Hi Guys! I am still feeling really poopy and didn't sleep great. Andrew is still complaining that he isn't feeling 100 % too so I am going to try and make an appointment for both of us after school. Tom has an appointment later too (he goes to a different dr).

I have to say, it always brightens my day checking in with everyone here. Thanks for being great friends!

:hug: I hope you feel better soon. What's wrong with your thyroid, sorry I must have missed it. My mom keeps telling me to get my thyroid checked. All the woman in my family have thyroid problems.

Thanks Sandy. I was diagnosed with Sub Clinical Hyperthyroidism back in July. Its basically Hyperthyroidism without the symptoms...my hormones are really messed up. I also have alot (maybe 10) nodules. There was one big enough to biopsy and it was fine. There is another that was on the cusp (sp) so I have to go for periodical ultrasounds...fun fun.

Hailey does have bronchitis. She is on an antibiotic and a cough medication. Her fever is down now and hopefully will not come back. She is really fussy and irritable tonight, so I know she doesn't feel good, but I'm hoping the medication will work quickly. Thanks for all the good wishes for her.

I hope some of you can help me. I need to take a dessert to Kenny's family's Easter dinner.

I hope today finds Hailey feeling better!

How about a dump cake? I make blueberry/pineapple and peach/pineapple and everyone loves them. It comes out like a crisp.

Thanks everyone for the worrying about me! :grouphug: As y'all can see the muscle relaxers for sleeping only worked until about 3:45.

On the sleep meds & REM sleep, the dr.'s reply to that was that "Yes I might need to take the sleep med, but we have to try the muscle relaxers first." Of course, I said you mean again, I tried it before & I already know the Lunesta helps me sleep. His reply to that was "Well that was two years ago, you might react differently & this will take time to work out. And the sleep medications don't work as well for getting into rem sleep." Yeah, my time & lots of my money! :mad:

:sad2: I hope they figure out what you need fast. I hate when doctors insist on something that you know will not work. Maybe he is right that you may react differently now...:hug:

Lauren - Sorry you still aren't feeling well. I hope the doctor is able to prescribe something to help.

Sheryl - I'm sorry the medication that you knew wasn't going to work didn't. And I'm sorry you have a doctor who thinks he knows you better than you. I do hope you get some relief soon though.

Kathy - Is the headache gone? I'd love the coconut recipe, but my husband has a strict anti-coconut policy. And an anti-curry policy. And an anti-broccoli policy. :confused3

Glynis - I'm glad Alan had a good birthday and that he enjoyed the dinner even if you did not. I don't think I'd care for elk either.

Hailey was up early this morning, coughing and generally being miserable. I'm hoping she'll feel better as the day goes on, but we'll see. She generally wanted to be left alone last night, so if that is the way she feels tonight, I'm planning on making dinner. I'm planning on shepherd's pie. And my sister sent over a pan of Paula Deen's banana pudding, so that is dessert.

This was also really delicious! (John could not eat the croutons of course). Start to finish it took about 35-40 minutes to pull together. I'll put the extremely modified recipe up in a bit if anyone wants it.
 

Tonight I have vegetarian trial #2 for Easter-nutty lentil loaf. I made it last night, it just needs to cook.

What about tacos? Anytime we do that with just a pound of meat, we eat it all up. Even hamburgers might work - just make 2 half pound burgers to start with.


Tonight I was planning on jerk chicken but I didn't get the chicken thawed and marinating. So now I'm not sure?

A neighbor just called to tell me there is a small alligator in the canal right across the street from me! About 4 1/2 foot & it was out of the water on the bank. While I'd like to see it, I'm too chicken to go look.:eek:

Kathy -- Are you feeling better today?

Gretchen -- I make a berry tart that is super easy. You can buy a pre-made graham cracker crust, beat 1 c mascarpone cheese, 1/3 heavy cream, 1/4 c sugar and 1 tsp vanilla together until it looks like whipped cream. Fill the shell, then top with assorted berries. Easy and pretty! I also heat 2 tbsp orange marmalade in a small pan until it thins and toss the berries in that before putting on the tart. It gives them a little extra flavor and it makes them glossy.

If Kenny would prefer something chocolate, Glynis's Derby Pie looks easy. I only wrote down the ingredients for that -- :confused3 -- so I'll let her confirm the ease and the preparation.

