What's for Dinner Tonight? (recipe index in OP)

I'm thrilled to report that all 4 of my kids are happy and healthy this morning!! That means I get to have some "me" time! I'm going to run to the library, then to the store for some birthday gifts. I'm feeling kind of overwhelmed this year, as it's Alan's 40th birthday on the 18th, the twins 6th birthday on the 21st and Easter on the 23rd. Luckily, thanks to the Disney movie club, the Easter stuff is pretty much taken care of! Birthdays are another thing, though.

By the way, dinner tonight will be chilequiles a la Lauren! Green salad on the side!

So happy to hear that all the kids are feeling better! As far as the bday, can you make Alan his favorite dinner and have cake on his bday and then plan a night out for after the holiday and bday rush? Maybe have a romantic dinner and see a play or movie or even get a sitter for overnight and spend a night at a hotel with a nice restaurant, pool, jacuzzi...

Lauren -- Andrew must have been so excited about the Wii. I have to admit, I have been really tempted to get one for Liam. That would make me the Best Mom in the Whole World (something I haven't felt like lately) for a while. I don't usually spend that much money on birthday presents though.

Beck -- Your soup looked awesome. So does the sandwich. I am so tempted to make that now. I love all her pictures! I think onion rings would go really well with that. ;)

For all of you how checked the site out, Caili came down while I was reading though the instructions. She didn't have any interest in the sandwich (well, maybe the bacon part) but she saw the china plate with the birds and butterflies and immediately said, "Mommy, I like that plate. Get that!" :laughing:

I am leaning toward roast chicken for dinner tonight.

Laura, Stop feeling that way! You're a great Mom! Andrew does love the Wii...I do not like spending that much on his bday either but Tom spoils him and loves video games too. I am more of the budgeter, Tom the spender...don't get me wrong, I spoil A too...its hard to say no when he gives me that look with those big brown eyes...

Nancy, thanks for the prayers. I meant to tell you earlier...good luck in confession...I have a friend that I grew up with that had the hardest time with that...whenever we had to go to confession in school, she would get so nervous and puke in church. The nuns had no pity and made her go face to face! :scared1: How mortifying is that for a child?
 
Lauren, Happy Belated Birthday to Andrew!!! (sorry I missed it in my catch up post yesterday) He must love his Wii, well it sounds like you are all enjoying it! Glad you're BIL is doing better! Prayers for his Aunt.

I woking up thinking spaghetti & meatballs, then I changed my mind to Grits & Grillades & now someone mentioned STEAK! Arghh! Probably whatever is easiest to get out of the freezer. :laughing:

I've just had some Mean Mom episodes with Liam lately...like when I made him go to school when he said he felt like he was going to throw up -- total fabrication -- but he was crying on the way out the door and then there was the showing up late for dinner and well, the list just goes on and on in his mind I am sure. He's just at that age. Of course, if I get him the Wii, I will be the Mean Mom who doesn't let him play it every waking hour. :laughing:

Any great ideas for tilapia? I bought it on sale last night and want to fix it tonight but am not sure what to do with it this time. Any inspiration? (I'd love to grill it)

Caili must have gotten her taste from Aunt Becky?! ;) And you know you are so right about Liam! Can't you hear it now? "I don't even know why you bought it for me, if I can't EVER play with it?" What the heck? Yes they do get to THAT age! Don't let it get to you, just keep doing your Mom thing! One day they actually do appreciate it, I promise! It just takes a veeery long time! Our DD now 25, has recently, actually thanked us for not letting her do or have some of the things she wanted! :eek: Bob describes it, as the Best Parenting Day of his life!!! :cloud9:

Aimee, If it's nice thick pieces you could grill it, but I've found it difficult to grill. Tilapia is a very delicate piece of fish, that tends to fall apart easily.
If you grill it, use some type of grill pan. It has a really mild flavor that goes well with practically anything though. I usually pan-fry & top it with some kind of sauce.
 
Nancy, You are a better Catholic woman than I, my dear. Is that what they call going to confession these days -Reconciliation Service!! Now you know how long it's been since I've gone!

I really had to laugh at Buddy's Nun Stories! That was my Dad's favorite "horror" stories to tell & retell! He had one that was just too much & yep he'd tell every Priest he'd see too! His first day of school, the fire alarm went off, he thought it was a real fire & he started running! He said he's running down the hall & turns around to see the Nun chasing him with her habit flying behind her. He said that really scared him because he thought she looked like a bat! So he kept running & ran all the way home! When he would retell the story he always said "There she was coming after me, her face was all red and she was so MAD! And that black thing was flappin around her head! I thought SHE LOOKED JUST LIKE A BAT OUT OF HELL! SO I just'a kept on a'runnin!! " :laughing:

I sure miss my Dad. He told that story, so many times, but I'd love to hear him tell it again!

My Mom insisted I was close to a Heathen and if she ever found out that I tried to go to Confession online she would have been mortified. (I'll save you the research, you cannot do that) Then I tried to find a service where the Priest would do a blanket absolution. I couldn't find that nearby either.

Then.....my DH tried to tell me that he had nothing to confess, since he married me all of his little issues really can be laid at my feet. So his answer was to try to get me to go for him!:rotfl2::rotfl2::rotfl2:

WFD? Tonight we are having Alton Brown's Refrigerator Pie - basically quiche! It is a no fail recipe. I will make it with asparagus/swiss and have some grilled tomatoes on the side.

Honestly, you are feeling badly because you are a good Mom, if you were not you would never have a second thought and you would never worry about your decisions. Parenting is the toughest job, you balance your love for your kids by trying to do what is best for them and what makes them happy. Unfortunately what makes them happy is often not what is best and those little turkeys know how to push every guilt button you have. You are doing a great job with them :thumbsup2

Honestly, you are feeling badly because you are a good Mom, if you were not you would never have a second thought and you would never worry about your decisions. Parenting is the toughest job, you balance your love for your kids by trying to do what is best for them and what makes them happy. Unfortunately what makes them happy is often not what is best and those little turkeys know how to push every guilt button you have. You are doing a great job with them :thumbsup2

On dinner tonight, DH may be a very dissapointed man, he asked for the spaghetti & meatballs. I'm going to fix that, but in an effort to be healthier, I'm going to try making them with ground turkey & turkey italian sausage. I'll let y'all know how they turn out.:confused3

I've been making my meatballs with ground Turkey for about 4 years and my Italian DH has yet to notice they're not beef.... :lmao:

I like Lauren's idea about a little getaway for you and your DH for his 40th, since you have so much going on right now.
Brendan doesn't have one, but a LOT of kids in the neighborhood have those Ripsticks. They all seem to be having a ton of fun on them.


Laura ~ :hug: I feel your pain. You aren't the worst mom in the world because I am. I hate the tween years. I'm too strict and everything I cook is awful. I had to stop at the store the other day on the way home from picking Brendan up and he just about died becuase there were other kids he knew there and he didn't want to be seen with me. BTW, the other kids were with their parents too. :rolleyes: Being a mom is a thankless job.

I'm good... It's just my cooking habits have changed for a while..DD became a vegetarian and DS isn't hungry a lot of the time with ADHD meds..I've gone from feeding 7 a year or so ago to feeding 3...I can't make as many big meals. Plus I was dieting for a while before the wedding so cooking became, not so fun

WFD? I forgot to post it before. DS hasn't liked anything I've made lately so I'm going with something I know he likes, even if he does say it's gross. BBQ pork chops with doctored up SBR's, tater tots, and corn.

Ed and I have been together for 14 years so that's probably why you thought that.


I'd love to do a Disney cruise one day but it always seems so much cheaper to use my military discount on Carnival..Military rates on DCI are few and far between it seems

I've been given some bad news from my one and only employee of 14 years, she's quitting and her last day is Friday!!!:eek: Nice, huh?

Well the bottom line is that I have to do both of our jobs until I find some help so I won't be around here quite as much. I could sure use some prayers, I'm too old for this to be happening to me.:sad1:

I have been cooking with ground turkey as well. My DH has gotten so used to it I don't think he can tell either. Either that or he is just not complaining becausee i have been know to bite :thumbsup2
