I am the team Mom and have to go to my first meeting tomorrow. I am still nervous since this is his first year playing LL and not Rec.

You're the team mom? Don't worry then. Just bring popsicles and Andrew will do fine! The entire team will love him (and you).

OK all, I have Orange Roughy. What do I do with it?

Whatever you do, don't bake it under a potato crust! This was one of the more memorable (not in a good way) meals Beck and I made together. It was so, so terrible. :sad2:

I want to make a pasta dish with Italian sausage, peppers and onions

When I make this, I just saute the onions and peppers with some garlic in olive oil. Sometimes I also add red pepper flakes. I cook the sausage separately, cut it up, then put in the pan with everything else. When the pasta is done, I reserve some of the cooking liquid, then add the pasta to the vegetables and sausages. I add the cooking liquid to make the sauce the right consistency. I top with parmesan cheese.

She and Leslie will turn 6 on the 21st, and I really need to do some birthday shopping. Hard to do when they are both home sick!

There are a lot of March birthdays on this thread. Liam turns nine this Friday. I am glad your household is finally feeling better.

Wendie -- I am so sorry for your loss. I hope this year gets a lot better for you.

Nancy -- :hug: You are such a good person to deal well with what is a difficult situation.

Kathy -- I hope you feel better soon!

Dinner tonight was a meatball sub that I made and a salad with greens, raisins and toasted walnuts. The photo isn't that great, but I'll post it anyway because Beck gets mad when I don't.

Wendie- I wanted to tell you how sorry I am that your family has endured another loss. I know that you are still numb and that your Dad is as well. I pray that both of these men can lean on each other in order to get through this. :hug:
 
Thank you all for your insights into my Aunts testiness. I realize that she is angry that she has no control anymore, I understand that. I know that we somehow need to make her understand that she needs to accept help from outside the family if she wants to remain home, I just was not able to make her listen today. I know that we can start this again tomorrow and will see what Gail walks into. Maybe she just had a bad night, she said she keeps "going backward" and is tired of the "reruns". She cannot stop reminiscing and it is upsetting so she sometimes cannot sleep.
 

Did Sheryl post today?? I know she has not been feeling very well, and I am worried about her.

Nancy, I'm glad everything went well Saturday. Buddy is such a softy, gotta love a man like that!:love: I wish I had some words of wisdom for you about your Aunt. We dealt with that with Bob's Mom. She insisted on staying in her home with "help" from his good for nothing sister. It wasn't good but nothing we could do or say would change her mind. So I'm sending you lots of hugs:hug: & prayers:flower3: for you.


Thanks everyone for your concerns about me this weekend. My sweet husband as handled my feeling like crapola by taking me out to eat, a lot! We went out to the movies & out with friends Saturday night, Sunday and believe it or not, twice today!

Well there's a story on that. I had to go to court this morning for the accident, which I was stressed out about. The dear man took off work to drive me to the courthouse, because I was feeling bad, parking there is bad & I was just dreading it. So he dropped me off & came back for me, then we went out to breakfast. Unfortunately since I plead not guilty, I'll have to go back next month. But Bob agreed to drive me again!;)

Boy, do I love him being able to drive again! Forget all my worries about him driving with the joystick! Him being able to help me today, made him so happy & ME, TOO!!! :goodvibes
Then we needed to go out Home Depot this evening & I hadn't cooked, so we went out for Thai food tonight.

I can't believe how much I missed here this weekend!

Today is baked spaghetti and bread. What oven temp would you guys recommend reheating it? It's fully cooked and filled to the rim of a 9x13 pan.

Sheryl- You lucky woman! Dinner out and the movies......all weekend and then chauffeured to court! It doesn't get much better than that. I have to chuckle a little about your worrying about a joystick. My friend Tom used one for years with no issues. I think guys and joysticks are a match made in Heaven.Not even going to wonder why :confused3

I am parent helper today and then to my Aunts for lunch. I have to figure out some food because I have to be back there for dinner and then Buddy and I want to get to the reconciliation service this evening. I know that we could go another time but the service is nice and then I don't have to try to remember the Act of Contrition. I'm 50 years old and still cannot get this prayer right and the poor Priest who gets me cannot even have a conversation because all I do is cry, so much for specific.....I will be happy I ever can even talk. I figure if we are lost in a group of 100 people and are lucky enough to get a Priest who doesn't know us.......Buddy and I just cannot get over the old Catholic teachings, thank goodness it is different for kids today, now if I can just get my DH to stop sharing his opinions of the Nuns he had with our Priest :scared: Good heavens, I know you are supposed to be able to talk about anything but swapping Catholic school stories with the Priest :scared1:

Thanks again for all of A's bday wishes. He really had a great time with his friends yesterday. We almost depleted Fuddruckers out of quarters for the games!

Update on BIL: I believe he came home last night. Thank you all for your prayers. They had to drain the ear and give him strong IV antibiotics. His aunt is not doing well.

We are having grilled strip steaks, curried sweet potatoes and a vegetable medley of carrots and green and yellow beans.

Happy Birthday to Andrew, one day late! BTW, if anyone has a good idea for a present for a nine year old boy, please post! I am really stumped on what to get Liam this year. He has tons of pokemon--Laura says more than his friends so I don't want to get him anymore. My Dad and his Aunt Jenny are getting him games for his DS system. John bought Liam Super Mario Smash Brawl or whatever it is called for our Wii (even though I told him not to because it is rated T--he figured he plays the other one which is also rated T--which I just noticed for the first time last week! Ack, Bad auntie!). I really don't want to give him a video game. He just got a new baseball glove...any ideas? Anyone?

So, as you can see from my picture I gave in to John's whining and did not get my pioneer woman chicken spaghetti last night. But, tonight I am making a pioneer woman recipe for sure! This is our night to eat dinner in front of the TV and watch American Idol, so I am making Marlboro Man's Second Favorite sandwich:

I have to admit though that I am going to serve it on a toasted baguette instead of that squishy bun, and I'll put lettuce and tomatoes on it (and maybe some onion). If I am feeling really energetic I will make fries to go with it....but I probably won't.
 
Becky, that looks good! I was so sure that you were not going to use the same bread as posted on that website. You always have amazing bread!

I am going to make the spaghetti dish tomorrow. I will let you know how it comes. I was looking at that website this morning and I think I have had the chocolate cake that she has listed and that was amazing.

As far as gifts, I will PM you. Not sure if you want ideas posted here in cas Liam reads over his Mom's shoulder! ;) I am going to search through A's room for ideas.
 
I'm thrilled to report that all 4 of my kids are happy and healthy this morning!! That means I get to have some "me" time! I'm going to run to the library, then to the store for some birthday gifts. I'm feeling kind of overwhelmed this year, as it's Alan's 40th birthday on the 18th, the twins 6th birthday on the 21st and Easter on the 23rd. Luckily, thanks to the Disney movie club, the Easter stuff is pretty much taken care of! Birthdays are another thing, though.

When I was pregnant with the twins, I went into labor 6 weeks early and had to be hospitalized for 2 weeks. Then they were born. I was so hoping that they would be born on Alan's birthday. He told me that if I gave him the twins on his birthday, I would never have to do anything for his birthday, ever again! Well, the doctor wouldn't agree with me having them on the 18th. She really wanted them to have more time for their lungs to develop, so I was induced on the 21st. Bummer, huh? So, I'm stuck with what to do for Alan's 40th. We are having a family barbecue on the 22nd, and I'm bringing a huge Costco cake so maybe I'll combine it for Alan and the twins! He threw me a surprise party for my 40th, but I really don't feel like doing that, a party for the twins and Easter all at the same time! What do y'all think I should do?

By the way, dinner tonight will be chilequiles a la Lauren! Green salad on the side!

Becky - As for birthday gifts for a 9 year old? I'm open as well. Jacob turns 9 this year, and all he wants is a Ripstick. The things scare the crap out of me, but I guess if I wrap him in bubble wrap he'll be ok, right?
 
Lauren -- Andrew must have been so excited about the Wii. I have to admit, I have been really tempted to get one for Liam. That would make me the Best Mom in the Whole World (something I haven't felt like lately) for a while. I don't usually spend that much money on birthday presents though.

Beck -- Your soup looked awesome. So does the sandwich. I am so tempted to make that now. I love all her pictures! I think onion rings would go really well with that. ;)

For all of you how checked the site out, Caili came down while I was reading though the instructions. She didn't have any interest in the sandwich (well, maybe the bacon part) but she saw the china plate with the birds and butterflies and immediately said, "Mommy, I like that plate. Get that!" :laughing:

I am leaning toward roast chicken for dinner tonight.

I have no idea how to handle all of those birthdays around a Holiday. My boys are 4 days apart, I was the Mom who told the Dr that I wanted them to have their own day...and that lasted not long at all. Boy, what I thought that I knew then :upsidedow The mood I am in I suggest that you take a vacation.

Becky- I was the Aunt who took the kids shopping to pick their own. I was not good at all choosing gifts for them. I added $5 on to the total I spent and skipped the card and the present. Then I just gave checks. I am a lazy Aunt as well.
 
Tonight we're having Lemon Herb grilled Chicken with Veggie Kabobs and rice pilaf.

sounds similar to what i was planning..i will make a middle eastern type of grilled chicken, with an attempted feta/yogurt sauce, veggies and rice of some type...gotta use those herbs from teh aerogarden ya know~;)

Nancy, You are a better Catholic woman than I, my dear. Is that what they call going to confession these days -Reconciliation Service!! Now you know how long it's been since I've gone!

I really had to laugh at Buddy's Nun Stories! That was my Dad's favorite "horror" stories to tell & retell! He had one that was just too much & yep he'd tell every Priest he'd see too! His first day of school, the fire alarm went off, he thought it was a real fire & he started running! He said he's running down the hall & turns around to see the Nun chasing him with her habit flying behind her. He said that really scared him because he thought she looked like a bat! So he kept running & ran all the way home! When he would retell the story he always said "There she was coming after me, her face was all red and she was so MAD! And that black thing was flappin around her head! I thought SHE LOOKED JUST LIKE A BAT OUT OF HELL! SO I just'a kept on a'runnin!! " :laughing:

I sure miss my Dad. He told that story, so many times, but I'd love to hear him tell it again!
 
WFD? Tonight we are having Alton Brown's Refrigerator Pie - basically quiche! It is a no fail recipe. I will make it with asparagus/swiss and have some grilled tomatoes on the side.

Here is the basic recipe:

Refrigerator Pie Recipe - Alton Brown

1 cup heavy cream or half-and-half
2 eggs
2 pinches kosher salt
Freshly grated nutmeg
1 frozen 9-inch pie crust

Any one of the following combinations (examples only - choose what you like):
Cooked spinach, cheddar cheese, cubed cooked ham
Bacon, Sauteed leeks, and Gruyere cheese
Cooked spinach, canned artichoke hearts, and Parmesan cheese
Roasted chicken, goat cheese, and sun-dried tomatoes
Blanched asparagus and smoked salmon

In a nonreactive, stainless steel bowl, combine the cream or half-and-half and the eggs. Whisk until combined thoroughly. Add the salt and the nutmeg. Whisk to combine.

Refrigerator Pie Rules: Heat oven to 350 degrees F. Evenly distribute the pie fillings in the pie crust. Do not overfill the crust with the filling ingredients. Do not pour too much royale into the crust. The eggs will expand upon cooking. Bake the pie until it is firm to the touch like set Jell-O, about 45 minutes. Cool the pie for at least 15 minutes before slicing.
