I invited my in-laws for dinner tonight. I am having swiss chicken, garlic smashed potatoes, and a HUGE salad. My MIL is not that great of a cook, so I can't wait to see the look on my FIL's face when he starts eating!! :lmao:

Morning all--

Just a super fast check in-----Sorry I was MIA over the weekend...between my mothers birthday, and the horrible stomach bug that had us praising the inventor of indoor plumbing,
the computer and cooking were not #1 on my list, lol!

Lauren--I am so sorry to hear what Tom witnessed. That is never an easy thing, being the first on site.

Glynis--Oh I am heartbroken for all of you. I hope you find peace in how your precious furbaby passed. She made sure you didn't have to make that tough decision.
ON the MIL issue...well it is a bit odd now isn't it....time will tell how this one goes.......To heck with us we will be here, right now enjoy the time with your mother visting.

Ann--I am happy to hear that things went wonderful for your parents party, but we never had any doubts. Looking forward to some pics!!

Nancy--I am so happy to hear your Aunt is doing a bit better with the help of the ativan.....anxiety can make it hard to focus and understand what is happening and makes life very scary. Hopefully answers are soon coming for all of you on what is the next step of her care. My prayers are said every day for her, and all of you caring for her.

Laura and Becky--Hats off as always on the food porn!! I can appreciate it this morning a lot better then I would have over the weekend, ;)

I know I missed a ton as we are a chatty crew around here, if you miss half a day you are lost, so 2 full ones and I am waving the white flag....

I have not a clue as to what is for supper....we are all just getting our stomachs back, and Kris has to work late on a remodel job after he gets out of the office tonight. I will prob make shells and cheese for Ross with a veggie, and Kris will eat that when he comes in as well....as for me well I had the bug worse then them both, so I think I will be having a bowl of bland rice and calling it good. Maybe later on I will be up for more, but as for right now, that is about it!
Heck this is one hard way to get out of Ross usual steak tips, carrots and cous cous Monday, lol!!

Have a good morning all...I am going to try to get a bit more sleep then run some much overdue errands, and hope that school doesn't need me to work, or get Ross!!

We never ad the London Broil so that is what we are having. We started working on tiling the shower. The first step is to add a waterproof membrane and we has our first renovating argument so we didn't finish...:mad: I have read on the renovating thread that Sheryl frequents that these things do happen (couples arguing when remodeling)...I just want everything to be done already!!! The Rock Doctor is here today sanding so we will be ready to paint soon. Thank God!

Wendie -- I am sorry all of you were sick this weekend. I hope you feel back to normal soon.

Lauren -- I am impressed that with all of the work you and Tom have been doing that you only ran into your first argument now. Like Kathy said, renovations are stressful and it sounds like Tom had a tough weekend (I can't imagine being a witness like that :sad2: ). I am sure things will improve.

Nancy -- Congratulations to Kady on her spelling!

Nope! This is a different recipe.

Marinara Sauce

4 tbsp. olive oil
2 onions, chopped
4 cloves garlic, chopped
2 bay leaves
1 heaping tsp. oregano
1/2 heaping tsp. thyme
1 tbsp. sugar
1.5 tsp. salt
1 tsp. black pepper
2 28 ounce cans tomatoes, with their juices
1.5 cups water

heat the oil and saute the garlic and onion until tender. Add all the other ingredients, bring to a boil, lower the heat, and simmer, partially covered, about one hour. Remove the bay leaves and blend the sauce until smooth.

Mom is at dialysis this morning, so I have time to check in here. Thank you all for your kind words. We are all feeling good about Cozy's passing this morning. Just glad that she didn't have to linger in pain.

Dinner tonight will be cheeseburger and fries casserole, green salad and leftover warm winter lemon cake for dessert! Yummo!!!

I'm picking mom up in about an hour and then we are off to the mall to pick her up some more Crocs. She loves them, and with her diabetic feet, it's hard to find comfortable shoes. She already has 5 pair, but one is starting to wear out, so we're off to replace that.

Tomorrow we are visiting my grandmother's (mom's mom) grave. It's about an hour and a half north of here. Gram died last November, so this will be the first time mom will be seeing it since the funeral. Since she won't be up here for Memorial Day, we'll take some time to make sure the stone is clean and we'll leave some flowers. Mostly, it will just be a day for the two of us to be together. My mom is truly my best friend, and I treasure every minute with her.

·6 skinless, boneless chicken breast halves
·6 slices Swiss cheese
·1 (10.75 ounce) can condensed cream of chicken soup
·1/4 cup milk
·1 (8 ounce) package herb dry bread stuffing mix
·1/2 cup melted butter

DIRECTIONS
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2.Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.
3.Bake 50 minutes, or until chicken is no longer pink and juices run clear.

