HAPPY ST PATRICK'S DAY!!!!

We had a really nice weekend. Slept in yesterday morning, then went out for brunch, then shopping at Sam's. But then I came home & drug around hoses & sprinklers, trying to keep the new landscaping alive. Then I worked on cleaning off the patio & planting some herbs. My back was in bad shape after that, but more to do today. Ugh.

St. Patty's Day meal here is going to be Lamb chops (cus they had some really pretty ones at Sam's), Colcannon, Potato & leek soup. Maybe a little extra cooked cabbage.


Sheryl I went to World Market earlier and low and behold the were having a wine tasting of non other than Cupcake Chardonnay. They also had the Cab (really good) but I bought the Chard.

Nancy I did some investigative work and Cupcake is exclusive to World Market.

I bought some catfish and I think I'll blacken that with some rice and some green on the side. I'm not sure how the catfish will taste with the Chard but lemon cookies are sure tasty.;)

Janice, So you were able to taste it before you bought it! That's good, that way I know I didn't steer you wrong.

Nancy, Sorry I didn't see anywhere that it was exclusive to World Market. I could have saved Marisa some running! :flower3:

Wendie, Happy Birthday to Kris!!! Hope he feels well enough to eat his birthday meal!

Becky, That salmon with the pesto & crabcakes looked sooo good!
 
This is what I spent so much money on at Sam's yesterday.

New comforter set for the bedroom. It was right under $200 bucks for the set with a gazillion pillows, shams & bedskirt. I'm going to have to get creative to try & fit the bedskirt on the antique bed though. I'm thinking I'll keep the old curtains, draw them back & put something that matches the bedspread underneath. What do y'all think?

Thanks, my great-aunt (my Nana) left her whole bedroom set to me. As a kid, I always loved that bed! I didn't know I was going to get it, she had put it in her will & I didn't find out about it, until after she was gone. I hope she knows how happy I was to get it & how much we've enjoyed having it!
 
Hi, everyone! Sorry to be MIA for the weekend! I got home from bowling on Friday to find out that Alan and his brother decided to go in together and buy an old motor boat for fishing excursions. We had to drive an hour and a half away to pick it up. I told him "Happy Birthday!" Hope he doesn't expect too much more! 750 dollars is more than I had planned to pay for his birthday!!! Oh well, he's happy, and it means he can take the kids fishing a lot this summer and give me some down time! We ended up stopping at Taco Time to grab some tacos to feed the kids in the car (guess I need to get it vacuumed out, now!)

Saturday morning, Leslie crawled into our bed, complaining of a sore throat. I got up to get her an aspirin, and when I got back I saw her sitting up in bed, throwing up all over her daddy! I have to admit that I laughed and laughed!!! We got them both cleaned up, and the bed linens washed, and Leslie seemed to be just fine after that! We spent the rest of the day working around the house. We have a leaky tub that has ruined the ceiling of our downstairs bathroom, so Alan spent the day fixing that. We'll replace the ceiling that he had to cut away this week. Once we were all done, we ran to Walmart to pick up new chains for bicycles, and a quick meal at McDonald's. Then a stop at Maggie Moo's for ice cream.

Yesterday, we went to church, came home to a light lunch of tomato soup, and Mary began to throw up. She curled up in bed and slept the rest of the day away. For dinner I made the Cajun pork tenderloin with garlic butter, as it is one of our favorite meals, now! Even my kids who claim to hate spicy food ate every singe bit!!! After dinner, we settled in for Family Fun Movie Night. It was Jacob's turn to pick the movie, so we ended up watching Transformers. I made a chocolate chunk pecan pie to eat while we watched, so it was a pretty enjoyable evening (except for Mary who was miserable)

This morning, all the kids were feeling great, so we dressed in our greens, and off they all went to school. Dinner tonight will be Corned beef and Cabbage. I boil the meat for about 3 hours, then finish it off in the oven with a glaze of maple syrup, mustard and horseradish! Yummo!!! I'm also making mom's famous Irish soda bread, colcannon and Blarney Stone kisses for dessert!

Can't wait!!!

I'm not sure about your pics. I scrolled back looking for them too. I did see the one with some of the floor in the bathroom ( & your head stuck through the wall!). And I thought I had posted that the tile was looking great! Did you post some more pics, that I missed?

What's a Blarney Stone Kiss? Can you post the recipe for that & your Mom's soda bread.

Is your colcannon recipe much different that this one?

Colcannon
Raglan Road Pub, Pleasure Island from Chef Kevin Dundon

1lb well-scrubbed potatoes
1/4 cup cream
4T + 1T butter
sea salt & freshly ground black pepper
2 oz finely chopped bacon
1/4 cup finely chopped green cabbage

Method
Cover the potatoes with cold water in a saucepan.
Bring to a boil, then simmer for 15-20 minutes, or until the flesh is tender when pieced.
Drain in a colander. Peel the potatoes while still hot.
Mash the potatoes until smooth.
Beat the 4T butter into the mashed potato and season to taste.
Meanwhile, heat the cream in a saucepan.
Just as the cream comes to the boil, remove from the heat and beat into the potatoes.
Add 1T butter to a hot saute pan. Fry bacon and cabbage in pan for about 5 minutes, or until soft.
Add bacon and cabbage to the potato and mix well.
Keep the potatoes warm until ready to serve.

Here's our Colcannon recipie from our local paper-no meat in ours.
three-onion carrot colcannon
1 pound curly kale or cabbage, washed with stems/cores removed
2 pounds Russet or Yukon Gold potatoes
1 carrot, peeled and sliced
1 leek, white part only, that has been cleaned and chopped
1/2 bunch chives, diced fine
1 bunch scallions, diced fine
1 clove garlic, minced
1 and 1/2 cups milk
1/2 stick butter (2 oz.)
Salt and black pepper to taste
1 pinch ground mace, nutmeg or thyme
2 tablespoon parsley, chopped
1/2 stick butter (2 oz.)

1. Shred the cabbage into fine strips. Place into a pot, cover with salted water and simmer until tender, about 20 minutes.
2. Peel and quarter potatoes. Place in a saucepan and cover with cold salted water. Add the carrots and bring the pot to a boil and cook, 20 minutes, or until done. Strain off water. Let the potatoes and carrots dry, and then hand mash.
3. Meanwhile, combine the washed and chopped leeks and with the chives, scallions, garlic, milk and 2 ounces of butter in a saucepan and heat on a low burner.
4. Drain the cabbage and add to the milk. Cook a few minutes more and then slowly add the warmed milk mixture to the mashed potatoes and carrots while mixing to a creamy consistency.
5. Season with the salt, pepper, and mace. Then stir in the chopped parsley and mound the mixture in a serving dish or bowl. Make a hollow in the center and fill with the remaining butter. Serves 4 to 6.

Irish Brown Bread
from the 2007 F&W Cookbook
***I think this is the one they also serve at Raglan Road

2 cups whole wheat flour
2 cups all purpose flour
1/2 cup quick cooking (not instant) Irish Oatmeal
1 tbs oats for top of bread
1/4 cup wheat or oat bran
1 tsp baking soda
1 1/2 tsp salt
2 tbs dark brown sugar
1/2 canola oil
2 cups buttermilk

Preheat oven to 400.

butter loaf pan.

In a large bowl mix dry ingredients thoroughly and make a well in the middle.

Mix butter milk and oil and stir into dry ingredients with a wooded spoon.

Knead gently until smooth.

Spoon batter into pan and with the back of a spoon make a small well in the center of the batter. sprinkle remaining oats in the well.

Bake for 50 -55 minutes or until a toothpick comes out dry.

Cool on a rack.

Serve with butter, cheese or a dipping sauce.

Raglan Road Dipping Sauce
The waiter gave me this recipe...

Mix equal amounts of Guiness and packed Light Brown Sugar in a sauce pan. Cook over low heat until it becomes syrupy.

ETA: I just cut the end off the bread and drizzled it with the dipping sauce...it came out yummy! Its a pretty dense bread...so good!

It was really good...and easy too since I cannot bake...I forgot to add, I didn't use Guiness, I only had Moosehead on hand so I used that...it still is very good.

I believe they also use this sauce for the ribs they serve...

WFD? Corned beef, cabbage, potatoes, carrots, and green beans. I'm trying a new Crock-Pot recipe this year. It already smells better than the recipe I usually make. :goodvibes

*** Easter Ham Question - I don't normally cook for more than 3 people and the last time I made a big ham was probably 8 years ago. :eek: I'll have 15 people for dinner and I would like some leftovers, how big a ham should I get? :confused:
