Congratulations to Kyle!

Today is a super-busy afternoon. Caili has skating, then Liam has baseball practice, and then we have to go to the school art show because Liam has a piece in it (I am very curious to see this...the last time Liam had artwork displayed, it was at the library and it was basically two sort-of shaped lumps of clay. I was glad Liam wasn't with us when Caili and I saw it because Caili looked at it and said, "Um...what is it?" :laughing: It was supposed to be a depiction of "Hickory Dickery Dock")

Anyway, dinner will be something in the car in between skating and baseball.
 
Today I'm going to marinade chicken strips in buttermilk, garlic, lemon, and some tabasco. I'll lightly bread it, I'm going to try whole wheat bread crumbs but I don't know how well that will go over. We will have hidden valley ranch on the side so they can mask the flavor if they need to. I'm also going to try the balsamic roasted potatoes and carrots I saw posted here the other day. They sounded really good. I usually pan fry the chicken but since I'll have the oven going I'm going to try baking them.
I'm looking foward to trying more of your recipes.

Laura, Wow, you have alot going on today! Let us know how Liam's artwork is...I remember seeing Andrew's work for the first time...I had the same reaction. Now his stuff is starting to resemble things. Their art teacher is crazy about the Beatles so not too long ago they were listening to the Beatles and drawing yellow submarines. Sounds like fun, right?

I'm also going to try the balsamic roasted potatoes and carrots I saw posted here the other day. They sounded really good.

That was my recipe...we really liked it. I hope you do too. Let us know. :)
 
Kathy- Wow, it just keeps getting better and better for Kyle, doesn't it? :cool1::cool1: You have got to be walking on air right now! Take plenty of tissues and enjoy your son's accomplishments, and if I were you I'd stock up. I imagine you are going to be attending a few more of these banquets honoring your athlete. Have fun tonight!

Sheryl- I agree that not finding anything so far is a good sign. Let's keep praying that the "virus" or whatever has run it's course and the little chef is back in the kitchen, right as rain.

Dinner was good last night. We had the eggplant dish and I put FF mozzarella cheese on it instead of the Parm, which I could not find. I was not a fan of the cheese, maybe mixing it in would have been better, I don't know. I guess I really like a little fat in my cheese....that's why there's a little fat on me :upsidedow. I also heated up sauce and MB's for the guys to go with whole wheat pasta and made a big salad. Buddy brought home the neighbors an they said they liked dinner. She is a fabulous, old fashioned sauce maker so mine was no where as good as hers.

Tonight we are having the chili I made yesterday and I will serve it over baked potatoes. It came out so good. You cannot taste the pumpkin and after I added the beans and let it simmer the texture evened out. I did bump up the spices, it was way too bland for me.

Morning Y'all,

The dr. has not called back yet, Chris is going to call as soon as she gets a break in surgery. Alexis felt good enough to go to school, no fever or stomach cramping tonight or this morning. But the teacher just called & said she had a pee-pee accident at school. She said she is fine but wanted us to know because of everything going on with her. She also said it seemed to just come on her all at once & she just couldn't make it to the bathroom. Very strange, the only time she ever has accidents is if she's sleeping really hard. I really think something is going on in the urinary tract that's not showing up in the tests. It's an early dismissal day, so I'll pick her up a little after 1.

Kathy, Enjoy yourself tonight! Just don't forget the camera & tissues!! Do they still have those dinners at the Four Columns? They do a pretty good job even with the banquet foods. ( Oh, Geaux Eagles!:cheer2: )

Lauren, I love hot roast beef poboys with provolone! That's my fav comfort food! Hope A has a good game!

Nancy, Glad you're feeling well! I think you are really going to UP the flavor with your WW meals! That chili sounds weird & awesome all at the same time! I'll bet we'll all benefit from your lighter cooking recipes!

Laura, I can't wait to hear what Liam's art project was!!! You never know, one day he may have two huge lumps of clay on display in some snooty contemporary art gallery!

Last night's dinner was very good for an easy one. I took out a couple of frozen ravioli we made a while back, topped it with doctored jarred alfredo sauce. Cooked the artichokes that I didn't fix over the weekend & made a dipping sauce for them. And the limoncello margaritas made it all good! ;)

Unless something comes up with Alexis, Tonight's going to be lamb chops on the grill. I'm going to do something with a couple of artichoke hearts we have left. And maybe a mediterreanean style potato salad.

Tonight is Taco Cabana night again. I think that is 3 weeks in a row that we've had on Wed nights.

I had a mediterranean potato salad posted on pg 415 on the old thread and I can't pull it up. Does anyone have that recipe? Is the rest of the old thread somewhere here on the DIS?
 
Lauren, I love hot roast beef poboys with provolone! That's my fav comfort food! Hope A has a good game!

Do you put anything else on yours? I may put horseradish sauce on mine.

I will look to see if I can find the salad recipe...they are on the Creative board.

The soup was good, but not terrific. I think I probably won't make it again, but if you want to try it, it is on epicurious, listed as tomato-spinach soup.
 
Tonight we are having an eggplant casserole with whole gran pasta on teh side. I also have meatballs for the guys, they probable will turn their nose up at the casserole.

I added 1 1/2 pounds ground turkey and substituted 1/2 cup oatmeal for the bread crumbs. I'll pick up some FF parm cheese if I can find it for the topping.

Sheryl's Recipe:

For this recipe use small red potatoes.,what we call boiling potatoes. I use balsamic vinegar for this, a little more olive oil & of course I had more pepper, tonight I used red pepper flakes & cajun seasoning.


Mediterranean Potato Salad

1 1/2 pounds boiling potatoes, all about the same size
Coarse salt
2 medium firm ripe tomatoes
1/2 small red onion, peeled
1/4 cup pitted green olives, coarsely chopped
1 tablespoon capers
1 small garlic clove, peeled and minced fine
1/4 cup fruity olive oil
1/4 cup imported good quality white wine vinegar
Salt and freshly ground pepper to taste

Cook the potatoes in boiling salted water in a medium pot until tender but firm, about 15 minutes. Cooking time will vary according to the size of the potatoes. Drain. Return the potatoes to the pot and toss over high heat to evaporate any remaining moisture. Set aside to cool. When cool enough to handle, peel with a paring knife, removing any bruised or discolored areas. Cut into roughly 1-inch dice, keeping them irregular in size. Core the tomatoes and cut into chunks about the same size as the potatoes. Cut the red onion into slices about 1/8 inch thick. Combine the potatoes, tomatoes, red onion, olives, capers, and garlic in a large bowl. Add the olive oil, vinegar, salt, and pepper. Toss gently to mix. Adjust the seasonings and serve.
Serves 4.

edited to add: I also added a lot of fresh parsley & a few large leaves of fresh basil.

I just calculated and searched. It helps to have 2 windows open. I was always known as a problem solver. I love to figure stuff out like that.

Now, tell me how you "dress" your roast beef po boy. I am searching the net for different ideas so I may add lettuce onion and pickles. I am eating alot of wierd stuff lately. I hope that means something...;)
 
Lauren- I always have caramalized onions, with a little/lot of salt and the smallest drop of balsamic vinegar, on my steak and cheese subs. I've never had them with gravy though, but I think gravy could go on everything. We also sometimes use pepperjack cheese instead of provolone. I think I just figured out tomorrow night's dinner.

Shovon- Do you make your own ravioli? That's something I haven't tried yet but would like your recipe.
 
Hello hello!

I am back to the land of the living. I was on night shift for 6 months but this week my work decided to flip me back to days. I have been a bit of a zombie but am finally starting to feel human again after having 4 days adjust here.

Monday was Pork chops, yestreday was Tilapia Bundles (cooked in foil with vegies).

Tonight I am trying to re-create a dish from a local restuarant. Hubby loves a place called Chicken Kitchen and especially loves their chicken chop-chop. Last week he had gotten some chop-chop but forgotten to get their curry mustard sauce (which is the whole reason for eting there!). Upon his request I was able to make a fairly accurate duplicate of the sauce, which has now inspired me to attempt tp duplicate the whole recipe. We shall se how it goes. I will dice some chicken and marinate it with :
• 1/8 cup red wine vinegar
• 1/2 lime, juiced
• 1 teaspoon white sugar
• 1/2 teaspoon salt
• 1/2 teaspoon ground black pepper
• 2 green onions, chopped
• 2 cloves garlic, minced
• 1 teaspoon dried oregano

I will make some yellow spanish rice (from a bag) and then make the mustard curry sauce which is (guesstimation here) : 2 tablespoons reduced fat mayo, 2 tablespoons sour cream, 1 tablespoon mustard, 1tablespoon curry powder, 2 teaspoons milk, squirt of lemon juice.

Not much going on in life. I registered for summer classes and was horrified at the cost of graduate courses. I start the program in the fall but am taking a few classes early. Hope everyone is having a nice day!

Sheryl--My goodness.....this is really frustrating isn't it?!!? Poor Alexis, and all of you as well. I know it is good news that they didn't find anything with the ultrasound, but to get an answer to what is going on so you can then move on to fixing it would put the mind at ease as well. Prayers said that it is found soon, and that it is very minor.
I do have to say that I would let the Dr know of her accident today, it does seem bladder/kidney related.
Keep us posted, and give her a big hug from me!!

Laura--Looking forward to the art review, ;) When I work at the school in the art room, I never want to hurt the kids feeling with asking what something is...because we are all supposed to know right?!!?...so I always ask if they can tell me about it, and why they choose to make/draw it etc...then I try to piece together what they say like clues until I have it figured out, lol.

Nancy--I am glad your Aunt had a good day...I will pray it continues and that she starts to "mingle" around a bit. I am happy to hear that you are feeling better as well and that your weekend of rest helped.

I have spent the day dealing with phone calls for my grandmothers home health care...we have been having some issues with our regular girl doing all of her hours.....My grandmother is not going to be to happy with me for calling the agency on this girl, but my #1 concern is her well being, and having the help she needs and qualify's for so she can stay living at her home. I do not like getting anyone in trouble, especially when it is someone we have had for over 12 yrs and is like family to my gram, but I think that is part of the issue and we were being taken advantage of. So it has been a stress filled day, and this will not be resolved until the end of the week it seems.

Supper tonight will be a new recipe from my diet and nutrition magazine....sage rubbed pork chops with a warm apple slaw.

I bought a package of delicious looking boneless short ribs...any ideas or recipes on how to cook these??? Can they be marinaded and grilled or will they be to tough?
