Nancy, did you lube the injector with vegetable oil before using it? It helps the marinade flow out easier. I love injecting my birds. I'm sure yours will be great too!

Well, change of dinner plans AGAIN! This time due to commuting troubles. There was a train crash on the line we took in this morning--a commuter train hit a boxcar late this afternoon, so the entire line is closed down. I walked home from another commuter line's stop and went over to borrow my Mom's car keys. John's coming in on yet another line and I have to go pick him up and then drive up to the station where we parked this morning to retrieve our car. No word yet on how many people were hurt...people in the station were saying over 100, but I am waiting to see an official report. Hopefully the rumors in the station are not true.

Anyway, I don't have time to do the shrimp/soup with all this, so I am just making a pizza.

Wow! After all that, I think that I'd be stopping for takeout!
 
Good luck with the homeschooling! I admire you so much for doing it! I have thought about it, but then, after looking at my temperament, I realize it's a good thing that I'm separated from my children for 8 hours each day!

Your cruise sounds so fun!!! I really want to try a cruise someday, but I get terribly seasick! Do you think that a cruise would be doable for me?

I got seasick the last day..The sea was really rough and I was unprepared..People had seabands around their wrist that they put on the day before the cruise and they were fine..Others went to the store on board and got seasickness meds.Including me. I was fine after that

I remember how it was for you. She talks but the past few days she has said some things that make me think she is working things out. She has not been the same since my Mom passed on, they talked to each other 6 or 7 times a day and she told me yesterday that she is erasing people from her memory. Not everyone because she needs to make sure that there is someone left to tell her story :sad1:. She also told me she is ready and doesn't know why it is taking so long. I told her that I thought that it might be because we were not ready yet and she laughed. I know that her brain is misfiring a lot but she gets her point across.

:hug: For you for being there for your Aunt. I remember how it was for my grandfather, he had no idea who I was. He thought I was the nurse with a lot of nerve for callng him grandpa :sad2: he only had a memory of me when I was little :confused3.

They told me that her complaints meant nothing to them and they told her that repeatedly. I am having a hard time understanding how someone could be so cold hearted.:sad1:

Hi Guys! I wanted to stop in and say hi. We have been working downstairs this evening preparing for the sheet rock guys to come...they call themselves the rock doctors.

I am so tired I can't think straight but wanted to send good wishes to everyone...especially the ones not feeling well, having a rough day, the new posters, etc.

How long can a rotisserie chicken stay in the fridge? I bought it on Sat for a recipe but I won't be able to make the recipe until Thurs.

It hasn't been touched since I bought it. Think it'll survive until then?
 
Long Time Luker coming out of hiding here. Mind if I join with some of my recipes?? Here is what we had tonight.

French Dip Au Jus SC


Ingredients:

4 pounds rump roast
1 (10.5 ounce) can beef broth
1 (10.5 ounce) can condensed French onion soup
1 (12 fluid ounce) can or bottle beer
6 French rolls
2 tablespoons butter

Method:
1. Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
4. Shred the meat, and place on the rolls. Serve the sauce for dipping.


Tweak: 1) Add 1 packet Au Jus seasoning, garlic powder, salt and pepper.
2) Serve with sautéed onions and melted provolone


The original recipe is above. The tweaks are just little notes I write to myself regarding changes I made or preferred ways to serve. We had this with a bag of steamed veggies (corn, green beans, and carrots).

Grapefruit Rum Coolers Recipe #101022
Refreshingly different, not too sweet.

5 min | 5 min prep | SERVES 2 4 mint sprigs
1 tablespoon superfine sugar, to taste
2/3 cup fresh grapefruit juice
1 1/2 tablespoons fresh lemon juice or lime juice, to taste
3 ounces light rum, to taste
chilled club soda or seltzer water
Angostura bitters, to taste

In a cocktail shaker with the back of a spoon, crush mint sprigs with sugar and juices until sugar is dissolved; add rum and about 1 cup ice cubes and shake 30 seconds; strain mixture into 2 tall glasses filled with ice cubes and top each drink with club soda and a splash of bitters.

Well girlfriend, How well you know me! Of course, we'll use it in cocktails! ;) Bob had a Bay breeze type drink, cranberry, grapefruit & vodka. I had something called a Sangrita, a mexican drink with a mix from mexico, it has this spicy mix plus lime, grapefruit & tequila. After I make a run to the store for more vodka, I'll have to try your's tomorrow, I have about 14 grapefruits left in the fridge!. I tried the juice in a salad dressing with much less success.

It did come out really good! I am going to use it again, the chicken was tender and juicy. We had curried sweets, mashed potatoes green beans and a tomato, cucumber and onion salad. I also had complaints from you know who becasue there was no gravy. He was careful to tell me how good the chicken was though....:lmao:

Tonight it's leftover meatloaf, smashed potatoes, and roasted broccoli. I tried a new meatloaf yesterday and it rocked!!!!!!!!!!!!! I stole it and semi-adapted it from the Barefoot Contessa. Recipe below.

I'm glad you enjoyed the cake! We love it!!! My kids don't like the rum flavoring, so I usually just leave that out, and increase the lime zest. Very yummy and spring-like!

Did you read where my rum extract disappeared and I used Grand Marnier instead? Mmmmmmmm!!

Barefoot Contessa Meatloaf- Lindsay style

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions) I just used one big yellow onion
1 teaspoon chopped fresh thyme leaves I'm out of thyme, lol, so I omitted it
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce 3 seemed like a lot, so I just used 2
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean) I used 1 pound each of ground beef and ground pork
1/2 cup plain dry bread crumbs (recommended: Progresso) All I have is Italian, it worked fine
2 extra-large eggs, beaten Just large, not extra-large
1/2 cup ketchup (recommended: Heinz) I didn't bother to measure, see below

Preheat the oven to 350 degrees F.

Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense. This is SO true!! It made such a difference in the loaf! Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. I did not do this- I just made a regular loaf and squirted ketchup along the top. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. I made a loaf in a 9x13 casserole dish and baked for 45 minutes. Serve hot. (<---duh!)

***I also added a diced red pepper and a garlic clove when I sauteed my onions.***

This is a crazy karate week for us as it is the start of tournament season, with the largest one put on by our school on Saturday, so meals this week are quick, easy old stand by's.......................

I think it is 2 days after something is cooked to use it up, but maybe that is just what my mind thinks the rules are. I am sure someone will know the real answer.

It is hard, although so far we are blessed that her symptoms have not progressed that far. Her short term memory is almost gone and she works so hard to keep track of all of those things that she wants to remember.

Kathy- I am so angry for you!!!!!! I don't care if the woman felt this way or not, and I'll keep my personal opinions of her compassion to myself, to go behind your back to whine is reprehensible! I believe that what goes around comes around so it would be in her best interest to take out a doozy of a long term care plan. She is going to need it.

Dinner tonight will be leftovers.

I need to go do last minute cleaning for the sheetrock guys. They are going to be here around noon. :eek:
