Glynis, I can't believe family would do that! That's it, mashed potatoes?! :confused3 I agree, stay home & celebrate holidays with your own family!

We had steak au poivre last night, it was yummy but the pic came out less than appetizing. The steak juices mixing with the cream sauce just wasn't very pretty but it sure was tasty! We had a really good salad combo too, spinach, arugula, thin slices of onion & sliced avocado with crumbled bacon on top, lemon & olive oil dressing.

I cooked 2 filets & we shared one, so that will be dinner again tonight.

Thanks for all the Easter dessert advice. I ended up making a derby pie because my SIL was bringing a triffle. It turned out really good, which was shocking. I was going to try Laura's fruit tart, but I couldn't find any marscapone cheese.

Sorry I haven't posted in a while, but it has been really crazy. With sick kids, Easter, and the upcoming tax deadline, I haven't had much time for myself. I've become so crazy, I can't even remember what I made for dinner last night. Tonight will probably be take out.

I love the Derby Pie! Whenever I cannot find marscapone cheese I just use cream cheese. It is not as creamy or yummy but it works for me.

Now don't worry about posting. Get thru the tax season and stay healthy.

Becky, you never get sick but you have been a bit under the weather for a while now. Please don't get right back to normal after you feel better, your body is still run down and your immune system is compromised so you end up sick over and over.
 
Ooooo, recipe, please!!!

I make dinner just for me and tend to just add the amount of veggies I like and throw them in the pan so there are really not any measurements of that.

Shrimp (3 to 4 oz. per person)
Mushrooms (I use pre-sliced)
Yellow and green squash
Snow peas
Broccoli slaw (I sometimes use pre-shredded carrot instead)
Olive oil
Black pepper sauce (from Trader Joes)

Peel, devein and cut shrimp in half.
Cut the squash into chunks.
Heat the oil in a large skillet or wok on high heat. Once hot stir fry the shrimp and veggies until the shrimp is cooked then add the Black pepper sauce. Stir until well mixed, serve over rice.

The rice I am having tonight is a brown rice medley, also from Trader Joes, but I have also had it with whole wheat cous cous or you could use a regular rice.

I do a lot of shopping at Trader Joes but any sauce could be substituted, you could use just about any Asian sauce there is, or even make your own.

If you have a Trader Joes near you you should check it out, if you haven't already. :thumbsup2

I am a little worried about my Aunt. She is regressing more and more and I think that she is just tired. Her appetite is still good and she likes what I cook and the meals my BIL makes, ( he cooks mostly at my sisters) so that is good I guess.

I miss being here soooooo much.

Watching the regression is so very hard Nancy but the fact that she still has a good appetite is a very good thing. Cherish this time that she can still communicate with you. When Mom could no longer communicate with me was almost unbearable.:hug:

Glynis - Here is the Raisin Sauce recipe, it's a very intense full flavored sauce. A little goes a long way.

1 c. firmly packed light brown sugar
1/2 c. vinegar
1/2 c. water
1/3 c. raisins
1 tsp. dry mustard

Combine all ingredients in a small saucepan. Cook over medium heat until the sugar dissolves, stirring constantly. Yield: 1/4 cups

WFD- grilled ham steaks with honey mustard glaze, boxed scallop potatoes, and bird's eye carrots with cranberries. Simple and easy night.

I think I'm making fettuchini with salmon and asparagus tonight. Found it in my Hallmark magazine and it looked good

I remember how it was for you. She talks but the past few days she has said some things that make me think she is working things out. She has not been the same since my Mom passed on, they talked to each other 6 or 7 times a day and she told me yesterday that she is erasing people from her memory. Not everyone because she needs to make sure that there is someone left to tell her story :sad1:. She also told me she is ready and doesn't know why it is taking so long. I told her that I thought that it might be because we were not ready yet and she laughed. I know that her brain is misfiring a lot but she gets her point across.
 
I think I need some help. I bought an injector and tried it today. I have never used one before and I confess I only spent a few dollars on it so this may be the problem. I bought a commercial injectable marinade from Cabela's and used it in an oven stuffer chicken. A lot of the marinade came back out :confused3. Is that supposed to happen? I added more so I bet I have a polka dotted chicken but it was running back out as I was putting the chicken in the oven. Has anyone used one of these and is this supposed to happen? I have my Cajun garlic marinade but am saving it until I get the hang of this.

You could use them in a salad. Lettuce, avocado and grapefruit sections..
 
Hi all, I've been really busy getting started with DS's homeschooling...I called the school last Tuesday and let them no Thursday would be his last day. Ed went in that day and filled out paperwork etc.. Right after he leaves they called the house to tell me he would be marked absent every day until the school board approved his curriculum.. SO he was marked absent yesterday and today although he has been being schooled..I sent his curriculum into the school distict today for approval.. It just really feels like the school wants to scare me into putting him back in..I know my legal rights and obligations though and have done everything by the book..
The funny thing is the school board didn't make a big deal about it at all..They were very friendly and gave me no problems whatsoever.
I also booked a Western Carribean cruise for Dec. for Ed Jeremy and I .Yay!
Last night I made wonderful stromboli filled with provolone and parmean cheese, prosccuito sp? pepperoni, portobello mushrooms, kalamata olives and fresh basil..Today I was lazy and made steak sandwiches with frozen steak fries.

Grapefruit Rum Coolers Recipe #101022
Refreshingly different, not too sweet.

5 min | 5 min prep | SERVES 2 4 mint sprigs
1 tablespoon superfine sugar, to taste
2/3 cup fresh grapefruit juice
1 1/2 tablespoons fresh lemon juice or lime juice, to taste
3 ounces light rum, to taste
chilled club soda or seltzer water
Angostura bitters, to taste

In a cocktail shaker with the back of a spoon, crush mint sprigs with sugar and juices until sugar is dissolved; add rum and about 1 cup ice cubes and shake 30 seconds; strain mixture into 2 tall glasses filled with ice cubes and top each drink with club soda and a splash of bitters.

Jenny I wish you much luck in homeschooling my friend does that for her kids. They have really blossomed.

It did come out really good! I am going to use it again, the chicken was tender and juicy. We had curried sweets, mashed potatoes green beans and a tomato, cucumber and onion salad. I also had complaints from you know who becasue there was no gravy. He was careful to tell me how good the chicken was though....:lmao:

I am impressed with anyone who can do this. My first husbands cousin home schooled all of her children and it was a tremendous amount of work.

I've had trouble finding it sometimes too. The supermarkets here seem to stock it more in the summer. I want to make that derby pie, but Liam can't eat it, so I haven't found an excuse to yet.

We had roast beef (I consulted my mom for cooking time, and it came out perfect), gravy, roasted potatoes, eggplant sticks, mashed turnips (no shallots, since I forgot to buy them), and sugar snap peas. I know it sounds like a lot for a Tuesday, but this is one of my few afternoons I have to cook, so I wanted to make the most of it. I was planning to have plenty of leftovers so I would have some easy meals for skating and ballet days, but the kids ate most of it. I guess I am starving them. :laughing:

Nancy, did you lube the injector with vegetable oil before using it? It helps the marinade flow out easier. I love injecting my birds. I'm sure yours will be great too!

Well, change of dinner plans AGAIN! This time due to commuting troubles. There was a train crash on the line we took in this morning--a commuter train hit a boxcar late this afternoon, so the entire line is closed down. I walked home from another commuter line's stop and went over to borrow my Mom's car keys. John's coming in on yet another line and I have to go pick him up and then drive up to the station where we parked this morning to retrieve our car. No word yet on how many people were hurt...people in the station were saying over 100, but I am waiting to see an official report. Hopefully the rumors in the station are not true.

Anyway, I don't have time to do the shrimp/soup with all this, so I am just making a pizza.

Good luck with the homeschooling! I admire you so much for doing it! I have thought about it, but then, after looking at my temperament, I realize it's a good thing that I'm separated from my children for 8 hours each day!

Your cruise sounds so fun!!! I really want to try a cruise someday, but I get terribly seasick! Do you think that a cruise would be doable for me?
