Morning Y'all,

I have Alexis home again today! The school called while I was in the doc's office yesterday, she was running fever. Her Dad picked her up, gave her tylenol & she was fine the rest of the day. But she couldn't go today because of the "24 hr after fever school rule". Good thing too, she woke up & was fine. But after being up a while her temp started to climb but nothing very high. She's not really acting sick but is complaining about her stomach. But then she wanted to eat & ate cereal with no problem! Just don't know. :confused3

Nancy, Sorry Erica had to have a root canal!:hug:

Ann, There is a little sliver of proscuitto under the egg! :lmao: I knew my hubby would be looking for the meat too!

Becky, Thanks! I think I'm going to stick to frying my eggs! The poaching was much tougher for me! Your sandwich looks wonderful as usual!!!
 
What a beautiful day...I can't believe it is 72 ! My sweetie took today off to get some much needed yard work started. Coming from a big family we have alot of family obligations taking away our precious weekends this spring. He is just wrapping up the yard work and on his way to the liquor store. Beer for him and wine for me!:cool1: I think we will be having a drink on the porch while Luke is napping!

This poor little one has had a lot of feeling lousy, hasn't she? Good thing she has her Nana to snuggle her up.

What a nice way to spend a little time on a gorgeous day.
 
It is so beautiful here today! :cool1: My neighbors are all planning to hang out in the yard, so I might make some watermelon margaritas to share. :thumbsup2

Oh, and I think I can answer for Wendie. Mud season is when the snows all start melting, turning everything to mud. Baskets are what other fish places might call a platter. It's fried fish or clams or scallops or shrimp (or some of each) with fries and coleslaw. Wendie can elaborate or correct me if I am wrong. Enjoy your evening, Wendie. I should check to see if my fish place has opened yet!

I am making salmon...I may even attempt to turn the grill on. I'm not counting on that working though...potato salad, and roasted asparagus

How do y'all pound your chicken down? I have tried a few ways and become just really frustrated - plus that chicken is slippery!
 
Oh, and I think I can answer for Wendie. Mud season is when the snows all start melting, turning everything to mud. Baskets are what other fish places might call a platter. It's fried fish or clams or scallops or shrimp (or some of each) with fries and coleslaw. Wendie can elaborate or correct me if I am wrong. Enjoy your evening, Wendie. How do y'all pound your chicken down? I have tried a few ways and become just really frustrated - plus that chicken is slippery!

That's what we had last night. I've been slicing mine in half (horizontally) to make them thinner. If you can't do that I put them between sheets of plastic wrap and pound with a tenderizing mallet or anything heavy.

Like Kathy, I put mine between sheets of plastic wrap and then pound. It helps if you sprinkle them with a little water before pouding--it keeps the flesh from tearing. Also, don't pound too hard, because that tears them too. Start from the center of the breast and work out towards the edges to get an even thickness.

Your dinner sounds tasty.

I still have not decided on my dinner yet. I'm feeling a little uninspired today.
 
Maine is known for having 5 seasons, not 4 and our 5th one is MUD, we honestly do not call it Spring until late May!! It is caused by the ice jams in the rivers up north letting go and our snowpack melting. I can't even begin to explain to you how much of a mess everything is and looks. If we stepped on our lawn we would sink to our ankles, the local school baseball teams are having practice in empty parking lots hoping the fields dry out enough for a game. The set up huge fans to dry it out. Everyone's dooryard is full of mud even with paved drives as it just gets dragged in on the tires. Shoes are left out on porches etc.......fun fun fun!

Baskets are fries, rolls, coleslaw and either boneless chicken, haddock, shrimp, clams, scallops, or mixed sea. Always a basket never a platter. The rolls are never homemade, always a brown and serve with a pat of butter in it. but the slaw is always homemade, and will always taste different no matter where you buy the basket at.

Kathy--How is Sammie doing? Ross is wanting to know,:)

Aimee--I put my chicken between waxed paper and use a mallet to thin them.

Ross is not going to karate tonight as he feels awful, (and he looks it too), he has this terrible cold that half of the kids at the dojo have had. He wants to rest tonight so he can go to school tomorrow and the tournament on Sat.
He will read and rest while Kris and I go to the conference, and we have to go to the local craft store for fabric (hopefully they have muslin) to wrap him as a mummy for his country project presentation with his gifted and talented reading class on Monday night. What an odd evening we have planned.

Sammie is doing GREAT! A friend of mine who hadn't seen her in over a week came over today and was astonished at how well the old gal is doing. Tell Ross I really appreciate his thinking of her.:hug: I hope he feels better soon!

I put mine in a plastic bag and bang on it with either a heavy mug or a crab mallet. Just make sure to squeeze the air out of the bag first.

I am making something with chicken tonight, either Lemon, Piccata or oven fried Parmesan. I am hoping to be inspired when I get home. Will have that with leftover peas and pearl onions, another veggie and some eggs noodles with mushrooms. Going to experiment and try to make a low fat mushroom sauce for the noodles.
 
I'm making pork chops marsala tonight. Its a new recipe I am going to try it looks and smells delicious!!!

I am getting ready to go to work at this time but have a roast in the slow cooker. The fair got rained out on Tuesday! :guilty: So we did not get to go. Wouldn't you know on the nice nights I am stuck working.

Tonight in the slow cooker is assorted veg (potatoes, carrots, red onion, green & red pepper). A roast. Topped with a mix of: 1 cup beef broth; 1 can cream of mushroom soup, 1 dry onion soup mix pack, couple tablespoons flour; garlic powder.

So far smells good! Of course I'll eat tomorrow morning but hubby should enjoy it tonight while I'm at work.

I do not envy you with the mud! It is hard enough to keep floors clean without having that 5th season :eek:

Erica is really not feeling well today. Marisa told her to call the Dr, her sinuses are really painful and swollen. She won;t be here for dinner :sad2:, but there will be plenty if she is around tomorrow.

I hope that Ross kicks the cold. My sister told me there is a new round of colds and viruses and they have been swamped at work.

That citrus chicken smells so good! Marisa keeps wandering in front of the oven :rotfl2:. I made a big salad and will steam broccoli. I wanted to lighten it up a bit so the girls could have it so I substituted canola oil for the butter, and only used 1/2. I used boneless skinless thighs and marinated them in the orange juice mixture for a while before topping with the stuffing.

Plans changed again. I am feeling a little blah. We just ordered pizza...not sure if I will eat much. Knowing me I will.

Ok enough playing I must get to my paper work and do a little laundry to.:eek:
 
Ended up making a sort of chicken piccata. I put salt, pepper and parsley flakes on the chicken breast then cooked it in a little olive oil until nicely browned. I took it out and de-glazed the pan with white wine and lemon juice then added some capers. Put the chicken back in the pan, put the lid on and simmered until the chicken was cooked through. Served it on egg noodles with peas and asparagus.