I agree with Glynis, for an easy dessert, I like to do a layered trifle. I like store bought angel food cake, layered with vanilla pudding, home-made whip cream & mutiple kinds of berries. Super easy, tastes great & looks pretty!
This sounds good too! :thumbsup2 This also reminds me of my mom's strawberry shortcake cake. She takes an angel food cake (she makes her own, but that is definitely NOT foolproof!), slices it in half and scoops out the middle, leaving enough of the cake so it won't collapse when she puts it back together. She then makes a big bowl of whipped cream. She slices strawberries and combines them with about 2 cups of the whipped cream. She puts this into the middle of the cake, puts the cake back together using whipped cream as glue, then she frosts the cake with the remaining whipped cream and decorates with strawberries on the top. She usually makes this the night before and leaves it in the refrigerator so the "frosting" firms up a bit. YUM!

I'll put the extremely modified recipe up in a bit if anyone wants it.

Broccoli cheese soup

3 tbsp. butter
3 tbsp. flour
1 pound broccoli, stems and florets separated, stems peeled and chopped into bite-size pieces
1 large onion, chopped
2 garlic cloves, minced
½ tsp. dried tarragon
3 cups chicken stock

½ cup white wine
1/2 cup cream, half and half, or milk

1 cup (packed) grated extra-sharp cheddar cheese (about 4 ounces)


Melt the butter and add the onion and the broccoli stems. Sauté until tender. Add the garlic and tarragon and sauté for a minute more. Add the white wine and cook until almost gone.

Sprinkle the flour over, and cook, stirring, for a few minutes.

Add the chicken stock and the broccoli florets, and cook until the florets are tender—about 10 minutes. Puree the soup with an immersion blender.

Add the cream and heat gently. Stir in the cheese a handful at a time over low heat until just melted. Season with salt and pepper to taste and serve.


Smoky Mushroom Soup with Roasted ****akes, Crème Fraiche, and scallion and truffle oils

For the soup:

1 tbsp. butter
3 slices bacon, chopped
1 large onion, chopped
1 large clove garlic, minced
3 tbsp. flour
1 lb. button mushrooms, chopped
8 ounces shiitake mushrooms, divided
½ cup white wine
4 cups chicken stock
½ cup cream
Salt and pepper to taste

Melt the butter and sauté the onion and bacon together until the onion is tender and the bacon is lightly cooked. Add the garlic and cook for a minute more. Add the white wine and cook until almost gone. Sprinkle the flour over and cook, stirring, for a few minutes more. Add the chopped button mushrooms and half of the shiitake mushrooms to the pot, and cook, stirring and scraping the flour mix from the bottom of the pot, until the mushrooms have cooked down and released their juices…about 10 minutes.

Add chicken stock and simmer for about 10 minutes more.

Puree the soup with an immersion blender and season with salt and pepper to taste.

While the soup is cooking, prepare the garnishes. Heat your oven to 375 degrees.

Toss four ounces of sliced shiitakes with 2 tsp. butter and salt and pepper to taste. Roast until browned, about 20 minutes. Set aside.

Toss 2 cups of cubed bread with 1 tbsp. butter and salt and pepper to taste, and roast in the oven until lightly browned, about 10 minutes. Set aside.

Puree four scallions (white and green parts) with 1/3 cup olive oil, and set aside to steep 20 minutes. Strain the oil and discard the solids.

To assemble, place soup in bowl. Top with a dollop of crème fraiche, then sprinkle on roasted shiitake mushrooms. Add croutons to soup and drizzle scallion oil and white truffle oil over. Garnish with minced scallion greens.

I love trifles!!!! they are super quick to do and always go over well..my personal favorite is my oreo heathbar one..choc cake, pudding, heath and oreo crumbles and good ole coolwhip ;)


WFD: quesidillas..we ended up going out last night, so tonight is the steak-a-dillas with salad :)
 
I can't remember ever having corned beef... it doesn't sound appetizing, I must admit, but I'm willing to try anything at least once.

Aimee- if corned beef is cooked right it is delicious. I love it with the glaze that Glynis posted and I am going to try the one with apricot that Kathy posted.

I'm not very happy with the dr visit this morning. The good news is he is sure that I am the classic case for a fibromyalgia sufferer & don't have rheumatoid arthritis, as he suspected 2 years ago. The bad news is because it's been 2 years, he insisted that I again try muscle relaxers to get me into REM sleep. He said that a lack of rem sleep is what sets off all of these mutiple symptoms. I tried the muscle relaxers 2 years ago & couldn't wake up & felt like I was in a fog. He said that there are other meds we can try, but insisted I go back to step 1 and come back in 3 weeks. Ugh, and for that he charged 180 bucks!! He did say that I don't need to see a neurologist for the back pain & that the stomach issues are all part of it. He says none of it will improve until I start sleeping properly, something to do with dopamine, I think.

