Morning all--

My hubby has shared his lovely stomach bug with me, so Ross is getting on the bus and I am going back to bed.......Supper tonight will be saltines and ginger ale........well for me at least........the boys are on their own......which means cereal I would imagine, as that is Kris' specialty,;)

I am not feeling well again. I had a burst of energy yesterday, feeling pretty back to normal and then last night my throat started again...I am going to try and relax today. Got the inspector coming again and the TV company to move some wires. Tom wired the room for surround sound and put wires for speakers outside and now the TV wires need to be moved. We are almost there...

Not sure whats for dinner. I have some corned beef left and a ton of potatoes and veggies. It may be just sandwiches and progresso soup.

sandy- Can I come for dinner Easter? I have no idea what we will have. We are going to MIL for dinner but the girls are threatening to bring a frozen dinner. I found out last night that the ham is a killer on WW, add that to SIL is not a good cook and the mutiny is crazy! I have to fix something for us in the evening but I have to think about it now. My DS and DSIL are working so our bunch is dwindling.

Tonight I am roasting a turkey with stuffing and gravy, mashed potatoes, sliced beets green beans and maybe some sweet potatoes.

St. Pat's dinner was a hit last night. But boy was that work! I pretty much stuck to all the recipes, which made everything a bit harder. For the Colcannon, I really should have peeled the potatoes first. The soup took forever to cook adding the potatoes uncooked into the cream. It was hard to get the temp of the soup high enough to cook the potatoes without having the cream boil over. But once the potatoes cooked & I blended it, was super thick & creamy, really good! The bread was pretty easy & came out yummy especially with the Guinness dipping sauce.

Thanks Lauren for that recipe. And everyone for help & suggestions on all of it!:grouphug:

Becky, I served the lambchops with arugula with evoo & lemon juice! (For me & Bob anyway, DD & SIL wanted at least one thing "normal" :confused3 spinach w/caesar ) Thanks that was yummy!:thumbsup2

WFD tonight: Well we have a bunch of steak left over from the mungo strip steaks Greg's parents made Sunday night..so i think i will cut those up and do steak quesidillas with cheddar onion and refried beans. I will serve the rest of the spinach, feta, mandarin orange and almond ( sounds weird..but so good) salad i made last night with it. I have really been tryingto be more creative with using stuff i have in the house..i can't stand being wasteful!!

How long is going to have a restricted diet? With the cooking that goes on in your home this has got to be terrible.

Just until he feels comfortable enough to chew. No set time table. He is hoping by this weekend he'll be back to normal. I'm sorry you are missing your Dad. :hug:

You take roasted vegetables (mushrooms, broccoli, and peppers), and put them on top of frozen Texas toast that has been spread with about an inch of mayonnaise. Top with Gouda cheese :confused3 It was odd, to say the least.

Hmmm...our inlaws must read the same magazines. Did you see my post about what I thought they were going to serve on Sunday? Mayonaisse coated haddock? It's their favorite way to cook it. Urgh.

I have pictures of the soup last night but did not have a chance to upload them yet. It was a very tasty soup. Tonight's soup flavor is going to be mushroom at John's request. I'll probably make some crunchy croutons for my bowl. I wish we had the old thread back, because someone posted the Artist Point mushroom soup in it. I could really go for a bowl of that soup right now!
 
Here, Beck. I found this on the Disney Recipe thread :)

Smoky Portobello Mushroom Soup
Artist Point, Wilderness Lodge

Yield: 64 ounces; 8 servings

Ingredients

6 Medium Portobello Mushrooms
3 Medium Smoked Portobello Mushrooms (see instructions)
1/2 cup Sweet onions
1/2 cup Chardonnay
1 1/4 Qts. Heavy Cream
24 oz. Chicken broth
1 1/2 Tbsp Garlic, chopped
1 1/4 cup White Roux (equal parts of butter & flour; cook slowly over low heat)
To taste Salt & pepper, Croutons (see recipe), chive oil (see recipe), roasted ****ake mushrooms (see recipe),
chives cut for garnish

Steps

1. Clean the Portobellos by wiping them with a damp towel (do not wash!) Remove the mushroom gills
(slats on the underside to the caps.)
2. Sauté the onions lightly (to sweat.)
3. Add the unsmoked Mushrooms to the onions.
4. Add the garlic when the mushrooms are almost cooked.
5. Add the smoked mushrooms.
6. Add the Chardonnay and reduce by half.
7. Add the chicken broth and bring to a simmer.
8. Place in a blender or food processor in batches.
9. Add the heavy cream slowly and continue to blend.
10. Season to taste.
11. Place the mixture back into the pot.
12. Add the Roux and let simmer for 20 minutes.
13. Serve hot and garnish with croutons and roasted ****ake mushrooms, a dollop of sour cream, drizzle with chive old and cut chives.

Smoking Portobello mushrooms

* in a home smoker, place thick slices of Portobello mushrooms on the rack and cold smoke for one hour
* we use oak chips for our smoker

Croutons

1. Pre-heat the oven to 325-350 Fahrenheit
2. Cut 6 slices of your favorite bread into 3/4" squares.
3. Toss in a bowl with 1/4 cup melted butter.
4. Place on a baking sheet and season with salt and pepper to taste.
5. Bake at 325-350 Fahrenheit until brown.

Chive Oil

1. Place 1 cup of light olive oil in a blender and add to that 1 cup of chives
2. Blend for 30 seconds and let rest for 1 hour
3. Strain through a fine sieve

Roasted ****ake Mushrooms

1. Thinly slice 2 cups of ****ake Mushrooms.
2. Toss with 2 Tablespoons of Olive Oil and a little salt and pepper.
3. Place on a baking sheet and roast in the oven at 375 Fahrenheit until crispy and golden brown.
4 Cool and set aside.

Sour Cream

1. Place a little sour cream in a bowl and whip it up by hand until smooth.
2. Set aside.

I was worried about my bread. It felt so heavy & the crust got pretty hard cus I cooked it on the pizza stone. But when we cut into it, the inside was soft & delicious!

Becky, Sorry John's still having to eat just soup! Is it improving?

Lori/BeadPirate had posted that AP mushroom soup on the old thread. I've wanted to try fixing it, but never think about it with enough time for smoking the portabellas.
 
Good morning everyone!

Well, the cobbler's children finally have shoes, metaphorically speaking, of course. I finished the year end financials and tax returns Sunday evening just in time for Hailey to get sick. My mom is taking her to the doctor this morning so I could go to work, but I'm thinking from the sound of her cough, it is bronchitis again.

I'm thinking tonight's dinner will be the same as last night's - take out. All I did last night was sit on the couch with Hailey lying on me. When I had to get up, Kenny would take my place. I'm thinking that will be where I am tonight too.

I've read everything and caught up, but I'm sorry I don't have time to respond to everyone's posts.
 
Thanks for all the well wishes...I still feel like poop and just took a cat nap....I normally find it hard to sleep during the day.

I meant to comment on that fish recipe...I think I tried something like that once and it was horrible...I couldn't even eat it and I eat anything.

I really liked the bread and will be making it again soon...especially since I have all the ingredients and don't have anything else to use them in! I actually had a peice for breakfast with butter...yum! I want another slice but I am trying to be good. ;)

Had some time to go back and read some of your posts. I must say there are some corned beef recipes that sound soooo yummy! I must remember to try them. My boyfriend cooked a corned beef, cabbage, potatoes, onion and turnip in the crockpot on Friday (he thought it was St.Patty's Day!:headache: ) I swear he cooked a bushell of veggies! We have been eating them EVERYNIGHT since Friday. Last night with chicken, tonight with sausage. I can't wait until they are gone. They may accidently slip out of hand tonight when I am putting them in the fridge!:confused3

I can't remember ever having corned beef... it doesn't sound appetizing, I must admit, but I'm willing to try anything at least once.

Tonight is leftovers. I always cook the entire recipe for us (which is about 5 servings) so we can have lunch but since I cooked several days in a row we have TOO much. I have breakfast pizza and BBQ sandwiches to eat up tonight.

Sandy Your Easter dinner sounds really nice. I think around 8lb ham should be plenty, you have quite a spread.

WFD? I really want Velvet Shrimp, but I promised DS the next time we had shrimp I'd do it his way - grilled. I'm not sure what to make with it.

I'm sure I'm forgetting something, but I've been bouncing on here on and off today in brief intervals and I didn't do enough multi-quoting.

We're having fish and chips tonight at Caili's request. That is what I would have made last night if we had been home. (I can't stand corned beef. DH loves it though. In the early years of our marriage, I used to make it for him sometimes, but then he ate the whole thing in one sitting :scared1: and I haven't made it since. ;) )
 
We should be having leftover corned beef and cabbage from last night, but we're not. Today is DH's 40th birthday, and he requested my infamous pot roast. So, that's in the crockpot right now. Only change is I'm using elk instead of cow. Hopefully it will taste ok. It's what he requested, so I'm doing it his way.
