Afternoon Y'all,

I'm back from the doc & a mountain of errand running!

Gretchen, Hope you & Hailey feel better real soon!

Lindsay, Sorry that you had to eat your MIL's food! That bread/veggie thing sounds gross! What magazine is putting that out there?! :sad2:

Laura, I can't wait to hear what Becky has done with the Portabello soup! I'll bet it will be delicious.

Glynis, We know Alan is going to be one Happy Birthday Boy if he has your roast to come home to!!!

I'm not a big fan of corned beef either. But I haven't tried fixing it with any of the glazes that you guys are using. Maybe I should give corned beef another shot.

I'm not very happy with the dr visit this morning. The good news is he is sure that I am the classic case for a fibromyalgia sufferer & don't have rheumatoid arthritis, as he suspected 2 years ago. The bad news is because it's been 2 years, he insisted that I again try muscle relaxers to get me into REM sleep. He said that a lack of rem sleep is what sets off all of these mutiple symptoms. I tried the muscle relaxers 2 years ago & couldn't wake up & felt like I was in a fog. He said that there are other meds we can try, but insisted I go back to step 1 and come back in 3 weeks. Ugh, and for that he charged 180 bucks!! He did say that I don't need to see a neurologist for the back pain & that the stomach issues are all part of it. He says none of it will improve until I start sleeping properly, something to do with dopamine, I think.
 
Sheryl, :hug: :hug: :hug: I hope you find a medication that will not have those affects...hang in there...we are here for you.

I think I may have to swing by the dr tomorrow too. My throat has not gotten better and now my ear is aching...ugh! Then thurs I have another ultrasound on my thyroid and more bloodwork...

Lauren, Hugs :hug: for you too! Yep, you'd better get back to the doc. Sorry about the upcoming tests too. :flower3: I wasn't happy with the dr's prescription but I was happy he didn't want to run more bloodwork or send me around to more doctors.


Hey Y'all,

A neighbor just called to tell me there is a small alligator in the canal right across the street from me! About 4 1/2 foot & it was out of the water on the bank. While I'd like to see it, I'm too chicken to go look.:eek:

I loved the Chilaquiles Lasagna, my guys will eat when they get in later. I've got a migraine after an absolutely dreadful day at work, probably going to go lay in bed now.
 
Tonight is pork tenderloin with pesto cream sauce. :thumbsup2 I LOVE this recipe, it is delish both with and without the pesto cream sauce.

Pork Tenderloin with Pesto Cream Sauce

2 ½ lbs pork tenderloin

For the marinade
4 cloves garlic
handful of basil
needles from a 4 inch sprig rosemary
2 tbsp balsamic vinegar
¼ cup red wine
3 tbsp water

For the pesto cream sauce
3 tbsp butter
1 shallot, diced
1 garlic, roasted
¼ cup red wine
juices from the roast pork
1 cup heavy cream
3 tbsp pesto

1. Puree the marinade ingredients in a food processor. Place the pork in a large bowl, cover with marinade. Toss to ensure pork is well-covered. Marinade pork in refrigerator for 6-8 hours.

2. Preheat oven to 375 degrees. Place pork in a large roasting pan and put in oven to roast. Roasting time for the pork will be about 20-30 minutes. Turn pork over after 10-12 minutes, and check at 20 minutes. Pork should be cooked to an internal temperature of 155-160 degrees, but should still have a bit of pinkness so that it’s tender. Note it will continue to cook while resting, so you want to take it out a bit before the optimal doneness is reached.

3. Remove pork from oven when done, place on serving platter and tent with aluminum. Reserve juices from roasting pan.

4. Make the pan sauce. Melt the butter in a skillet on medium heat. Add the shallot and sauté until it begins to soften. Squeeze out the roasted garlic and add to the pan along with the reserved juices. Stir in for about 2 minutes until the garlic becomes evenly distributed. Add the red wine and cook down for about 2-3 minutes. Remove from heat, stir in the cream and the pesto.

5. Thinly slice the pork, and serve with cream sauce. This recipe made enough extra sauce for potatoes and a 2nd night of pork chops!

It does suck going from dr to dr, etc. I have been a little bad with my thyroid...I was supposed to go for these tests several weeks ago and I even missed a couple doses of meds...:sad2: Like I said before, I hope you can find a medication that will help. Can you take a regular sleeping pill to get into REM sleep?

Alligator! :scared1: Be careful. I was petrified of them when I lived in FL.

We're having a boring dinner. I was lazy today, and now I feel sad because DF just called and said he's "starving".

We're having a HUGE salad with three chicken breasts cut up on top of it.

Ugh, and for that he charged 180 bucks!! He did say that I don't need to see a neurologist for the back pain & that the stomach issues are all part of it. He says none of it will improve until I start sleeping properly, something to do with dopamine, I think.

:scared1: Gators kinda freak me out. I'm always afraid Brendan's going to get too close to one when he's out riding his bike. We live near a large canal and have two small lakes in the neighborhood that they like to hang out in.

:hug: I hope you feel better soon. What's wrong with your thyroid, sorry I must have missed it. My mom keeps telling me to get my thyroid checked. All the woman in my family have thyroid problems.
 
We're having fish and chips tonight at Caili's request. That is what I would have made last night if we had been home. (I can't stand corned beef. DH loves it though. In the early years of our marriage, I used to make it for him sometimes, but then he ate the whole thing in one sitting :scared1: and I haven't made it since. ;) )

Sheryl, I'm sorry you didn't get a better answer from the doctor today. It's a shame that you have to start back with something you have already tried. I hope these three weeks go by fast or that you have somehow developed the ability to take the muscle relaxers. I'll be thinking of you and pulling for you.

You'll be sick of doctors by the end of the week. Seriously, I hope you can get in tomorrow and get some relief.

Becky - I hope John is doing better. I'm sure it is driving him crazy having to eat everything lukewarm and soft. At least you can make nice soups. If that were Kenny and I had to cook lukewarm and soft, he would feel like he was eating at the nursing home.

Hailey does have bronchitis. She is on an antibiotic and a cough medication. Her fever is down now and hopefully will not come back. She is really fussy and irritable tonight, so I know she doesn't feel good, but I'm hoping the medication will work quickly. Thanks for all the good wishes for her.

I hope some of you can help me. I need to take a dessert to Kenny's family's Easter dinner. I don't know why they keep asking me to bring dessert when they should all know by now that I cannot bake. Really. I cannot bake. The pecan pies I was assigned for Christmas Eve did not set. Ever.

I need an Easy, Easy, Foolproof dessert recipe. Any suggestions?

That warm winter lemon cake was delicious and super easy - not sure if that's what you're looking for. You know I hate baking and it was a piece of cake! VERY tasty, too.

I'm sorry it was a frustrating visit. Does a traditional sleep med not get you into REM?
 
Well, dinner wasn't as good as it has been in the past. I didn't like the taste of the elk. To me it was quite gamey, but Alan really liked it. He can take the rest for lunch tomorrow. Still, as long as he was complaining, I'm happy!

I'm trying to think of some easy fool-proof desserts. I posted a strawberry daquiri cake recipe a few days ago, and it is really easy to make and tastes good. If it's quite warm you could make an ice cream sandwich cake, which is simply a layer of ice cream sandwiches in a 9X13 dish, spread a layer of Cool Whip on that, then a layer of ice cream topping, another layer of sandwiches, top with Cool Whip and chocolate shavings. Let it all set up in the freezer until you are ready to serve. I made a couple of these last year with different flavored sandwiches. Walmart has peanut butter flavor, butter pecan flavor, neopolitan, coffee, etc. You can really play around with the flavor combos.

I'll look through my stuff and try to find some other really simple desserts. Trifles are always easy and good!
 
Thanks everyone for the worrying about me! :grouphug: As y'all can see the muscle relaxers for sleeping only worked until about 3:45. We are also having some bad weather coming through right now, so that doesn't help matters. So I guess I am acting different on the meds this time, I'll just be groggy from not sleeping. :sad2:

On the sleep meds & REM sleep, the dr.'s reply to that was that "Yes I might need to take the sleep med, but we have to try the muscle relaxers first." Of course, I said you mean again, I tried it before & I already know the Lunesta helps me sleep. His reply to that was "Well that was two years ago, you might react differently & this will take time to work out. And the sleep medications don't work as well for getting into rem sleep." Yeah, my time & lots of my money! :mad:

I agree with Glynis, for an easy dessert, I like to do a layered trifle. I like store bought angel food cake, layered with vanilla pudding, home-made whip cream & mutiple kinds of berries. Super easy, tastes great & looks pretty!
 
Sheryl One of my good friends has fibro. She doesn't like the sleep med's for that very reason she has 2 active young kids. I'll have to ask her what she does to keep her symptom at bay.

For Easter dinner I am bringing a Angel food cake and berries with almond sugar for dessert. It is kind of diet friendly and low in cholestrol for my Uncle.
 
Tonight it's leftover stuffed pepper stoup and bread.

Last night was Glynis's Chicken with Peach Stuffing. Yummo! Tonight is gonna be a new Mac and Cheese recipe (will post if it's yummy!) Okay, off to work

If you guys like coconut, the "Moist & Easy" Coconut Cake that I posted on our original thread is fool-proof and really good. If you're interested I'll re-post it. I'd also suggest the warm winter lemon cake too.