I think it would have been easier if he had just listened to you. I hope that you are able to find meds that help without going through all of the "experiments" first. I saw that the muscle relaxers are not helping.

I hope some of you can help me. I need to take a dessert to Kenny's family's Easter dinner. I don't know why they keep asking me to bring dessert when they should all know by now that I cannot bake. Really. I cannot bake. The pecan pies I was assigned for Christmas Eve did not set. Ever.

I always make a trifle as well for special desserts. I use Angel cake because it does not get "squishy", any berries will work. I have made a peach melba trifle that tasted good but I had fresh peaches. I don't know if frozen work. If your family likes chocolate I agree that the Derby Pie is awesome and the Hello Dolly Pie is good too.

For Easter dinner I am bringing a Angel food cake and berries with almond sugar for dessert. It is kind of diet friendly and low in cholestrol for my Uncle.

I'm using my hamburger to make Poor Man's Stroganoff. It's enough for one meal.

Brown your hamburger and season it with garlic powder. Once it's browned and drained, add 1 can cream of mushroom soup, and 1 cup of sour cream. Let it simmer together and season with salt and pepper to taste. If you need to, you can add more sour cream. I serve this over noodles or rice. Very fast and easy. My kids really like it, too!

I also found a couple of recipes that look easy and fool proof. I'll post them in a few minutes. The main ingredient in them is Twinkies.

Derby Pie

[FONT=&quot]¼ tsp. salt[/FONT]
[FONT=&quot]½ cup all-purpose flour[/FONT]
[FONT=&quot]1 cup sugar[/FONT]
[FONT=&quot]2 eggs[/FONT]
[FONT=&quot]1 tsp. vanilla[/FONT]
[FONT=&quot]12 oz. semi-sweet chocolate chips[/FONT]

[FONT=&quot]Bake at 325 for 1 hour in a 9-in deep dish pie crust for 1 hour. [/FONT][/FONT]
 
Ok, here are the Twinkie desserts I have found. I have not tried either of them, but they look simple and sound ok.

Vicki's Twinkie Cake

1 (15 oz) pkg. Twinkies, cut lengthwise
1 (20 oz) can crushed pineapple, drained
3 bananas, split lengthwise
1 (5 oz) pkg. French vanilla instant pudding mix
1 (12 oz) container Cool Whip, thawed
1 C. chopped nuts
Chocolate syrup
Maraschino cherries

Arrange twinkies, split side up in bottom of a 9 X 13 inch pan. Sprinkle pineapple over cake. Layer bananas on top. Prepare pudding mix according to package directions. Stir in Cool Whip. Pour over bananas. Sprinkle with nuts and drizzle chocolate syrup, to taste, over all. Garnish with cherries.

Twinkie Toffee Temptation

1 (3.5 oz) pkg. instant vanilla pudding mix
2 C. milk
12 Twinkies cut lengthwise
8 oz. chocolate covered toffee bits, divided
1 (8 oz) container Cool Whip, thawed

Prepare pudding with milk, as directed on package. Set aside. Line 9 X 13 inch pan with bottom halves of Twinkies, cream side up. Sprinkle with 1/2 cup candy. Top with reserved pudding. Arrange top halves of Twinkies on pudding. Spread on Cool Whip. Top with remaining candy. Cover and refrigerate 2 hours.

Moist and Creamy Coconut Cake

1 box yellow cake mix
1 1/2 c. milk
1/2 c. sugar
2 c. coconut
8 oz. cool whip

Prepare cake mix as directed in a 13x9 pan. Cool 15 minutes; poke holes in cake with the tip of a wooden spoon. Combine milk, sugar and 1/2 c. of the coconut in a saucepan. Bring to a boil, reduce heat and simmer 1 minute. Spoon evenly over warm cake. Cool completely. Fold 1/2 c. coconut into cool whio and spread over cake. Sprinkle with remaining coconut. Chill overnight.

I am over the stomach bug we all had, woke up feeling great this morning then this afternoon my "enemy" came to visit (sorry but I refuse to call "it" my little friend!!) So I will be spending the evening with a glass of wine and the heating pad, and my reality shows!
Ross has late karate tonight so supper will be burgers and cukes when he gets home. Easy and perfect to eat while watching TV!

NOW our insurance company is really ticking me off. They received the police report on Kyle's accident and remember the guy that hit Kyle was an off-duty cop. Looks like he had some influence on how the report was written, Kyle is now at fault and he was hit in the rear.:confused3 My insurance company is telling me they know from conflicting statements given by the other guy that this at best is a 50/50 at fault case. I don't think I have it in me to fight this.:sad1:
