Sheryl -- At Caili's last skating competition, all these cars without permits parked in the handicapped spots. I don't get people like that. To the rink's credit, they made one announcement about the vehicles and then towed anyone who didn't move.

I am trying something new tonight. I am making homemade naan (this already has several things going against it, not the least of which is that I had to abandon the kneading to go pick up the kids from school), and Becky's vindaloo sauce which I am using as the base for mutter paneer. We'll see how it goes. I'll take pics.

I didn't even attempt to photograph the pot roast last night. It may not have been pretty, but it sure tasted good. I will always make my pot roast in the slow cooker from now on.

Laura, I'm impressed that the rink towed the cars! Around here, the businesses could care less. Remember a while back, I posted about us being stuck in Home Depot parking lot for almost an hour.
HD didn't even want to make an annoucement about the truck blocking Bob's ramp!

Your dinner sounds wonderful! When you have time would you post Becky's recipe for vindaloo, I'd like to see what she's doing differently from the one I'm using.

Good luck with the Naan! I tried this recipe once but haven't made it in a while. Is this recipe below Becky's? I have it in my folder, but I'm not sure where it came from. If it isn't the recipe your using, would you post it when you have time, please?

Naan
4 cups all purpose all purpose flour
1 1/4cupsmilk
1 package dry yeast
2 tsp nigella seeds
1/2 tsp. Baking powder
1/2tsp.salt
1 egg beaten
2 tbsp. oil or ghee (clarified butter)
3/4 cup plain yogurt melted butter or ghee for brushing
sift the flour into a large bowl and make a well in the center. Warm the milk until it is the temperature of your hand. Mix a little of the milk with the yeast and set aside to let it get frothy. add the yeast, nigella seeds, baking powder and salt to the flour. In another bowl, mix together the egg, ghee, and yogurt. Pour this mix into the flour, along with 1 cup milk. Mix to form a soft dough. If the dough seems dry add the rest of the milk. Turn onto a floured surface and gently knead for five minutes, until smooth and elastic. Put dough in a lightly oiled bowl, cover, and leave to rise until doubled in size. preheat the oven to 400 (if you are using a pizza stone, put it in to heat now--put it on the top rack of the oven). place a roasting pan half-filled with water at the bottom of the oven (make sure the pan has water in it through the cooking process). punch down the dough, kneading briefly, and then divide into 10 portions. using the tips of your fingers, spread the dough out to a teardrop shape. using a floured peel, transfer the naan to the oven, 1-2 pieces at a time. If you don't have a pizza stone, cook the naan on a greased baking sheet placed on the top rack of the oven. Bake for seven minutes, then flip the naan and bake for 5 more minutes. Remove the naan fro the oven, brush with butter or ghee, and cover with a cloth to keep warm, Repeat with remaning dough. makes 10.

Come on down! However, I just looked at the weather for tomorrow and it's not going to be as warm as I thought it was going to be - 75°. I think we might go to a big outdoor flea market that I've wanted to go to since we moved here instead.

Sheryl -- Always happy to help. :thumbsup2 Here are the recipes:

Beck's Vindaloo (Warning: Spicy!)

1 big onion, minced
5 cloves garlic, minced
1 inch fresh ginger, peeled and chopped
1 tbsp tomato paste
1 tsp garam masala
1 tsp tumeric
1 tsp hot paprika
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp cayenne
14 oz can tomatoes (mine was 14.5...used it all)
2.5 tbsp white vinegar
1 c chicken stock
cilantro, for garnish

Saute onion in 1 tbsp oil in pot until soft. Add garlic and ginger and cook until fragrant.
Put mixture in food processor and add remaining ingredients, except chicken stock and cilantro. Process to a paste.
Return to pot, add chicken stock and simmer for an additional 20 minutes. Taste for spice (I added salt) and add main ingredients (I added paneer and peas, but you could add chicken, pork, shrimp, lamb, other vegetables...etc.)

I think when I make the leftovers, I am going to try adding a little cream. I like creamy mutter paneer sauces.

