What's for Dinner Tonight? (recipe index in OP)

I have to have a turkey burger! :eek: I took one out of the freezer for dinner on Friday and forgot about it, so I need to eat that tonight. I made a really good veggie dish last night.

Tomato Veggie Bake

2 Chayote squash, peeled and cubed
2 med. sized zucchini, peeled and cubed
8 oz. Cremini mushrooms, cut in half
garlic (I used some roasted I already had in the fridge, use how much you like)
2 cans diced tomatoes
Salt
Pepper
Italian seasoning

Mix together in a large baking dish, bake at 375 for about 45 minutes until the zucchini is soft. The Chayote will remain firm.
 
Hello again.

I am about to run off to the store to hit up the weekly sales and what not. Looks like I will getting watermelon as the 'fruit of the week'. Not too much going on here! Tongith is a new recipe and tommorow hubby and I will be going to the fair so will probably eat lots of stuff that we shouldn't....

Brown Sugar Glazed Salmon ( From Tasteofhome.com)

INGREDIENTS
1 salmon fillet (1 pound)

1/4 teaspoon salt

1/4 teaspoon pepper

3 tablespoons brown sugar

1 tablespoon reduced-sodium soy sauce

4 teaspoons Dijon mustard

1 teaspoon rice vinegar


DIRECTIONS
Cut salmon widthwise into four pieces. Place in a foil-lined 15-in. x 10-in. x 1-in. baking pan; sprinkle with salt and pepper. Bake, uncovered, at 425° for 10 minutes.
Meanwhile, in a small saucepan, combine the brown sugar, soy sauce, mustard and vinegar. Bring to a boil. Brush evenly over salmon. Broil 6 in. from the heat for 1-2 minutes or until fish flakes easily with a fork. Yield: 4 servings.

I honestly don't understand what is happening to her. The drug they are giving her treats schizophrenia and they were opposed to the atavan at their facility. By now it was too late to give it by mouth, she won't take anything because she is positive it was poison, thought that we all were actors pretending to be us. They do not administer this via IV because it is against her will. My heart is breaking for her. She was so scared and she was furious at the same time. I hope that she recognizes Gail's DH, she totally is a pushover for the men.

Morning Y'all,

I tried to multi-quote but I just missed too much over the weekend. Sorry I keep going AWOL on you guys over the weekends. I spend more time taking care of Bob & just spending time with him. So there is bad & good there, but he also tends to hog the computer when he's home too. :sad2: And trying to follow the dr's advice & use the muscle relaxers instead of Lunesta is making me feel like crapola. I'll go see the dr again on Wed. I don't think I cooked a thing this weekend. We had leftovers, Outback takeout & po-boys.

Honey- you have enough to do without worrying about us. I don't know how you manage while you are trying to get your medication right. All I would do is sleep so I figure if you get anything done it is enough. Now about the computer hog...................

Hope everything goes okay with your procedure. I am pretty okay with drugs like that, although the first time I took Ativan I was getting a root canal done. I was feeling pretty good, no nervousness and the Dentist comes in and I started to cry! :sad1: Not sure why because I was perfectly fine and never had a problem the whole time he was doing it.

It really is nothing. I have to have a D&C, which is supposed to be a piece of cake, but I have not had to have anything done since I had the kids so i am not looking forward to it.

I was terrified of the dentist for years so Buddy finally made an appointment. I was a mess, it was February and you all know what that weather is like, I was so hot they had to open all of the windows and was crying so much that the dentist thought Ativan was the answer. It was, but I was totally out of it. Marisa brought me for a cleaning, and I had so much Novocaine that I was a drooling mess. She turned me over to Buddy for the next appointment and I was a drooling mess who could not walk and had to be carried into the office! I have no idea what I will get Friday and Marisa is prepared for the worst. She rarely drinks but I think she is planning to make an exception when she gets me home ;)

Nancy - All I can do is offer prayers and you know you can call me anytime. This is so very difficult to comprehend much less understand. I am here.:hug:

I know you understand this way more than I, my friend. The EMT's were so good with her but watching them bundle her up to take her was awful. My cousin has never been exposed to anything like this and so she was a mess.
 
They are fine, no where near the tornadoes at all! Seems someone was being a bit of an alarmist.

I make frozen Watermelon Margarita's. I just freeze the chunks way ahead of time and use that in place of the ice like in normal frozen Margarita's. Add the liquor and blend. :cloud9:

The W. margarita's I made last year were frozen. I think one of the mistakes I made was trying to get them more frozen by adding ice & not using the best liqour. Now I guess I'll just have to try them Becky's way & your's for WFDT taste testing purposes, of course!! ;)

Did the chicken inside, Johnny was cleaning/pressure washing the patio.

Well there will be no cooking for me tonight. My Aunt had a terrible day yesterday. My cousin and my sister tried to get the Dr to change her meds but that did not work. Today I joined them at the nursing home, she needed to be transported to the hospital :sad1:. Gail is going home to get some sleep, her DH is working today so he is going to try to help her from there, my cousin and her husband are there now. I will wait and go up after Kady gets home so that they can go home.

What does a Chayote squash look like, and are they seasonal? I've never heard of that kind. This dish looks tasty!


I got in late to work today - I am not feeling well, just overly tired, and I can't pinpoint the cause. I'm wondering if it's iron related? I slept for 12 hours last night and the dogs had to DRAG my butt out of bed at 11:30 today. I could have slept a lot longer. On Friday all I did was sleep... I have a GI appt in a couple weeks and I'll request to run labs before that visit.

We are having tacos for dinner; I think I'll just do chips and salsa and refried beans on the side.

Here you go, found a picture for you. Not sure if it has a season or not. I was just in the grocery store and saw some. I used to buy it all the time at this little produce place and this was the first time I've seen it at the regular store.

Nancy, I'm sorry I missed it in your post, that you are having to have a D&C! :hug: I'm sure it will go well, & we know Marissa is going to take good care of you!!! Tell her to come post & let us know how you're doing! If you can't handle aspirin, you may be out of it for days! ;)


Aimee, In La. we call chayote, mirlitons. It's shaped like an avocado, but is pale green. It's in the squash family & has a very mild squash like flavor.

A quick check in--

Nancy--I meant to add earlier my bursting pride at Kady and her spelling score!! Give her a huge hug, and a high five from me please!! When the student wants to be able to test well, and is proud when they do, that shows that as age and growth happen that things will be able to even out. She also has the wonderful support of family behind her which is HUGE!!! I think it is wonderful that she goes to the learning center, I worked at one for my first year of internship and was amazed at the programs offered, and the results!!

On to your Aunt...I am so very sorry, for all of you. Bless her heart, I can't even think what it must be like in her mind right now. My prayers are with you all. Please if there is anything I can do to lend a hand, I am really not that far away. Call if you need anything.

Now as for you my friend--my prayers are with you that you have an easy time with your D&C...take it easy, have a heating pad ready for when you get home, and please have Marisa let us know how you are doing.

Aimee--I hope you get some answers from your DR...keep us posted and if you are tired then sleep, your body is telling you something.

Sheryl--Don't be apologizing for your busy weekends, between Bob (the ahem puter hog, ;)) and your own health issues you are trying to regulate, you are doing just fine my friend getting on here once in awhile through the week. Keep us posted on how you make out with the DR too!!

Lauren--I have learned that with any remodel job, no matter if you are doing it, or having someone else do it there will be arguments. Your house is in chaos, your wanting it done yesterday, things don't go like they do on the shows on TV (damn you Bob Villa).....take a deep breath and have a glass of wine and step away for a moment...when all is said and done it will be beautiful, and you will be glad you took it on.
Kris has always said he plays referee at times on his jobs, and he always remembers to side with the spouse that holds the check book, ;)
 
I am really getting concerned about Gretchen, I PM'd her last week and still haven't heard from her. Hoping she's just very busy.:confused:
 
Mom is at dialysis this morning, so I have time to check in here. Thank you all for your kind words. We are all feeling good about Cozy's passing this morning. Just glad that she didn't have to linger in pain.

Dinner tonight will be cheeseburger and fries casserole, green salad and leftover warm winter lemon cake for dessert! Yummo!!!

I'm picking mom up in about an hour and then we are off to the mall to pick her up some more Crocs. She loves them, and with her diabetic feet, it's hard to find comfortable shoes. She already has 5 pair, but one is starting to wear out, so we're off to replace that.

Tomorrow we are visiting my grandmother's (mom's mom) grave. It's about an hour and a half north of here. Gram died last November, so this will be the first time mom will be seeing it since the funeral. Since she won't be up here for Memorial Day, we'll take some time to make sure the stone is clean and we'll leave some flowers. Mostly, it will just be a day for the two of us to be together. My mom is truly my best friend, and I treasure every minute with her.

I'm so sorry about Cozy. :hug: I hope you and your Mom have a good time together.

Lauren- don't worry about the renovation "discussions", we had many. WE had done the bathroom over and my DH did it himself. After that we knew that he was not cut out for that kind of work, he monitored the walls as the drywall stuff cured, he literally watched the paint dry, double checked each and everything he did and lost it when Dan put a hole in the wrong spot on the brand new walls. For his sake and mine we decided never to do it again. The next time we would pay someone. We discovered we are not good at that either :confused3 If one more person said it was so much fun to renovate I swear I would have been arrested! We need to do work in the basement and both of us are putting it off.....I'm not sure either of us has enough life insurance :rolleyes1

Glynis- Have a wonderful day with your Mom. I used to spend the day with my Mom when we checked the cemetery which was 2 hours away, and ran those rare errands that take you away from home. Those days are treasured memories for me.

I'm so sorry about your Aunt. One of the worst nights of my life was right after my Mom had spine surgery. I had sent my husband and two kids to Sea World for our annual visit, and had told my Dad I would stay on the hotel floor of the hospital for a couple of nights in case there was an emergency with Mom since I would be home by myself anyway. Well, the second night I got a call around 1 a.m. The ICU nurse was calling me down because they were concerned with the erratic way Mom was acting and they couldn't calm her down. She was convinced that someone was going to kill us both, was in turn angry at me, then concerned for my safety. I was so tired from being at the hospital so long, hadn't been sleeping etc. that I don't think I did any good. I begged, pleaded, did everything I could do convince her that I wouldn't let anyone hurt her, but nothing worked. I left ICU weeping that night, and stayed up in bed all night scared to go to sleep.

I have so much respect for you and your family, as I couldn't even handle a short episode. I'm sending PD that the doctors can find something to help, and that she has better days.

I went in to Williams Sonoma on Saturday because I wanted a programmable coffee maker and I was already in the mall, and I walked out of there with one, plus a new zester with a new margarita mix.

I also managed to make my SIL's cake recipe in to cupcakes for my brother's 40th birthday party at the baseball tournament, and they actually liked them.

Thanks for being such great motivators!
