Can you tell that I miss him a lot this time of year? It has been almost 30 years and I really clung to my Mom after he passed so I am always okay until this week. He loved St Paddy's Day and I am cooking the meal he always asked my Mom to cook. He passed on Palm Sunday as did Buddy's Father. Buddy watches the Honeymooners and had a bio special on Jackie Gleason. Since he never met my Dad it is a way to let him know how he looked and what his smile and eyes looked like. He also had a bit of an Irish tenor voice and sang Irish lullabies to me and Gail at bedtime. IF he had seen Kady go to school today he would have seen a perfect little Colleen with her dark hair and blue blue eyes.

what would y'all make for Easter lunch for 4 adults? If all 4 of us will be at church until noon and then coming home hungry? I want to invite my dad and brother to church on Sunday (dad loves worship at our church but lives an hour away so he doesn't get over often!) and then wanted to treat them to a home cooked meal. They are both bachelors =) I could pull out apps when I get home and serve an hour or so later...

What do you suggest? A traditional ham? How many sides?

I think the ham would be great...a smaller one would cook up fast. Maybe try a make ahead mashed potato recipe that you can put in the crockpot...I did this for Thanksgiving and the taters were delicious. I just picked an online recipe that looked good. I like to serve a couple different veggies...maybe your corn and something green, throw some rolls and dessert in the mix and you're done.

Maybe have some light appetizers for when you come home...
 
It's my daughter's birthday and she chose baked apple pancake with veggie sausages. (She's a vegetarian--used to love corned beef and cabbage for her St. Paddy/birthday girl dinner, but alas, no longer...) Time to get going on it...:)

Well I have my Potato & Leek Soup going. This is going to be one supper fattening meal! Here's the recipe for that:
Rose & Crown Potato Leek Soup

Makes 16-18 ounces

Ingredients:

6 potatoes
4 quarts heavy cream
1 onion, diced
2 bunches leeks
1/4 cup butter
salt & pepper to taste

Cut up potatoes then place in a container covered with water so they won't turn brown, then set aside.

Cut off the green tops of the leeks, you just want to use the white part. Cut up leeks & then place them in water to get the dirt off them.

In a heavy pot, melt the butter & then add the onion and leeks.

Cook them for 5-10 minutes. Add cut up potatoes, then add cream.

Let soup simmer until the potatoes are cooked. This will vary due to the size of the potatoes.

When the potatoes are cooked, puree soup with a hand blender until smooth.

Then season with salt & pepper.



:confused: :confused: Anyone have suggestions on the Colcannon? Do I have boil the potatoes before peeling them? Will it taste different if I do that?

Lauren, On the dipping sauce, about how long did you cook the dipping sauce?

I always peel my potatoes first. I don't like to burn my fingers doing it after.

I agree that the ham would be good. You can get as simple or as complicated as you like, no matter what you do a ham tastes good and can be left in an oven without constant attention, then it can rest while you fix the rest and it is still perfect.

I also think the make ahead potatoes are good, you can also place them in a casserole and heat them in the oven next to the ham and serve them in the same dish. Your con pudding would be good and them maybe minted peas, English or snap. they are quick to fix while everyone is having an appetizer. Baby carrots are good too but I think if you have the corn a green veggie is perfect. I don't always serve a green salad, I make a cole slaw with pineapple or a Waldorf salad but I would use pineapple instead of apples. Make ahead and ready to serve.

Not very Irish I know. I like reuben sandwiches that's as corned beef as I get. Alex would rather eat salmon before the corned beef.:rotfl:

You are one lucky woman! I was never able to get any of my kids to eat any kind of fish. Now my Daniel will eat it but Erica would rather chew glass so I generally get my seafood out.

Nancy:hug: It's funny how memories sneak up on you. Kind of bittersweet memories.

They are really nice now. I miss him but not in that gut wrenching way that I used to. Now when I think of him I am usually in a good mood about it. Does that make any sense? Buddy has never gotten to this point and his memories are always making him sad.

Now I blew the girls out of the water tonight! I know that ham is not an easy point meal but I had no idea that I served 12 point meals to them tonight :eek:. Then I forgot that the harricots verts would not be free once I put some Soy Dream on them so they would not touch them. Good thing that they can earn a few extra points by jumping on the stair stepper because dessert is 2 points and they are out.

I am not good for measuring how much meat per person, I have a phobia that I will not have enough so I usually buy a big Ham no matter what. Fortunately you know who will eat anything left in a sandwich. I did get this from a website, I hope it helps.

Hi everyone! I've been MIA for a few days. I'm going to have to jump right in, since I don't have time to go back and catch up.

WFD? Corned beef, cabbage, potatoes, carrots, and green beans. I'm trying a new Crock-Pot recipe this year. It already smells better than the recipe I usually make. :goodvibes

*** Easter Ham Question - I don't normally cook for more than 3 people and the last time I made a big ham was probably 8 years ago. :eek: I'll have 15 people for dinner and I would like some leftovers, how big a ham should I get? :confused:

I played with a few recipes on Allrecipes.com it seems a 8lb bone in should be fine that feeds 12-15 people. I'm going to assume you will have other things too. Are they all adults or some kids, mostly men or dainty women?
 
Here is the chocolate cake recipe

Better than XXX cake

1 18.25 oz pkg dark choc cake mix
1 3.9 oz pkg instant choc pudding mix
1 16oz container sour cream
3 eggs
1/3 c veg oil
1/2 c coffee liquor (Kahlua)
2c semi sweet choc chips

preheat oven 350 grease and flour 10 inch bundt pan.

in a large bowl, combine cake mix, pudding mix, sour cream,eggs, oil and coffee liquor. Beat until ingredients are well blended. Fold in choc chips. The batter will be thick. Spoon into prepared pan.

Bake in oven for 1 hour or until cake springs back when lightly tapped. cool 10 minutes in pain then turn out and cool completely on wire rack.

I just dust with powdered sugar and serve with fresh berries on the side
 
So much for corn beef... someone (over the last year) snagged it from my freezer. I KNOW I saw it in December... this is ticking me off big time :(

13 adults (only one BIG eater). We will have several sides and appetizers.

My St. Patty's Day dinner was a success. I'm going to stick with that Crock-Pot corned beef recipe from now on. I also decided to try a new cabbage recipe instead of just putting it in with the corned beef. I loved it, dh said he'd rather have it boiled with the meat, and ds doesn't like any kind of cabbage.
 
We are having stuffed pepper stoup tonight. Since it taste a lot better the next day, I made it yesterday. I won't have to cook again until Thursday :)

ETA: My poor MIL. Oy, dinner at her house is always interesting. We had Manwiches on no bread, and an odd vegetable dish she was making from a magazine. You take roasted vegetables (mushrooms, broccoli, and peppers), and put them on top of frozen Texas toast that has been spread with about an inch of mayonnaise. Top with Gouda cheese :confused3 It was odd, to say the least.

Here is the chocolate cake recipe

This is not the Better than Sex cake I've had. Here's the one I am used to:

1 Box German Chocolate Cake Mix
7 ounces Sweetened Condensed Milk
6 ounces Caramel Sauce (Jar)
8 ounces Non-Dairy Whipped Topping -- thawed
8 Heath Candy Bars -- crushed

Bake cake in 9 by 13-inch cake pan, as directed on box. Let it cool slightly and poke little holes in the top of the cake with a pencil. Dribble sweetened condensed milk and caramel sauce over cake.

Let stand for over an hour until the cake has completely cooled. Frost with whipped topping and sprinkle crushed candy. Refrigerate.
 
Sandy Your Easter dinner sounds really nice. I think around 8lb ham should be plenty, you have quite a spread.

I have think on tonights dinner some more. It will be some kind of pork chop recipe.

Well folks I didn't win our state's St Pat millionaire lottery so I better get myself in the shower and get to work :sad1:
 
Lindsay I think there are a million variations of that cake.

What kind of magazines does your MIL read. That veggie thing has some strong flavors going on.

Morning all--

My hubby has shared his lovely stomach bug with me, so Ross is getting on the bus and I am going back to bed.......Supper tonight will be saltines and ginger ale........well for me at least........the boys are on their own......which means cereal I would imagine, as that is Kris' specialty,;)
