Quick evening check in---I will never catch up on everything so I apologize already, lol!!

Lauren--that recipe looks really good, can't wait to try it!!

Sheryl--As for Alexis and her writing issues...you can call and speak with the schools head of special education, and let her know your concerns, she can sit in the classroom and do an open (meaning from a distance) observation and see if this is something that needs further testing etc. Federal law mandates that every parent (etc) has a right to all concerns being evaluated if asked. (speech, reading/writing ADD etc) I wish I was closer as I would just pop over, and let you know my thoughts, as this is the area I work in. In Maine it is called P.E.T. (pupil evaluation team)
If there are any major concerns I am sure her teacher has noticed and will make the special education dept aware. The first couple of years of school teachers are always looking for red flags. I am glad she has "nana" keeping her eyes on things too...it is such a blessing when "home" is on the lookout as well....we wish more families were like this!!!

Nancy--I hope that things are able to get cleared up for all of you...thank goodness your Aunt has such wonderful neices loving her, she is blessed to have you all. I do hope you try to find time to rest, I worry you will burn out. I send hugs and prayers to you all.

Last summer my mother ended up in the nursing home for rehab, her feet were swollen, and she couldn't get into any shoes but her slippers, the P/T were worried that she would fall while learning to walk again, so I went and bought her a pair of crocs in her favorite color bright Purple!! Well, she was so tickled, and loved them and the therapists were so thankful as it was a perfect shoe to have her in. Fast forward to this past Dec. after we had left florida, and we were in N.C., my dad sent me a picture he had taken with his phone of her out walking with her walker, and though it is a bit blurry you can make out those bright crocs anywhere.....this is the last photo we have of her.
This is why you and your mom croc shopping made me happy all day, so thanks---I hope you two had a wonderful time!!
 
Tip from my Mom- she always told me if fish seems "fishy" to soak it in milk or buttermilk a while before cooking.

I've done this to haddock. However, if a fish smells gross to me after I rinse it, I would rather bring it back than eat it.

Laura, Thanks that makes me feel better! :goodvibes I really think I'm worrying to soon on that. Her school doesn't have parent-teacher conf. (until 1st grade) unless there is a problem.

Glad to help. I am sure if the teachers felt there was a problem, they would let you know. Is Alexis in preschool or Kindergarten?

Yup...this is why I've been buying organic meat, poultry, and dairy for years. I figure if it does that to the birds, it will probably do the same to my kids. I will say though that even the organic chickens are larger than they used to be. They average 4 lbs now, and I used to be able to find 3 pounders easily.

I got take-out Indian food tonight. The kids had ham and cheese sandwiches.

I haven't bought organic meat due to $$, but do buy it in eggs because it's not much more expensive.

We may have to cut back on meat intake in order to buy the hormone free variety. Esp once we have kids.

Where do you find yours? Just the grocery store? I was looking for a local co-op or farm, I wanted to buy a side of beef but would have to save up a bunch of $$ prior to do that.
 

Oh Croc talk! I got my new Croc flip flops today!:woohoo:

I had thought about going in together with my sister and a friend to buy an organic side of beef. Haven't really looked in to it, would have to see if we could get it in our freezers first. Once upon a time I would have been able to get some from family in MO but how to transport that much frozen beef 1,000 miles before it thawed I cannot even imagine.:scared:

Every year my grandparents would get a side of beef from my dad's cousin in exchange for letting him use their farm for the cows. They just had to pay the butcher. Best tasting beef I have ever had. :cloud9:
 
Tonight I have praise team practice so it will be pizza for us.

Tonight for dinner we will be having some terribly-bad-for-us fair food! We will be heading out to the south florida fair and having lots of junk I am sure. Hubby in particular likes the Funnel Cakes and always tries to search for whatever new junk food they have. I of course participate... wouldn't want hubby to feel alone in his endeavors! :lmao: I may have some leftovers before I go tonight just so I am not starving at the fair.

I love the fair! We start having the fireman's carnivals in the summer, the agricultural fairs towards the Fall and the Big E in September. I love Fair Food and cannot wait for them to start up! Have FUN!

Nancy, He sure was tired of hogging that computer last night! I have never seen him so frustrated, not with my aunt, but with not being able to clean it up. But if I were him, I would have been mad at her. He's really a better person than I am.

I'm worried we are going to have some reading problems with Alexis & I'm thinking about talking to her school about dyslexia. She has really great motor control & they are practicing writing now. She will sometimes (more like often) look at a word and write it totally backwards. Flipping not only the order of the letters but the direction, like dog she will write qob?? I don't know when they should have control of that, if I'm worrying unnecessarily?

Nancy, You are so right about our Princesses! (after this morning I am using this term very loosely) I'm afraid Alexis really has a head start on it, she's learning from one of the best, her MOM! :mad: Chris (her Mom) is only about 4'11" and was quite a cutie herself back in the day. She worked the sweet smile, the pout & the tears to the hilt! The really funny thing is that she thought it worked back then & to this day, will still try to pull off the "pleeeze Nanny" ( I'm her godmother & SIL!), the sweet smile or the near tears when she thinks it's necessary! What amazes me is that it didn't work way back then when she was the super cutie & it's surely not going to work at 30 years old!!! :confused3 :laughing:

You have me smiling with the Princess sweet smiles.I was not easily won over by them but my DH, a sucker for the girls, always was. My Godchild, Debbie is still able to smile at him and he is lost. My DD and DDIL can sweettalk him into anything, and Kady just pouts her lower lip. She has demonstrated her pout to me before she asks him for something, laughs and tehn off she goes to have her wish granted :lmao: I give up!

Kady is still writing some of her letters backwards when she is in a hurry. The special Ed teachers evaluated her and said that this is normal and not to be too worried. Her learning issues were apparent this year in the 1st grade, I saw them a lot because I am a parent helper in the classroom. Her teacher discussed all of her observations and after Kady was tested at the learning center the results were the same. I have no idea what they are doing but she loves going and I think I see an improvement, she can write the answer down correctly now. A month ago she knew the answer but when she put it on paper it was not spelled right.

I told Donny about your Bo/ Aunt computer problem His response was :scared1: and then said "Are you sure that was not Auntie Gail?" Her computer always is sketchy and he is always cleaning it up.



Made it nice and spicy. I used only about 4 oz in the frittata and made the rest into 3 oz patties which were a nice size. I got the 93/7 ground turkey which makes the 3 oz patties 2.5 WW points.:thumbsup2

I used to soak Bluefish in milk. I had been told that the fishier fishes should be soaked. Now I just don't buy them. I did not care for Blues even after the milk bath :rotfl2:

I try to but organic meats when I can also. I get the best buy at Stew Leonard's now that we have one close enough to make the trip worth while. I don't know if it makes a difference but I figure that it cannot hurt.

I hope you enjoy that recipe as much as we did. Tom loved it...went back for more and he is not big on veggies...A loved the potatoes, not so much the carrots...:confused3 I think his tastes are changing.

Crocs...I know they make me happy...even though I get weird looks when I wear my lime green ones. I am so happy to hear of your fond memories...

All this Croc talk made me start shopping online for a new pair for September's trip. Now, I am so confused what style I want? I am trying to decide between Maryjanes, Cleo, Malindi, or Disney?

What to do, what to do????? DH will not be happy this thread has lead to shopping now!!!!!:rotfl:

Just popping in quickly to post a picture of last night's dinner. It tasted really good and the whole thing only took 10 minutes from start to finish! I'll be back later to chat and post what I am making tonight (have to figure it out first!)

Sheryl - They have this in the Jeff Parish school system. If you bring up your concerns and request testing, they are required to do the testing. Both my kids are long past this, but I'm fairly certain the program is still in place.

Hey Y'all,

With lots of meds I did sleep well last night! I have that dr appt this morning. Say some prayers that he will listen to me & we get this figured out! I'm going pick up the x-rays I had in Dec on my upper spine. I really think I have more going on there than just the fibro, I just hope he listens to me! Even though I slept all through the night, and I am in a lot less pain this morning, I woke up with numbess in both of my arms & hands. That just ain't right.


Have y'all noticed your chicken breasts getting bigger? Or maybe I'm just not wanting to eat as much? I bought some bl/sl at Kroger and they are HUGE! 3 were almost two pounds.

Last time I made chicken, I got sick of eating it about halfway through so I cut them all in half this time and just ate half.

I'm sure it's the hormones they inject into the poor things. I really need to find some local chicken somewhere that isn't as treated.

The forms for testing came home early in the year, before I had concerns, but yes it is available here. I was trying to put out "feelers" just wondering if my concerns were correct.
I'm sure your right, her teachers would have mentioned something, if it was unusual! She is the exact opposite of what I dealt with DD, Angelina was an early reader, but struggle with math. Alexis is a whip with Math, I mean really gets it! But in writing letters or numbers, she's struggling.

She is still in pre-K 4, she's 5 & will be 6 in Nov. Do you think we should speak to her teachers now, or I am just being a nervous Nana?

Aimee, I buy organic milk & eggs all the time & try to buy chicken & beef when I can. I have been having to go to Whole Food Market for the meat, which is Way expensive. I've noticed WalMart is starting to carry a few more organic items. When my DD, was a kid, I belonged to a local Co-op, we were buying from the same companies that would supply the local health food markets. We had about 30 families & would place large orders once a month & then the truck would drop it off at church, & we divy it all up. Maybe you have something like that, you could look into!

Buddy sounds like a real pushover! I'm not so easily fooled!! Bob sent my aunt to some tech-geek he'knows. They think they might be able to clean it up!

Hi Lori!!! How've you been? Hadn't chatted with you in a while!

Yes they do still have that program. And even though she's in a Catholic school, she did bring home the JP forms for testing early in the year.
 
Can you use tomato sauce or spaghetti sauce instead of marinara sauce? Thanks, sound yummy!
Totally...we just had opened marinara that needed using :)

This came out yummy (I cut down the recipe to 1# potatoes and 1# carrots and the other ingredients a bit):

Balsamic Roasted Baby Potatoes and Carrots

3# baby potatoes, cut in half
1# baby carrots (not too thin) or 4 medium cut in chunks
1 onion, sliced
8 garlic cloves, smashed
1/3 cup balsamic vinegar
1/4 cup melted butter
8 sprigs fresh thyme or 1tsp dried
1 tsp salt
1/2 tsp pepper

Heat oven to 425.

Line a large baking dish with foil.

Combine all ingredients and place in baking dish.

Cover with foil and roast for 50 minutes. Shaking the pan several times.

Uncover and roast for about 25 - 30 minutes stirring occasionally until veggies are golden.
That sounds sooo good! I def. need to make that soon as a side to roasted chicken!

WFD tonight : kind of a rushing around type of night for me...greg is at the station so i have to go to curves, take care of the dog and cat, do the trash and recycling and then i have plans to go and see some friends that live 30 min away..whew.. so i think i will be picking up a sandwich or somethng on my way..lol.

That's the primary reason I buy organic. I have three grocery stores near me, all of which carry organic products. Whole Foods of course has the most, but it is also the farthest away, so I usually go to a smaller market. I read somewhere recently that Walmart is going to start carrying organic products. Maybe they will make buying organic more affordable.

If you are concerned, it won't hurt to talk to the teacher. Ask if she has noticed the backwards writing, and if she thinks Alexis needs further evaluation. Hopefully, the teacher will say it is just normal development, but if there is a problem, it would be better to learn about it now rather than in six months when they do a Kindergarten evaluation.

I hope your doctor appointment went okay!

I think I am just having leftover Indian food tonight. It's another quick meal for us since Caili has skating.

Tonight is church. I forgot to plan for a crockpot meal so we're getting Taco Cabana, unless another craving strikes our fancy. They have $2.99 enchilada dinners on Wednesdays. 2 enchiladas, beans, rice, and tortillas. I can't make them at home that cheap :confused3

Lunch break before meetings, figured I would stop in for a second.

Sheryl--Before the year is over, I would speak with the teacher and see what her opinion is, this will also give them a heads up that the family is noticing something and even if they think it is falling within the normal range, they will keep a closer eye on it.

I am anxious to hear how your Dr. appt goes!
