with my PT job at Target and his new job, we are just not in the same postition anymore financially). Don't mean to sound like a sorry sap, LOL...just wanted to say that this thread is great for me!! :)
 
Hmmm, tonight we got home late so: oldest DS and myself had some Chicken Noodle soup, bread &butter, and fresh cucumber and tomatoes. The 2 younger children had leftover (yes, that's right, they actually ate leftovers!!) Chinese chicken finger thingies, diced cucumber, diced cheese, and yogurt. My dad had some leftovers and some wheat toast (his diet is very wierd sometimes!! LOL)
 
We had pasta ($1 for 1/2 the barilla plus box)
sauce ($1, 1/2 jar ragu)
meatballs ($4)
rolls ($1)
salad ($1)
dressing ($0.10)
drinks ($0.50)

TOTAL: $8.60 - for two HUNGRY Adult dinners and two adult lunches. . . so $2.15 a serving. . .
 
Tonight, I'm making home made chicken pot pie. :) I'm using leftover chicken. Probably will cost around $5.
 
We had a favorite Nacho Soup. Ground Beef (used the other half of the package the day before for Beef Stroganoff), nacho cheese soup, salsa and chicken broth. It is really easy, tasty and inexpensive. Crumbled the bottom of the bag of some Tostito chips into it and served with a simple salad.

Cheeseburgers and fries for most of us today.
Mac and cheese and a piece of fruit for the little ones because they don't like hamburgers.

Definitely less than $10 to feed us all today. :)

Tonight my daughter has a double header at basketball so we are going to clean out the freezer...

Chicken fingers - $4.00 (store bought, restaurant quality)
French Fries $1.00 (frozen baked with seasoning)
Can of Corn $.35
Dipping Sauces $.50
Milk (I mention because we usually have water) $1.00
Fresh Fruit if they are still hungry (already budgeted)
$6.85 for family of 4 and there will be no leftovers...

Sure!

1/2 lb ground beef round
1 tsp ground cumin
1/4 tsp black pepper
1 can (14-14.5 oz) low sodium chicken broth
1 1/2 cups mild store bought salsa
(I might use a little more if I am using the regular Cheddar Cheese soup, just to kick it up a bit more)
1 can (11oz) Campbells Fiesta Nacho Cheese Soup (I have had a hard time finding this lately so I have used Cheddar Cheese soup and it is just as good)
1 cup tortilla chips (perfect for the bottom of the bag crumbled ones)
1 avocado, peeled and cubed (my family doesn't care for this so I leave it out)
1/4 cup fresh cilantro sprigs (I never have this on hand so I omit it as well)

Procedure

1. Crumble the ground beef into a 2 qt nonstick pan over medium high heat and break it up with a wooden spoon.
Add the cumin and pepper. Cook the beef, stirring, until it browns all over and is cooked through. Add the chicken broth and 1 cup of the salsa and bring mixture to a boil, stirring constantly, 2 minutes. Reduce the heat to low, cover the pan, and let simmer until the ingredients cook down a bit, 4-5 minutes. Stir in the cheese soup and cook only till blended but not boiling. Remove pan from the heat.

2. Ladle into serving bowls and garnish each with some tortilla chips, avocado, cilantro and remaining salsa.