Naan (this is a recipe adapted from Gourmet)

1 tsp yeast
1/2 tsp sugar
1 tbsp warm water
2.5 c flour, plus up to 1.5 c more for dough and extra for dusting
1/4 tsp baking soda
1 tsp salt
1/2 tsp poppy seeds (optional)
1/2 c warm whole milk
1 c plain whole milk yogurt, room temp
1/3 c finely chopped onion
2 tbsp butter, melted
1 egg, lightly beaten
3 tbsp mixed seeds (ex: nigella, poppy, sesame)
2 tbsp butter, melted
Kosher salt for sprinkling

Stir yeast, sugar and water together until yeast is dissolved. Set aside for five minutes until foamy.

Sift flour, baking soda and salt together. Mix in poppy seeds. Combine milk, yogurt, butter, onion and egg in separate bowl. Make a well in the flour and add yeast and milk mixture. Stir together until soft, sticky dough forms.

Option One: On floured board, knead dough 10 minutes, adding additional dough to prevent sticking.

Option Two: Using the dough hook of stand mixer, knead dough until smooth. Dough will still be soft and slightly sticky.

Turn dough out into oiled bowl, turn dough to coat on other side with oil. Cover with dishcloth and set aside to rise for two hours.

Preheat oven to 500 at least one hour before baking and place pizza stone on the floor of the oven (if gas) or lowest rack (if electric). Remove other racks.

When dough is finished rising, divide into four pieces on a floured board. With floured rolling pin, roll into naans approximately 12 inches long and five inches wide. Place on floured baking sheets, cover and let rest 10 minutes.

After 10 minutes is up, flour a pizza peel, place one naan on it, brush with melted butter and sprinkle additional seeds, then transfer to pizza stone in oven. Bake 5-6 minutes or until dough is bubbly and starting to brown in spots. Keep baked naan warm by covering with foil until all naan is baked.

I bought it. My sister, Liamsaunt, has made it herself with good success. However, she just found an Indian grocery near her that sells paneer for much less than it would cost to make, so I don't know that she will make it herself anymore. If you want to make your own, I am sure she would post the recipe she used.

Hi Hedy, I've made the paneer at home. I'll have to hunt for my recipe, it's in my old file (a huge envelope) from my pre-computer file keeping days. It's really very easy to do & came out just like the local indian rests. Unfortunately, I haven't been able to find a local shop that carries paneer.
 
Here is tonight's dinner. I decided to do a southern spin on Brown Derby's grouper. It came out really good! I did a light zatarain's corn meal breading and pan fried the grouper in olive oil & butter. I topped the grouper with a sauteed sweet red onion relish & lemon butter sauce. Served it with sauteed fresh spinach & New Orleans style boiled & smashed potatoes (boiled in crab boil w/ garlic & onions) as sides. Sorry the pic isn't better, I'm still photographically challenged!

We had a surprisingly good CHEAP chardonnay with dinner. Clos du Bois which cost around 8-10 bucks around here. Sort of an old style chardonnay, that I've been spending big bucks to find. Velvety & buttery, but this one had a nice spice to it & a great green apple, melon taste!

The movie was good. I had read Anne Boleyn's story but never realized she had a sister. I skipped my fish sandwich so that I could have popcorn. Big mistake :headache: I never get anything at eh theater, I cringe at the cost and generally don't like it so I forgot how yucky movie popcorn is. I bought a gynormous container and it made me feel sick :scared: I ended up eating that darn casserole when I got home and leaving the big bag in the garbage!

Glad to hear the movie was good! Sorry the popcorn wasn't! I always spend the money & then am so sorry after! Do you think she really had a sister? I'll have to go look that up!

Tomorrow if the weather is good we are going to go to a local fest. Good food & good music for a good cause, local police & fire depts. If the weather's a bust, we are going to try to hit the movies!
 
Hey all---Once again I missed a day and a half......I spent most of yesterday in bed with an awful migraine.......I didn't shake it until 4 this morning. Last night I made the boys burgers and cheese fries. I feel 100% better today though, so everything I didn't get done yesterday I had to do today.


I hear all this talk of beaches and it makes me want to scream!!!!! My "dooryahd" is going to be once again full of snow...It is 11 below and we are going to get hit starting around 3am with 14-17" of freakin' snow!! I would go out and wave the white flag but noone would see the damn thing!!! Can you tell I am at my wits end with snow....and true to form we have more on the way Tues and Thurs....


Nancy--I am glad to hear that buddy's aunt is doing a bit better...bless her heart! I am glad to hear you had a chance to get out and enjoy the movie, even if the popcorn was blech!!

Kat-- I am glad to hear the Kyles "friend" and her teammates did so well!!

Sheryl--I am sooo disgusted at the lack of respect that Bob had to deal with regarding the Handicapped spot.....I am one, who when I see someone pull into a spot and they do not have a tag...I kindly remind them they need to have it hanging and when they give me attitude I tell them they can either move their car, hang their tag if they have one, or I will call the police......2x I have had people roll their eyes at me and walk off, and when they came out their car was gone......guess they thought I was not serious.......most people swear at me then move their car.

Lindsey-- I missed your anniversary....I am so sorry...but I am so happy to "hear" that you had a nice 2 days....you sound like you are feeling a bit better then the other day.

Janice--I hope that you and Alex are feeling better!!

Aimee--If ANYONE deserves a night out it is you my friend.....I am praying for you!! I hope it was a relaxing evening out!!

Good morning! It is sunny here we kind of lucked out on the snow yesterday. Only a couple inches. I was talking the one of the teachers at my job yesterday. I told him I thought we would go from snow and cold to extreme heat in a matter of days. It seems we don't have the seasons anymore.


Wendie I'm glad you were able to get rid of that migrane. Make sure you are eating right and resting. Those seem to be my triggers.
We are supposed to get more of the white stuff too. I refuse to acknoweldge anymore maybe if I ingore it it will go away:idea:

Sheryl I might to reply yesterday l am sorry that woman so inconsiderate. Your husband has every right to get angry. We seem to live in a "Me" society. I hope it changes.

Our BIL is here helping with the downstairs remodel, so I am making Shepherd's Pie. I think I will serve a salad and bisquits too. My SIL. BigMama, BIL and their son are going to WDW twice this year and are going to Raglan Road. When looking at the menu, he said he couldn't have Shepherds Pie since he likes mine the best! :)

Lauren - Last night they ate at San Angel, :scared: . I used to love that place too!

His back is still hurting a bit, enough to keep him from throwing today. We've already gotten three calls from some Dads asking how he is, I swear I feel like screaming at them to get a life, these games mean NOTHING.:headache:

Your shepherd's pie sounds so good, Ive tried that recipe, last time you posted it and we all loved it!
 
Kathy- I went to one of Kim's games last year and a Mom behind me was detailing every action of every kid. Gail said she maintains stats on every kid on every team :confused3 And then they question why their kid may not be a good sport. Make Kyle rest his back the game will be there next week.

Lauren- Don't you like to hear that your food beats the Pro's? :thumbsup2 My Dad was an amazing gifted Chef but he loved to eat home cooked food cooked well.

Wendie- SNOW!!!!!!!!!!!!!!!!!!!!!!! Buddy is out cleaning the driveway now before the rain comes and compacts it. He is sick of snow as well, I don't know what we would do if we ad the snow that you, Janice and Glynis have to endure. I'm glad that the headache is gone.

Sheryl- Have fun today. I never get food in the movies, I don't know why I did last night.

I have to figure out dinner for tonight. Kady has a tour of the Church this afternoon and I'll pick something up after that. Have a great day All!
 
Some parents are WAY too obsessed with their kids' sports. I am bracing myself for this year's Little League season. Liam will be at a more competitive level -- they keep score, have playoffs, have an All-Star game, have kids pitching, have only nine players in the field and in the batting order at a time, etc. -- so I am just hoping he gets on a team with a good coach, good kids and good parents.

Kathy -- I hope Kyle's back feels better soon. Sounds like it is better for him to rest this weekend. Oh, and congrats to the dance team! :thumbsup2

Nancy -- I used to work at a movie theater, so you would think I would be wise enough to avoid theater food...but no. I always get something and regret it later.

Sheryl -- The grouper looked good! Now I want fish for dinner.

Wendie -- Ugh...and I thought I was tired of snow! We lucked out today, and the storm turned out to be mostly rain. I am glad your migraine is better.

Lindsay -- I can't believe it's ONLY March! This winter has seemed SO long.

Dinner tonight is going to depend on whether I motivate myself to go to the store. If I do, I now want fish, thanks to Sheryl. If I don't (the more likely of the two scenarios since the kids will protest the store visit and possibly the fish) I will have to figure something out with what I have in the house. Still thinking on that one.
