I have a headache & I'm bummed. Walked in the door & inhaled a cupcake that Chris left here! I don't have a clue what's for dinner tonight. I do know there will be wine and/or cocktails tonight!
 
This was a keeper. It's so EASY yet very rich:

Chicken Scampi

4 boneless breasts, cut into 1 inch strips
1/2 tsp black pepper
6 Tbsp. parmesan cheese
2 Tbsp. dried parsley
3 cloves garlic, minced
1/2 tsp. salt
2 tsp. dried oregano
6 Tbsp. lemon juice
6 Tbsp. worcestershire sauce
1/2 c. white wine

Combine all ingredients in a shallow dish, marinate at least an hour, best if done overnight.

Remove chicken from marinade and pat dry. Saute chicken in a skillet with 1 Tbsp. EVOO. Meanwhile pour marinade in a saucepan and bring to a boil. After chicken is done add cooked marinade and serve over rice or pasta.

I DOUBLED the marinade ingredients because we like a lot of sauce. Original recipe was 1/2 of what I posted.
 

OOPS, almost forgot - Kyle pitched this afternoon, wasn't a no-hitter, gave up 3 hits against the same team. This game pretty much secured the district championship for us, we won 8-3!!!!:cheer2:

Do you believe that neither Tom or Andrew remembered having Saucy Beef? WTH? This is the 3rd time I have made it! Tom was like, "Wow, this is great! This may be my new favorite dish". I did tweak the ingredients a bit to what I had on hand but I thought it was exactly the same.

It's from this thread awhile back - I of course have NO idea whose it was but it was DELICIOUS! DH loved it and ate two big bowls. Def a keeper for us, and one I may pass onto my best friend who's always looking for easy one dish meals.

Chicken Sausalito

Vegetable cooking spray
4 boneless skinless breasts, cut into cubes
1/2 c. chopped onion
1 tsp. minced garlic
2 Tbsp. flour
1 - 15 oz. can black or red kidney beans, rinsed and drained
2/3 c. chopped tomato
2 - 3 Tbsp. salsa
1/2 c. reduced fat sour cream
salt & pepper to taste
3 c. cooked rice
Garnishes: salsa, chopped avocado, sliced green onions and/or finely chopped cilantro or parsley

Spray a large skillet with cooking spray; heat over medium heat until hot. Saute chicken, onion and garlic until chicken is cooked, five to eight minutes. Sprinkle chicken with flour and cook one minute longer.

Stir in beans, tomato, salsa and sour cream. Cook until hot, one to two minutes. Season to taste with salt & pepper, spoon over rice and garnish

Rogue- I don't know how to make brown rice taste good either. I hope someone here has advice, Erica cannot have white rice and the rest of us should not. The girls fixed it with dinner one night and my DH, who would have scored it as a -5 on a scale of 1 to 10 if I had cooked it choked it down and later that night scarfed down a sandwich when the coast was clear :lmao::lmao:

My DH hates it, too. If I am determined to have it, I make a boil in the bag one for me and minute white rice for him.

I love the brown rice at Pei Wei - they do something diff than I do. Course the cups of soy sauce I drench it with probably makes a difference too... :rolleyes1

Hey Y'all, More prayers for Alexis are needed. The lab results came up blank. Nothing, nada! They have scheduled an ultra-sound for her today. Please say some prayers that they don't find anything bad & that she'll just stop running fever & having stomach pain.

Here is my sesame chicken recipe:
For the chicken I marinade it is sesame oil, soy sauce, a little brown sugar, and a couple of garlic cloves. Then I usually grill it on the george forman, but this summer I am going to learn how to use my real, never been used grill- I'm sure it would taste better.

For the peanut sauce
1/4 c. peanut butter
1/4 c. soy sauce
pinch brown sugar and cayenne pepper
1 tsp vinegar (I think I use more)
1/2 tsp sesame oil
2 garlic cloves, minced
1/8 c. water, I use hot to loosen up the peanut butter.

I play around with all my recipes, so it's usually not the same twice, unless I'm baking. My husband takes the leftovers in a wrap with lettuce for lunch.

I think I learned about Sweet Baby Ray's bbq sauce from someone here- thanks, it's now a staple in our house until I find a recipe I like to make my own.

My chicken tonight was very forgetable, I tried mixing some spices and then that when things went south. Not in a good way;) Need I mention I am eating popcorn now.:laughing:
 
Sheryl -- I'm glad they didn't find anything on the ultrasound. I know it's bad because they still don't know what the problem is, but it is also good because everything looks normal. I hope Alexis feels better soon and there aren't more tests!

Today somehow ended up being a busy day (Tuesdays are usually slow for us) so I just pulled some meatballs, sausages and sauce out of the freezer so we had that with pasta, bread and a salad.
 
Tonight it's leftover spaghetti and Extra-special Kitty Bread. :) Thanks for the tips on the cheese rind. It rocked!

Andrew has a game tonight so dinner will be hot roast beef and gravy heros with provolone cheese. I think I'll just get some fruit and serve that as well.

DH is working and my DM went on a bus trip. I am either going to go out to eat with my DF or go cook him dinner.

My grilled lamb chops were so good last night! I have been craving them so bad!;)

No cooking for me tonight. A local athletic organization is honoring Kyle at their monthly meeting tonight as the male athlete of the month, and it includes a dinner buffet!!:cool1:

Here is a photo of last night's soup. The "mixed greens salad" morphed into a bowl of olives and radishes, but oh well.
