Good morning all!
Hope no one minds if i jump in! I have not posted much on the community board, but I would love to get to know all of you!
I post a lot on a similar thread to this over on the budget board, but I usually feel that my meals are not budget-y enough, so maybe I will come play over here for a while! ;)
Just by way of introduction, my name is Tanya, and I am addicted to Disney. I can stop whenever I want to... no really, I can... wait a minute, is that a new pin... :magnify: ?? Anyhow... *shakes self back to reality*.. I hail from cold, wretched (at the moment) Northwest Montana. DH of almost 15 years is James, and we have three lovely but PICKY daughters. They got that from their father... :rotfl:

We tend to be rather meat-and-potatoes sorts of people; I would like to eat more adventurously, but I get voted down. We are serious carnivores. We do NOT cook with onions; DH can't abide them, they turn his stomach to even smell them, and they wreak havoc on my digestive system. DH also doesn't like meat that is overly sweet - BBQ is awesome, teriyaki or sweet-n-sour, not so much. I will eat just about anything so long as it doesn't include peppers or large pieces of mushrooms. Eldest DD will eat just about anything as well, although she views most vegetation with suspicion. Middle DD likes her food always served in the "deconstructed" style: nothing can touch, nothing can mix, no sauces, no strange spices... the weird kid won't even eat ketchup or ranch dressing, usually kid staples! Youngest DD just plain doesn't eat... a few bites here and there, but usually not much... I wonder how this child continues to grow! :sad2:

So, that's us in a nutshell.. I will post what we are having for dinner most nights, and usually add recipes.

Tonight is not very exciting, unfortunatly, its leftovers night. :rolleyes1 On Sunday, DH slow-roasted a London Broil on the BBQ grill, then sliced it thinly. It was SO yummy and juicy. He also made mashed potatoes and gravy (a mix of packaged AuJus and water and a can of Golden Mushroom soup, thickened with cornstarch) and cauliflower and cheese sauce. We have lots of meat leftover and lots of gravy, so I am going to chop up the meat, boil up some frozen egg noodles, and mix the meat and the noodles with the gravy for a noodle dish. There is also leftover cauliflower, so we will reheat that too. I may serve a salad for those who don't want cauliflower. Gotta love leftovers! :thumbsup2

Sheryl- thanks for the update on your little Princess. I hope the Dr can find something to explain her pain. Give her a hug from me, please.

Becky- I would not share that sandwich either. I have a feeling that Lauren and I are in the same food boat :rolleyes1

Rogue- I don't know how to make brown rice taste good either. I hope someone here has advice, Erica cannot have white rice and the rest of us should not. The girls fixed it with dinner one night and my DH, who would have scored it as a -5 on a scale of 1 to 10 if I had cooked it choked it down and later that night scarfed down a sandwich when the coast was clear :lmao::lmao:


Tonight we are having an eggplant casserole with whole gran pasta on teh side. I also have meatballs for the guys, they probable will turn their nose up at the casserole.

I added 1 1/2 pounds ground turkey and substituted 1/2 cup oatmeal for the bread crumbs. I'll pick up some FF parm cheese if I can find it for the topping.

[FONT=&quot]1) PREHEAT OVEN TO 350, SPRAY 13 X 9 BAKING DISH WITH SPRAY.

2) SPRAY LARGE NONSTICK SAUCEPAN WITH COOKING SPRAY; HEAT AND ADD ONION, COOK UNTIL IT JUST BEGINS TO GET SOFT.

3) ADD EGGPLANT, TOMATOES, BREAD CRUMBS, BASIL, GARLIC AND SALT AND PEPPER. BRING TO A BOIL. STIRRING AS NEEDED. COOK UNTIL MIXTURE
IS THICK.

4) TRANSFER MIXTURE TO BAKING DISH. BAKE COVERED UNTIL TENDER 40-45 MINUTES.

5)UNCOVER, SPRINKLE WITH CHEESE AND BAKE UNTIL CHEESE IS LIGHTLY BROWNED. ABOUT 15 MINUTES.

I also started this dish but need to pick up red beans to finish it. I don't know if I like it, we'll see how it is when I finish it off.

Pumpkin chili mexicana (core)

2 TBS core oil (add two more to meet your daily healthy oil requirement, per serving)
½ c chopped onion
1 c chopped red bell pepper
1 clove garlic, finely chopped
1 lb lean ground turkey or other core ground meat
2 (14.5 oz) cans diced tomatoes, undrained
1 (15 oz) can pumpkin
1 (15 oz) can tomato sauce
1 can (15.25 oz) kidney beans, drained
1 can (4 oz) diced green chiles
½ c whole kernel corn
1 TBS chili powder
1 tsp ground cumin
1 tsp salt
½ tsp ground black pepper

Heat oil in a large Dutch oven over medium-high heat. Add onion, bell pepper and garlic; cook, stirring frequently, for 5 to 7 minutes until tender. Add ground meat; cook until browned. Drain.

Add tomatoes with juice, pumpkin, tomato sauce, beans, chiles, corn, chili powder, cumin, salt and pepper. Bring to a boil. Reduce heat to low. Cover; cook, stirring occasionally, for 30 minutes.
 
I just wanted to say that the chicken was a keeper! I left in in the Crockpot too long, in this case 6 hours is 6 hours, not 8 ;), so the white meat was a little dry. Next time I'll follow the directions.

Greek Spinach w/ tomatoes

1 t olive oil
2 cloves garlic, I put mine through the press
1 C grape tomatoes, cut in half
1 C frozen spinach, thawed, squeeze out any water
1/4 fat free Feta cheese

Saute the garlic in the olive oil for 1 min. Add the tomatoes and spinach and saute for a few minutes, until the tomatoes start to break down and any water in the spinach is gone. Add the cheese and serve.
That sounds great! I love spinach and Greg loves Feta..its a win win!

WFD tonight: Potatoe and cheese pierogies ( just the frozen ones..they are pretty low cal!) i will pan "fry" them ( aka 0 cal cooking spray) and top them with salsa and low fat sour cream..i will serve them with a salad. I have a feeling greg will need something else with it too though, i'll make him a hot dog to go with it..hahahaha

I'm trying a new chicken recipe tonight. If it tastes half as good as the marinade smelled when I made it yesterday it should be a winner - Chicken Scampi with rice pilaf and green beans.

I just took the dog for a walk and we are having the most beautiful spring day, of course next week my daughter is off from school so it will probably rain then! Tonight we are having sesame chicken with peanut dipping sauce, broccoli, and I think rice. Does anyone know how to make brown rice taste good? Thanks for being so welcoming, off to work in the yard.

Ok I need to head back up to school, I ran home for lunch, and to put supper in the crock pot.

Supper tonight will be beef tips in gravy (that are slow cooking now) over egg noodles and fresh green beans. It is karate night here and Kris is working late putting up garage doors, and openers for a customer after he leaves the office.....busy season has started I think!

Ya know, I never thought of that. We have an Amish market here too...open a few days like yours. I guess I should check that out as well. I never thought of that.

Next time I get down there, if I ever get down there, I am going to ask them. We have one that is closer to where I live but I do not like it as well as the one that is in Annapolis, MD.

Welcome! And I don't know what to tell you about the rice. I can't make good rice for nothing and last time I had it I had to have my mother make it. :rolleyes: I burned it the time before. I just usually try to serve it with something saucy.

Poor thing. :hug: Does the fever always happen when her stomach hurts her? I wonder if the two things aren't really connected and she has something like GERD or acid reflux and the fever is just random. I know someone whose son has a fever disorder and just spikes a fever but will be fine otherwise.
 
WFD? Famous Daves!!! Having a meeting tonight and we are having it catered by them. Barbequed chicken and ribs with beans, coleslaw, VERY ymmy corn muffins and brownies and bread pudding for dessert. I will be good and only have a little of each thing and no dessert. And I will definately be good and eat only one muffin! :rolleyes1 I could eat two or three of them!

I am hoping there is chicken left over this time, last time they ate it all and I wanted to make a yummy chicken salad with some of it.
 
BigMerle--Yum on Famous Daves. We used to eat there every other week or so when we lived in WI--we're still waiting on the one to open up here.

Tanya--Welcome! My name is Stephanie and I'm a "sorta" SAHM of 2 also picky little eaters. Luckily, my DH will eat anything (he's even eaten food I've burned) so I make whatever floats my boat--and there's always PB&J for the kidlets!

Here is my sesame chicken recipe:
For the chicken I marinade it is sesame oil, soy sauce, a little brown sugar, and a couple of garlic cloves. Then I usually grill it on the george forman, but this summer I am going to learn how to use my real, never been used grill- I'm sure it would taste better.

For the peanut sauce
1/4 c. peanut butter
1/4 c. soy sauce
pinch brown sugar and cayenne pepper
1 tsp vinegar (I think I use more)
1/2 tsp sesame oil
2 garlic cloves, minced
1/8 c. water, I use hot to loosen up the peanut butter.

I play around with all my recipes, so it's usually not the same twice, unless I'm baking. My husband takes the leftovers in a wrap with lettuce for lunch.

I think I learned about Sweet Baby Ray's bbq sauce from someone here- thanks, it's now a staple in our house until I find a recipe I like to make my own.

We've had too many baseball and soccer games lately, and between those and the stomach virus running rampant through my house... well, no one is eating much.

Welcome! I'm glad you came by and hope that you continue to post and share recipes. I'm Nancy, a stay at home Nana to Kady. I have one DH, a sandwich lover, also suspicious of new foods, a DD and DSIL, Marisa and Jeff, A DS and DDIL, Erica and Dan, and one more son Donny. We are trying to follow WW and for me this is the second day. The girls are motivating me to try to follow so my recipes will be point friendly or will be the CORE recipes if I can stay away from sweets:sad2:.

I feel fine, Wendie. I was tired over the weekend but back to normal (whatever that is for me) yesterday. My Aunt is doing better I think. I visited her today at lunchtime and she was tired but alert. I think she is a little blue that she is there but I hope that she interacts a bit with the people there.
 
:flower3: Welcome Tanya! My name is Ann (38) and I am a SAHM, I was a banker before the baby was born. My husband's name is Ron (48), we have an 18 month old DS, Luke and a DSD (22) and DSS (18). DH works two jobs so unfortunately he is not home for dinner every night. I love to cook and get that from my DM. When Ron works we usually have dinner with my DPs.

Rogue -We do not eat alot of brown rice, but have you tried using beef stock or chicken broth in place of water and maybe add some veggies. Good luck and welcome!

Dinner tonight is going to be a tomato-spinach soup, some baguette with emmenthaler cheese, and a mixed greens salad with lots of radishes and olives.

Well again they didn't find anything. The ultrasound tech did the full abdomen scan, then had the doctor look at it, who then came in & did it again. Then they had "head honcho" come in who took another look himself. They told us they didn't see anything unusual at all. Appendix, kidneys, you name it, they looked & didn't find anything.

Chris hasn't spoken with the ped. yet, we're hoping she'll want to wait & see a couple of days before running anymore tests. We are guessing cat scans would be next & more blood work.

Thanks again for all the prayers, I'll keep y'all updated.



I figured she got busy or maybe is resting so I took the liberty of updating for her.
