I have some news. First, if you all could spare a prayer for my Aunt. She has been progressing badly and I did not think it was dementia. I was worried about an infection and I was concerned that she was alone for the better part of the day. Several calls with my cousin did not go well and finally my sister stepped in and again it went badly. We finally requested that she have blood work and urinalysis because there is something definitely wrong. She was totally opposed to having someone stay with her. Gail went this morning and is taking her to the hospital, she is delirious and my cousin did not recognize it....she and her husband went out for coffee :sad2:. I am not going to the hospital because I rub my cousin wrong and I want to rip her throat out so Gail will keep me updated. Yesterday she told my sister that I "put these words into her mouth" and that I needed to expect this. I told her that I cared for a woman with Alzheimer's for three years and she never spoke like this. That she was sick.

I also have a bit of good news. My niece, Gail's DD Kim has been accepted for the CP in Disney and accepted the position in DL. She gave a thousand reasons why DL was better for her than DW, (she had been accepted there first) but never mentioned her BF, a Marine stationed at Camp Pendleton :rotfl:We are happy that she is going to have this opportunity and have teased her that we now need to visit a different Castle ;)

Nancy I hope they find the reason soon for your Aunt sake. I knew of someone who they thought had Alzheimer but they did blood test for something else and found it to be a really bad yeast infection.

I had linguine and clams, arugula salad, and crusty bread for linner with my family. The kids are lobbying for a cheese plate for their dinner since my parents gave me a bag of cheese (and two packages of underwear :confused3 ) as an early birthday present. Now that the kids know about the cheese (thanks, Beck :rolleyes: ) it probably won't last until my birthday.

We woke up early today and went to Ikea before someone had full use of his facuilties and objected. ;) I was looking for ideas of organizing his room and looking for kitchen storage.

We had lunch at Weber grill and will have leftovers tonight :woohoo:

I have been so busy this weekend doing errands. My parents 50th is next weekend. It came so fast. I have not been DISing to much.

Last night I made DH baked scallops, I have baked cod, orange marmalade carrots, and boxed scallop potatoes.

Tonight, we had cous-cous, peas, and grilled marinated pork chops (i used italian dressing).

Kathy -- I hope the roast came out right. Feel free to repost the recipe...it will help me too, since I forgot to print it out from the old thread. :laughing:

Actually I got a late start and I just got it in the oven about 30 minutes ago. I am curious as to if I was missing part of the recipe. I'd never heard of coating a roast with flour and just placing it in the baking dish, what does that do? Or did I miss a step of browning it first?:confused:
 
Oh Nancy I am so sorry for the situation that you and your family are dealing with. I have to say I agree with Buddy. I am glad Gail called out your cousin. I hope that things are are figured out health wise for her very soon. Please keep us posted, and you are all in my prayers and heart.

The glaze I made for the pork chops tonight was really good, so I figured I would post it. I for one am always looking for new pork chop recipes. This is soooo EASY, and the sauce was really yummy with the rice I served with it.

Mustard-Glazed Pork Chops

1/2 cup of packed brown sugar
1/3 cup of Dijon mustard
5 Tbs of cider vinegar
2 Tbs of molasses
1 Tbs of ground mustard

In a small saucepan, whisk all until blended. Bring to a boil stirring often, Reduce heat, cover and simmer for 3 min or until thickened.
Pour over pork chops in a baking dish sprayed with Pam. Turn to coat, and bake uncovered for 20-22 min basting occasionally.

Kathy, That Cajun pork was a huge hit here! Thanks for another great recipe! I marinated it for several hours with the rub and some evoo...I then started it in a 450 oven for 10 minutes then finished it on 250...25 minutes per #....YUM!

I served it with the rest of Glynis' potato salad, Laura's "baked" apples and french green beans.
 
4 cheese ravioli for Baby, Daddy and I. Banquet chicken for oldest son and his buddy (essssh! Too salty for moi!).

Last night we ended up at our fav. wing joint for dinner. Then my wonderful husband ran across my fav beer in Epcot (Spaten Optimator in Germany) at our local liquor store!:yay: Tonight was Pizza hut--as I was called into work yesterday and today.

No, Kathy, you didn't miss a step. I think the flour coating replaces the browning. It makes it so the outside gets a good crust on it. How did your roast turn out?

The medium rare roast came out GREAT!!!!! Beck & Laura please tell your Mom thanks! Here it is:

Mom's old-fashioned roast (for medium-rare):

For all roasts, coat with flour and season well with salt & pepper. Mom also either adds garlic powder or makes small slits in the roast and inserts garlic slices. She puts fresh rosemary on top. She roasts in a regular baking dish.

Weekday roast: Cook a rump roast for 26 minutes/pound at 325. Rest, loosely covered with foil for 20 minutes.

Weekend roast: Cook sirloin roast for 21 minutes/pound at 325. Rest, loosely covered with foil for 20 minutes.

Special Occasion Roast: Cook tenderloin roast 21 minutes/pound at 325. Rest, loosely covered with foil for 20 minutes.
 
I have a quick update. My aunt was admitted into the hospital tonight. Gail was there all day and so far the Dr's cannot find anything out of sync. The results from the CT scan were not in and the DR thought that they will only see "chronic" changes but are guessing that a series of mini strokes have taken place. Gail said the entire day was heartbreaking. My cousin swears she never saw any sign of this before :confused3, although in all fairness it was worse today than yesterday. I'll go tomorrow with Gail to see her, she was so upset and we do not want her to think we abandoned her. I am amazes that Gail was able to watch her tongue today, she told me she was glad that I stayed home becasue she knew that I was so angry and have a hard time with this.

We had Barilla plus with trader joe's tomato sauce. Not too exciting, but it was good.
 
Tonight I'm making baked salmon, rice, and green peas. Yummy and easy. I'm not feeling like myself this morning so I don't need anything complicated.

ETA: Hey WFD vets, did anyone happen to save the Christmas card address list? I stupidly deleted mine and wish I still had it. Did any of you happen to save it??

Nancy, Prayers for your Aunt and continued patience for you and Gail. I find it very difficult to bite my tongue at times too. :hug:

I took out some chicken breast that I had frozen with marinade so that is what we are having. It is supposed to rain so I think I will bake them. I am also going to make Beck's spicy cole slaw and something else...just not sure what. A doesn't like cole slaw...

We are having a quick supper of eggs, bacon and toast tonight, as we have to go get groceries this evening. I usually go during the morning on my days free, but my wrist is bothering me and a bit swollen, so it is hard to push the cart and load/unload the bags.
I will go get ink at staples and a b-day card and gift for my neice before I visit my grandmother this morning.

I will be back later to see how everyone's day is going!!

Wendie, Take it easy. I hope your wrist feels better. Does the weather affect it? I know the my arthritis flairs up when it rains, etc...like today! ;)