I make this and it is always a hit...I add a splash of sherry to my soup!

Morning Y'all,

I tried to multi-quote but I just missed too much over the weekend. Sorry I keep going AWOL on you guys over the weekends. I spend more time taking care of Bob & just spending time with him. So there is bad & good there, but he also tends to hog the computer when he's home too. :sad2: And trying to follow the dr's advice & use the muscle relaxers instead of Lunesta is making me feel like crapola. I'll go see the dr again on Wed. I don't think I cooked a thing this weekend. We had leftovers, Outback takeout & po-boys.

Glynis, I am so sorry for loss. :hug: It's so hard when you've had them for such a long time! It was 2 years last week since we lost our Smokey & I'm still not over it. I know that might sound loony to some but it's true.

Glynis , I was going to comment to Ann about reminding me to appreciate the good times with my Mom while I can! And then you did it too! I will get off of here & call her! Enjoy your day with her tomorrow!

But at least it smells good!;) Oh the only thing I cooked all weeked was fried eggs outside on the grill burner. Oh Becky's food & drink! As usual... :worship: :worship: !!! Now that watermelon season is here, I'll have to try your watermelon margarita recipe. I made some last summer & Bob was less than thrilled with it. But I don't think I had the good stuff (reposado tequila & cointreau) in there & he usually notices that!

I don't know what's for dinner tonight. If I don't clean out all the yuck leftovers out of the fridge first, I have no room for any more food!

I was going to just to fix good ole red beans & rice. But I don't have any red beans! Y'all don't know, that is practically a SIN down here to not have dried red beans in the pantry! Especially since I have an overfilled pantry right now. :confused3
 
Lauren- don't worry about the renovation "discussions", we had many. WE had done the bathroom over and my DH did it himself. After that we knew that he was not cut out for that kind of work, he monitored the walls as the drywall stuff cured, he literally watched the paint dry, double checked each and everything he did and lost it when Dan put a hole in the wrong spot on the brand new walls. For his sake and mine we decided never to do it again. The next time we would pay someone. We discovered we are not good at that either :confused3 If one more person said it was so much fun to renovate I swear I would have been arrested! We need to do work in the basement and both of us are putting it off.....I'm not sure either of us has enough life insurance :rolleyes1

Glynis- Have a wonderful day with your Mom. I used to spend the day with my Mom when we checked the cemetery which was 2 hours away, and ran those rare errands that take you away from home. Those days are treasured memories for me.

Well there will be no cooking for me tonight. My Aunt had a terrible day yesterday. My cousin and my sister tried to get the Dr to change her meds but that did not work. Today I joined them at the nursing home, she needed to be transported to the hospital :sad1:. Gail is going home to get some sleep, her DH is working today so he is going to try to help her from there, my cousin and her husband are there now. I will wait and go up after Kady gets home so that they can go home.

I honestly don't understand what is happening to her. The drug they are giving her treats schizophrenia and they were opposed to the atavan at their facility. By now it was too late to give it by mouth, she won't take anything because she is positive it was poison, thought that we all were actors pretending to be us. They do not administer this via IV because it is against her will. My heart is breaking for her. She was so scared and she was furious at the same time. I hope that she recognizes Gail's DH, she totally is a pushover for the men.

:lmao::lmao: I can just picture her! I have to admit that I am just a little afraid that will be me soon! I have a little procedure on Friday to get through and I am not looking forward to it, I cannot even take aspirin without getting tired, so anesthesia is going to be hard on Marisa, who will be with me.

Hope everything goes okay with your procedure. I am pretty okay with drugs like that, although the first time I took Ativan I was getting a root canal done. I was feeling pretty good, no nervousness and the Dentist comes in and I started to cry! :sad1: Not sure why because I was perfectly fine and never had a problem the whole time he was doing it.

They are fine, no where near the tornadoes at all! Seems someone was being a bit of an alarmist.

the margarita is really easy. to get the juice, just chunk up a watermelon, and smash it with a stick blender until it is all juice.

watermelon margarita

Per drink:
2 ounces gold tequila (I used patron)
4 ounces watermelon juice
3/4 ounce couintreau
juice of 1/2 lime--nuke the lime for 30 secs in the micorwave before juicing--you'll get lots more juice that way.

shake all in a cocktail shaker with ice until very cold.

I make frozen Watermelon Margarita's. I just freeze the chunks way ahead of time and use that in place of the ice like in normal frozen Margarita's. Add the liquor and blend. :cloud9:
