No beans today. I had a dentist appt scheduled for this AM so I figured the po-boys would go together quickly later. Had to cancel the appt, still not feeling well.

Has anyone decided on their Easter menu yet?

I am thinking that tonight is meatloaf night but I want to make a italian style one-does anyone have a recipe for one-I am thinking of one thats kind of like a meatball?
 
Afternoon all--

If you could all spare some prayers.....my Godmother passed away last night after a very brave fight with leukemia(sp).7 weeks from my own mother passing....My poor Godfather and my own father......bestfriends and widowed within weeks of each other.....my heart is broken.....We are all at peace that she no longer suffers, yet the loss is overwhelming. I always called them "aunt" and "uncle" though there was no blood relation.....that never has mattered to any of us. My poor "cousins" I spoke with them today, and at least I could offer them a shoulder that understands what it is like to face the day knowing you no longer have a mother....One of their daughters is trying to get a flight home as she lives in Australia...please pray that she has a safe flight.
Feels like being sucker punched in the gut..........


Very sad...you are all on my prayer list.

Gretchen- I am so sorry for your loss. I understand why you are not as sad as you expected to be. My Aunt is 95 and she is just waiting to join the rest of her family so when she is called I will miss her but I will also be happy for her, if that makes sense.

It makes perfect sense. It was how we all felt today at the funeral, knowing she was with her daughter who she had missed so very much.


We are taking Andrew and a few friends tonight to Fuddruckers.

I haven't been there in years, but I used to love the burgers. I hope you all have a great time.


WFD tonight I think is going to be chicken and rice casserole. It's nice to be cooking for more than just DH and myself (since the kids don't like my cooking):rolleyes:

I use a wet batter on mine, which is just half a bottle of beer, a cup of flour (or more if the batter is too wet...it should be pancake batter-like), and salt and pepper. I've never had a problem with it falling off. With dry coatings, like on the onion rings, the key is to heat the oil to the proper temperature -- at least 350, but I usually fry closer to 375. If it isn't hot enough, the coating will slide right off (as Beck and I know from our failed attempt at fried calamari one time). It is also important to have enough oil in the pot so the food doesn't get stuck on the bottom. If it looks to me like it is sticking, I will GENTLY unstick it.

I hope you get to feeling better soon. Is this day 5 or have you felt poorly longer than that? Not the flu or anything you need to see the doctor about is it?

As for Easter, I think we are getting together with Kenny's family this year. We normally split the cooking duties. I have the baked mac and cheese, corn pudding, and sweet tea. We will also have ham, potato salad, sweet potatoes, butter beans, and too many desserts to count.

Wendie, I'm so very sorry. I've been praying for you and will continue to do so. If I can do anything at all for you, just ask.

Obviously the funeral is over and Mom has packed up her room at the assisted living center (they told her it had to be out today). It was a beautiful service and the minister did a wonderful job. But I am so glad it is over.

Tonight's dinner is comfort food - country style steak, gravy, rice, and field peas with snaps.

I decided on trying a new Pork chop recipe. It's in the oven now and smells really good. I'll let you know if it's a keeper.

Albertsons had their 8 piece fried chicken for $3.99 on Mondays so I bought that for dinner. I'm making Velveeta bacon scalloped potatos, right out of a box, to go with it.

Diet be damned.

Thank you Janice. I actually have the easier job there, I usually don't let anything bother me but I listened to my sister who had a terrible morning there and it is discouraging. It is not a secret that I do not like my cousin but my sister is going to have a little talk with her, and as she usually has the awful morning shift she is going to be feeling more pain soon. I do feel badly that she is going to get pressure from Gail, but somehow this has to improve. There is really no good answer, if she needs to go to a nursing home she will not do well, and if she tosses the aides out that will reduce her options. My cousin pushed for control of her assets adn her life so it will fall on her to fix this.
 
Ok the pork chop recipe is a keeper, but I warn you it not diet friendly.

Simple pork chops

4 boneless pork chops
1 teaspoon seasoned salt
1 teaspoon garlic powder
1 teaspoon dried parsley
4 teaspoons butter, softened
4 teaspoons mayonnaise
1 cup shredded sharp Cheddar cheese

Preheat oven to 350 degrees F (180 degrees C).
Place pork chops in a baking pan. Spread 1 teaspoon of butter over each chop, then spread 1 teaspoon of mayonnaise over butter. Season each one with seasoning salt, pepper and parsley. Sprinkle 1/4 cup cheese over the top of each pork chop.
Bake 35 minutes in preheated oven, or until internal temperature of the chops has reached 160 degrees F (70 degrees C).

Gretchen--I am so sorry....somehow I totally missed replying to your post the other day and I had it on the top of my head....I want to express my heartfelt sympathy to all of you.....I loved the background story you told all of us...sometimes life sets us up for wonderful things.....I understand how it was easier to let her go as she wasn't the person she would have wanted to be...It was like that for my godmother, it makes it bittersweet....I send you prayers and big big hugs!!! Thank you for thinking of me and again I am SOOO sorry I spaced on replying!! I feel awful about that, :(

Nancy--I am so sorry for the stress you and Gail (and all others involved) are enduring. I wish I lived closer to help lend a hand or at least come and sit with you, and whip us some tuna sandwiches for Buddy, ;) My grandfather didn't want aides at first then I told him it was either that or a nursing home, he started to understand how serious it was. I hope that your Aunts situation becomes a smoother road for everyone. Let us know how Gail makes out. Feel free to PM me if you need to talk, and if there is anything I can do for you all from Maine!!

Oh Nancy. I'm sorry, but I think this is a fairly common thing in older people who find themselves growing more and more infirm. My Dad's mother was that way, more and more so towards the end. She went through at least 10 aides before they found one who could tolerate her abuse and my grandmother did not fire that one because my aunt finally lost it and told her mother in no uncertain terms that the next aide would be one supplied by the nursing home. There were hurt feelings for quite a while, but like I said, this aide made it until the end. My grandmother was adamant that she did not want to go to a nursing home and thankfully, my dad and aunt were spared that decision. My thoughts and prayers are with you my dear. There are no easy answers for this situation, but you have beared up so beautifully throughout all the other tribulations in your life, I have no doubt you will rise to this problem as well. Good luck and know we are all pulling for you.
