What's for Dinner Tonight? (recipe index in OP)

No, not at all. I actually find this fascinating. Isn't it amazing how much a delivery of a story can impact you? I remember one of my professors in college, his specialty was Beowulf. Every year, at the end of the semester, he would invite the best students to watch him perform parts of it in the original Old English, which is just nothing like our current language. But, because of his facial expressions, gestures, and vocal tone, we were able to follow the story. If anything, it was more frightening!

When Laura and I lived together, we used to do this also. We called it "The Game." We had all of our essays, poems, etc. that we owned catalouged and their names stuck inside a tin. You'd pull the name of a work and have read it out loud. We actually graded each other on our delivery. Ideally, you had to have it memorized, and points counted for gestures, realism, and emotion.

OK, Laura, I have officially outed us as geeks!

Very cool! I took a semester course on Beowulf, and had to read it in Old English. Not an easy thing, but really cool!

If you ever have a chance to hear a professional storyteller, do it! It's amazing how they can draw you in and paint such wonderful pictures with their words!

Can you share your stir fry recipe? I haven't found one I love yet =)

Tonight I am hosting a Mom's Night Out -

I am kind of winging the recipe but if the sauce is good, I will let you know what I do...its a hoisin base.

Have fun tonight! Can I come? I need a night with the girls! :crazy2:

I just found out that the Food & Wine Festival at EPCOT is starting the weekend we planned on going to Disney....anyone know how this affects crowd level in the parks????

Oh, Lucky you! I am not sure of the crowds but you'll love F&W!!!

Good Afternnon All,:wave2:
Boy, you guys weren't kidding when you said it was hard to keep up after missing a few days. I am going to be a Monday-Thursday poster with an occasional weekend check in here and there. Weekends are just to busy and I am not near a computer. I am trying to go back and catch up on what I missed (tough job)
I started back on the diet this morning:crazy2: (something you will get used to hearing every monday!) so Dinner tonight is baked haddock with onions, brown rice and steamed broccoli. Simple and low fat!
More snow again, tomorrow so I am trying to plan something for the crockpot. Any ideas?

I am here pratically every day and can't keep up...;) We started weight watchers last week and have been doing very well. What are you thinking of cooking in the crock?

I do chicken alot with apricot preserves, catalina dressing and onion soup mix...its pretty low cal if you use all fruit and light dressing. My crock cooks fast so I cook on low for 4 hours.

Lindsay - I'll keep my fingers crossed that you guys can work this whole thing out with Kevin!

Dinner tonight is Lemonade Slow Cooker Chicken. I'll make some brown rice to go on the side, with some kind of veggie. My kids have been asking for baby carrots, so it may be that.

We thought we were in the chicken pox all clear, but Jacob woke up this morning with a suspicious red dot on his chest. It could be a spider bite, but since Katie had the pox, and the incubation period is 14 days, it could be chicken pox. I kept him home from school and we'll see if any more spots show up. If not, it's back to school for him tomorrow.

We are getting a winter storm right now, but the weatherman has promised that our temps will get up into the 50's by Wednesday! Keep your fingers crossed!

Hoping for the best - no pox!!!;)

I have boneless chicken out so I will figure out something in a bit.

I have an OT question and I know I can count on you all to slap me if I need it so please be honest.

I told you we are going to have a wedding next Valentines Day and I really am thrilled for her. Marisa told me the conversation about the dress for Kady did not go well on Friday but I thought that she was reading too much into it so today I called to feel things out. My SIL is going to be 51, her fiance is going to be 60, both are trying to get annulments and have started paperwork, nothing sent in. Both have had formal weddings before.

She is planning a wedding wedding, with a bridal gown (no train) bridesmaid type dresses for me and her friend (cherry) and wanted to have DD order Kady's dress from an online site. So...I said please get your dress first, wait until the end for Kady, alterations are going to cost a lot if you try to order a dress without even trying it on one year in advance. Dead silence. "Mom said she will pay for her dress." Excuse me. No one is complaining about a price, DD said she would even have a dress made if that was what you wanted, she just does not want to get one so early and would prefer to get one at a dress shop so that she can be fitted. She can pay for her dress. "No Mom said she would." Okay. I get the message.

