Tonight for dinner we will be having some terribly-bad-for-us fair food! We will be heading out to the south florida fair and having lots of junk I am sure. Hubby in particular likes the Funnel Cakes and always tries to search for whatever new junk food they have. I of course participate... wouldn't want hubby to feel alone in his endeavors! :lmao: I may have some leftovers before I go tonight just so I am not starving at the fair.
 
I am going to make Lindsay's parmaesan Ritz chicken - can't remember what it's called? I haven't made it before and am excited to try it!

I'm going to serve asparagus with it. I love when it's asparagus season.
That would be Original Kitten Chicken :lmao:
 
Hey ya'll--here's the recipe from dinner last night. It was really yummy, and my husband, who swore he hated grits, loved it. Granted I didn't tell him what he was eating until he went back for a second helping ;)

From Cooking Light March '08

Shrimp and Grits Casserole

2 cups 2% milk (I used 1% b/c that's all I had)
3/4 cup chicken broth
1 cup uncooked quick cooking grits
1/4 tsp salt
1/2 cup shredded parmesan cheese
2 tbsp butter
3 oun 1/3 less fat cream cheese
3 tbsp chopped flat leaf parsley
1 tbsp chopped fresh chives
1 tbsp fresh lemon juice
2 large egg whites
1 lb peeled and deveined med. shrimp, coarsely chopped
Cooking spray
Hot pepper sauce (optional)

1. Preheat oven to 375

2. Combine milk and broth in a med. heavy saucepan; bring to a boil. Gradually add grits and salt to pan, stirring constantly with a whisk. Cook 5 min or until thick, stirring constantly. Remove from heat. Stir in parmesan, butter and cream cheese. Stir in parsely and next 4 ingredients. Spoon mixture into an 11X7 baking dish coated with cooking spray. Bake at 375 for 25 min or until set. Serve with hot pepper sauce, if desired

Sheryl- your little darlin thinks she knows when to try to work her 'magic" doesn't she? I am not sure when these little Princesses learn that when Nana is tired and not feeling well....that is not the best time to test boundaries ;), better to try that when Nana is spritely. Kady hasn't gotten her timing down yet either but Lord help us when these two get there :faint:

What was your Aunt thinking? My DS and my DSIL would faint if they encountered 365 viruses. I'm surprised that Bob was still breathing when he found that :scared1:

My sister is the pitbull at the nursing home. The Dr at the ER said that it was fortunate that she ans my BIL understood the progression of the drug actions with her. because she would not have been so lucky. She is going to press her case with the DR at the nursing home and then I need to be there in the evening to make sure that they give them to her. Gail said that they are very annoyed with her right now and she thinks that before the day is through they are going to be downright peeved. She said that it is the shoe on the other foot becasue she has the same thing happen when they try to change meds on kids. Parents insist that they know their kids and they insist that they need to change for the child. In the end parents are very protective of their kids and often have gone down that road, as we are of my aunt.

Nancy, He sure was tired of hogging that computer last night! I have never seen him so frustrated, not with my aunt, but with not being able to clean it up. But if I were him, I would have been mad at her. He's really a better person than I am.

I meant to tell you & I forgot about it with the troubles with your aunt. Kudos to Kady on her 100 spelling test!! :thumbsup2 :cool1: And to the whole Kady behind the scenes Spelling Crew too! Good Job Y'all!

I'm worried we are going to have some reading problems with Alexis & I'm thinking about talking to her school about dyslexia. She has really great motor control & they are practicing writing now. She will sometimes (more like often) look at a word and write it totally backwards. Flipping not only the order of the letters but the direction, like dog she will write qob?? I don't know when they should have control of that, if I'm worrying unnecessarily?

Nancy, You are so right about our Princesses! (after this morning I am using this term very loosely) I'm afraid Alexis really has a head start on it, she's learning from one of the best, her MOM! :mad: Chris (her Mom) is only about 4'11" and was quite a cutie herself back in the day. She worked the sweet smile, the pout & the tears to the hilt! The really funny thing is that she thought it worked back then & to this day, will still try to pull off the "pleeeze Nanny" ( I'm her godmother & SIL!), the sweet smile or the near tears when she thinks it's necessary! What amazes me is that it didn't work way back then when she was the super cutie & it's surely not going to work at 30 years old!!! :confused3 :laughing:

I hope the nursing home agrees to the medicine routine! Good luck with being a pitbull this evening! :hug:
 
I'll put the bread up tonight. I have some ground turkey in my fridge. Can you share your recipe (or point me to where it is on the index if you've already posted)


Tonight I am making a recipe that was in this month's Food and Wine magazine. It is for feta cheese in ramekins that you run under the broiler until bubbly, then top with kalamata olives, poached eggs, sage, aleppo pepper, and toasted foccacia. I am making a bitter greens salad to go with it.

First of all that feta dish sounds amazing!

For my italian turkey meatloaf aka Big Healthy Meatball loaf ;)

1.25 lb ground turkey meat ( i used Jenny O's..she has italian seasoned style as well if you dont' want to season yourself)
1 egg
1/4 cup breadcrumbs ( italian style)
1/4 cup marinara sauce
basil ( i used about 1/4 cup fresh basil torn up)
parsely ( about same amount as basil)
dry oregano 1 tsp
1-2 cloves garlic minced

Combine ingredients and then free form a loaf on a baking sheet covered in aluminum foil, top with more marinara sauce and bake for 1 hour at 375 degrees...near the end top the loaf with mozzerella cheese and grated parm and broil untill melted.

Can you use tomato sauce or spaghetti sauce instead of marinara sauce? Thanks, sound yummy!

Well, dinner last night was a sandwich at 12:30. I had "2nd shift" and all the poor thing did was sleep off the medication that the Dr had to give her. This morning my sister said she is her old self, but remembers all of the past two days. The psych Doc's have said that she should not have any of the meds the nursing home has been giving her and feel that even though her symptoms are not listed as a side effect of the Aricept she was taking it perhaps started the whole thing. We are hoping that the nursing facility will agree that her 1/2 mg (i think that is how the dose goes) of atavan is okay to give her. For some reason this facility does not want to give this but will administer antipsychotic drugs on a regular basis.:confused3

Anyway, Thank you for the prayers. They are what got her through this I believe. I'll let you know if she can go back there, I pray yes because with Pat working there and all of us close enough to come a lot she will feel safe.

And my poor computer hog worked his butt off last night trying to get that virus off my aunt's computer with no success. He worked on it until 10:30. Thank goodness, He was able to get her work files recovered & backed up on his jump drive but couldn't remove the virus. She was running her business (real estate appraisal) on this computer with NO VIRUS PROTECTION PROGRAM!!! Bob said her computer didn't have a virus it had 365 viruses!!!

Bless his heart, he must be a very patient man.:cloud9:

I'm not sure about the backwards spelling Alexis is doing, but I can tell you that I was in Caili's Kindergarten class yesterday, and at least half of the children had their numbers all backwards. Caili used to flip her ds, bs and 9s. Every once in a while, she still will, but now she knows it's not right as soon as she looks at it, and she corrects it.

Nancy -- I am glad to hear your aunt is improving and has all of you advocating for her.

Glynis -- Like Beck said, swordfish, when fresh and correctly prepared, is not at all fishy. In general, fish should not taste fishy. When it does, it isn't fresh. I always thought bluefish was fishy, but then Liam and Greg brought one home from fishing, and it was delicious.

Scottishduffy -- Have fun at the fair!

I've spent half the day trying to figure out what I am making for supper, and I am still unsure. Liam has his first baseball practice tonight -- conveniently scheduled between 4:30-6 and located on the other side of town -- so it's another grab-and-go type of night.

I am trying a new recipe tonight...Balsamic Roasted Baby Potatoes and Carrots. If its good. I will post.

Tip from my Mom- she always told me if fish seems "fishy" to soak it in milk or buttermilk a while before cooking.

This came out yummy (I cut down the recipe to 1# potatoes and 1# carrots and the other ingredients a bit):

Balsamic Roasted Baby Potatoes and Carrots

3# baby potatoes, cut in half
1# baby carrots (not too thin) or 4 medium cut in chunks
1 onion, sliced
8 garlic cloves, smashed
1/3 cup balsamic vinegar
1/4 cup melted butter
8 sprigs fresh thyme or 1tsp dried
1 tsp salt
1/2 tsp pepper

Heat oven to 425.

Line a large baking dish with foil.

Combine all ingredients and place in baking dish.

Cover with foil and roast for 50 minutes. Shaking the pan several times.

Uncover and roast for about 25 - 30 minutes stirring occasionally until veggies are golden.
 
Tonight is mexican night Taco's rice and some veggie.

Aimee That parm ritz chicken is one of our personal fav's :thumbsup2 Thank's Lindsay for that recipe.

Laura, Thanks that makes me feel better! :goodvibes I really think I'm worrying to soon on that. Her school doesn't have parent-teacher conf. (until 1st grade) unless there is a problem. If I had a convenient time to chat with the teachers, I would have asked them. But we only see the teachers in the morning & there is not time then. When Chris has called, they always call her back during the day while she's in surgery.

My lack of sleep last night has really caught up with me, I have a splitting headache. I was going to try Beck's feta-egg dish, but DH is going to pick up something!

Dinner was good, made a frittata with potatoes, onion, homemade turkey sausage, cheese and egg substitute. The sausage turned out pretty good, needed a little more sage though. I had to tweak the recipe a little bit because I had a 20 oz package and this called for 2 lbs. I just knocked a little off each spice and added red pepper flakes, about a tablespoon. Made it nice and spicy. I used only about 4 oz in the frittata and made the rest into 3 oz patties which were a nice size. I got the 93/7 ground turkey which makes the 3 oz patties 2.5 WW points.:thumbsup2

Turkey sausage

2 lbs ground turkey
3/4 t ground ginger
1 1/2 t salt
1 t dried sage
1/4 t cayenne pepper
1 1/2 t pepper

Mix well. I actually mixed by hand then went back through with a fork and mixed again just to make sure the spices were distributed good.

Have y'all noticed your chicken breasts getting bigger? Or maybe I'm just not wanting to eat as much? I bought some bl/sl at Kroger and they are HUGE! 3 were almost two pounds.

Last time I made chicken, I got sick of eating it about halfway through so I cut them all in half this time and just ate half.

I'm sure it's the hormones they inject into the poor things. I really need to find some local chicken somewhere that isn't as treated.
