Sure!
1/2 lb ground beef round
1 tsp ground cumin
1/4 tsp black pepper
1 can (14-14.5 oz) low sodium chicken broth
1 1/2 cups mild store bought salsa (I might use a little more if I am using the regular Cheddar Cheese soup, just to kick it up a bit more)
1 can (11oz) Campbells Fiesta Nacho Cheese Soup (I have had a hard time finding this lately so I have used Cheddar Cheese soup and it is just as good)
1 cup tortilla chips (perfect for the bottom of the bag crumbled ones)
1 avocado, peeled and cubed (my family doesn't care for this so I leave it out)
1/4 cup fresh cilantro sprigs (I never have this on hand so I omit it as well)
Procedure
1. Crumble the ground beef into a 2 qt nonstick pan over medium high heat and break it up with a wooden spoon.
Add the cumin and pepper. Cook the beef, stirring, until it browns all over and is cooked through. Add the chicken broth and 1 cup of the salsa and bring mixture to a boil, stirring constantly, 2 minutes. Reduce the heat to low, cover the pan, and let simmer until the ingredients cook down a bit, 4-5 minutes. Stir in the cheese soup and cook only till blended but not boiling. Remove pan from the heat.
2. Ladle into serving bowls and garnish each with some tortilla chips, avocado, cilantro and remaining salsa.