My question. I am a Maid of Honor. I know now that she is planning the formal wedding thing and is planning on us wearing traditional attendants dresses. I was planning a ladies tea or something to honor her as the day grows closer. I was not planning a shower, they already had that and he owns his own home. She was all set up in her home until she moved back with her mother. I think I am a dinosaur and am way off track here. What do people normally do?

She was really angry with me over the little dress conversation and I did not say much, just that for a little one it is much too early, and that it may be money better spent to pay more and have the dress ordered to fit. I also did say that she is so short that a red bottom that is tea length may pull her to the floor. Okay I did say too much, but I don't want to rain on her parade, I just don't know what I am supposed to do here.

Oh Nancy, I am so sorry that you are going through this with the wedding. That is why I did not want any attendants etc for my wedding. I had the big wedding and just wanted Andrew up there with me...yadda yadda yadda.

Its crazy to get Kady's dress now. Who knows how she will grow, etc. I would open my mouth just like you did...sometimes just pointing out the facts will help a person (your SIL) make a better decision but this time it didn't. Just go with the flow at this point unless she wants something totally out there...

As far as a shower, I do not think its necessary. A tea/luncheon that you are talking about would be sufficient and appropriate. Maybe throw your ideas out there and see what she says.

I hope this makes sense. I am basically trying to say, you did nothing wrong so don't second guess yourself. :grouphug:

Glynis- Hoping for a poxfree Jacob :thumbsup2

Laurie- I miss a lot and I check in several times a day.

Janice- Doing the no snow dance right now. No one is watching so I hope it still counts. Donny is flying into MI today and he said there is snow coming there. He does not care but his coworkers are from NC and they are less than thrilled.

Lauren- I thought that I was losing my mind. I have to tell you that the dress for Kady is hideous, Ivory sort of empire waist but not quite, fire engine red bottom, calf length, and it had tulling poking out. She is way too short for that. I said, "Gee, she could wear an Ivory dress with a red sash, then she would not be a matching problem for anyone." Again, deadly silence.

I remembered your beautiful dress and know my sister had one similar to yours and thought that would have been so lovely. She wants a wedding gown. Lauren, I am not going to say anything else, but I am not looking forward to a giddy Bridezilla wannabe. And I was offended a bit when she made it seem as though DD was too cheap to pay for a dress. It is common knowledge that Kady is an indulged kid when it comes to clothes and that when DD and SIL are done, Nana and Pa pick up "extras" because we are not into buying toys and enjoy seeing her dressed cute. DD would never skimp on her dress and would not think of trying to save $20 especially on an ugly dress.

I forgot to tell DH that I was in the wedding, (actually I forgot to tell him that they were engaged :confused3) so this morning he just kept shaking his head.

I was thinking Lindsay may be getting off easy if her two lovebirds are eloping because I wish these two would.

Hi y'all,

Not much cooking tonight. Saturday I grilled some rib-eyes & lots of veggies, so I'll rework that into fajitas tonight.

Sheryl- Now I'm jealous all over again! I love the pic of the three of you on the track, how cool was that, and I can just picture Bob checking everything out, Buddy would forget to breath ;)

I also would like to know about renting points. It looks complicated but people manage and keep doing it so it seems to be a win-win. I read the stay is about 1/2 price and that is a kicker.

Nancy, When we got into the garage & pit areas he was crazed! I'm so glad he was able to do it!

We've rented points for ourselves & last week found & closed a rental deal for my SIL. If you go on the DVC rental section here on the DIS, people will list points for rent. You're 1st questions are how much per point & the time frame they can be used. Then you need to decide where you want to stay & how many points you will need. Most resorts are around 12 points a nights during the week, more on weekends. I found someone selling their points for $10 a point. So SIL was able to book 5 nights (Sun-Thurs) at SSR for $600! The renter makes the reservation in your name, then you either get written confirmation before paying or get on a conference call with DVC to get confirmation. It's best to use paypal to pay them.

Sheryl - The pictures are great, but I have to admit that my first thought was that your Mom didn't look happy in any of them. Did she have a good time or is she just one of those people who don't ever smile in pictures? Not that it's any of my business, but I figured if she wasn't happy it made your trip not as enjoyable.

She did have a good time! For some, she thinks she looks awful when she smiles! :confused3 I tried hard to get pictures of her smiling & she just wouldn't! I even showed her the pics on the camera & told her she looked like she was mad or having an awful time! That didn't work either!

Becky, Yummy food as usual! Did you use Stephanie's recipe for the Vindaloo?

Laura, Cute Cute child!!! Love those pics!:goodvibes

Nancy, So sorry she acted like that! I don't understand her getting upset about not buying a child's dress a year ahead of time???:confused3 And sorry that Kady's dress is going to be ugly! But she'll look cute no matter what! Has she picked out what you will where yet? :scared:

Oh Sheryl, Marisa will not put Kady in an ugly dress, not for anyone. She told me that she will pay for Kady's dress and that she will go and "help" choose it. It is a sheer sleeveless dress so that was a big fat no from Marisa anyway. I am afraid that she is shopping online for me as well. I am afraid that this is going to be a long year, what is fun and appropriate for a 30 YO is not as cute for a 50 YO. I am so not going to be happy in a cherry red bridesmaid dress :scared:

Nancy, This really sounds like it's going to be one of those weddings! Good thing for you, that puffy sleeves are out! ;)

Hey y'all, I have a question? I know Lauren want's to see & hear about the WDW restaurant's we did on this last trip. Does anyone mind if I do a short rest. review here? I only have some pics, just of Raglan Road & Jiko. Not enough to do a "real" review, but I don't want to bore anyone that's not interested either.

I don't mind at all!!!! ;)

One question, how do you pronounce Jiko? Does it start with an "H" and "Gee"...is the "i" long? I always sound like an idiot when trying to say the name of that place!!!

:rotfl: Geeko with a pretty african accent, of course! :lmao:

Nancy, you have one LONG year ahead of you. I am sure it will all work out but you are gonna have to have alot of patience.

I hope she does not pick out anything too bridesmaidy. I remember shopping with my sisters for my first wedding. What fun that was!!! :scared: My sisters are all older than me...the oldest being almost 20 years older and they didn't want anything foofy, wanted something they could wear again, etc.

We wound up getting a really nice tea length, madarin collar, button down Jones NY dress. I let them all pick out the shoes they wanted and have their own alterations done.

I hope you are able to get a decent dress...and a decent color. Cherry red is not for everyone...

Patience, I'll keep wishing you some! :upsidedow

Well, when the pretty little hostess says it, with her accent, it's sort of a clipped long O. That doesn't stop you from worrying about your Jerseyian pronuciation does it? ;)

Preparation
Preheat broiler.

In a large pot over medium-high heat, heat two turns of the pan of EVOO, about two tablespoons. Add the ground pork and brown, breaking it up with a potato masher as it cooks, about 5-6 minutes.

Add the fennel seeds, crushed red pepper flakes, salt, freshly ground black pepper, garlic, onion and cubanelle peppers. Cook until the veggies soften, about 4-5 minutes, then stir in the tomato paste and cook for about 1 minute. Mix in the parsley, brown sugar, balsamic vinegar and chicken stock. Let the mixture come up to a bubble then reduce heat and simmer, about 10 minutes.

While the filling is simmering, split the rolls in half and toast them. Once they are golden, remove them from under the broiler and sprinkle each with about a palmful of Parmigiano Reggiano cheese. Place them back under the broiler to melt the cheese.
To serve, ladle the mixture onto the bottom half of the ciabatta rolls. Garnish each sammy with basil and serve with a salad alongside.
