What's for Dinner Tonight? (recipe index in OP)

I am grilling bacon cheeseburgers tonight - not sure what the side will be. Maybe fried potatos? Mac and cheese? Not sure yet.
 
Aimee- once again my geography is not good. Are you any where near the oil refinery blast and are you all okay? I know we have some Texas people on this thread and hope everyone is far away form this.
 
Dinner tonight will be chicken dumpling soup. It's actually from a Disney cookbook, and the recipe is actually called "Snow Day Soup". It's a version of chicken dumplings that kids as young as my kids can help make, and so they want to try it. We'll see if it's any good. I'll be making a cherry pie to celebrate President's day. It's a tradition my mother started when I was in kindergarten, and I like to carry it on. Of course, until recently, I would just buy a premade cherry pie, but I've found a recipe that I like and that is easy, so I make it myself now.

I'm off to shower, and then run some errands. Have a great day everyone!

Would you share the pie recipe? i don't bake pies often and when I do they are not generally fruit pies, but I want to try a cherry pie for Washington's birthday. My Mom's birthday as well so I want something a little special but no cake.
 
KAthy- I am jealous you can grill. We have warmer weather but it is pouring out.

I don't think I am going to cook this evening. We have errands this morning and then if Kady want to go to a movie Buddy and I will take her. Then I need to go to my Aunts and help her with dinner and bed. I think I'll call and see if she wants a fish sandwich, my cousin said that they called and asked her on Friday and she ate one even though she had just finished lunch. No wonder she would not eat any dinner for me. If I do that I'll bring some home for us, I am truly a junk food fast food junkie :lmao:

Actually it's going to be a little chilly this evening, in the fifties. But I'm determined to grill these big ole chops before my boy leaves for Texas.:woohoo:

Your Aunt sounds so much like my Dad, he wouldn't turn down a fast food sammie even if he'd just eaten a four course meal.:lmao:


That pork tenderloin recipe is a big hit over on the non-smokers forum I frequent too, they all love how "easy" it is. BTW I have been smoke-free for over 4 months now!!!!!!!:cool1:
 

Mrs. Disney Ron, I did see those recipes. I am going to make a variation on the chicken-escarole sometime this week. Personally I think 1/2 cup of cpaers would be overpowering, and I don't get the need for all those pinenuts, so i am going to change it up a bit.

Let us know how it comes out! I agree about the capers and pine nuts.

Okay, WDW just gave me a heart attack. I got a call confirming us for the luau...:scared1: ... NO!!!!!!!!!!!! We planned on surprising my parents with HDDR not the luau. We ended up having to change dates but it all worked out in the long run. I just had to cancell Ragland Road. I was just weird that they called me to confirm our ADR. WDW dine has never called us in the past when we had a show reserved. Thank goodness it worked out.

Last minute stress who needs it!

Been lurking for a while, got an answer to EVOO and thought I'd share one of my favorite recipes from Southern Living back in the day!! This is from 1978, I believe. OMG is it good!!! It is definately not a salad.



FESTIVE CRANBERRY SALAD


3½ c. fresh cranberries
1 c. water
1 c. sugar
1 6-oz. pkg. cherry flavored Jell-o
1½ c. cold water
2 16-oz. cans seedless white grapes
1 20-oz. can crushed pineapple, drained
1 c. chopped pecans
1 12-oz. container Kool Whip, thawed
2 3-oz. pkg. cream cheese, softened
2 c. miniature marshmallows


Wash the cranberries. Combine cranberries and 1 cup of water in a saucepan; cook 7 - 10 minutes, or until all berries pop. Drain berries, reserving juice; add hot water, if necessary, to measure 1½ cups.

Combine cranberries, cranberry liquid, sugar and gelatin; mix well, stirring to dissolve the gelatin. Add cold water and chill until the consistency of unbeaten egg white.

Combine grapes, pineapple and pecans; mix well. Fold into the gelatin mixture. Pour into a 13" x 9" x 2"-inch baking dish. Cover the dish and refrigerate overnight.

Combine the whipped topping and cream cheese; mix well. Fold in the marshmallows. Cover and chill overnight.

Remove topping from refrigerator and let stand for 15 minutes, or until slightly softened.

Spread the topping mixture over the gelatin mixture.

Cut into squares to serve.

Yields: 15 servings

If you can't find canned grapes, I just use fruit cocktail! You used to be able to find canned grapes around the holidays, but not anymore.

Here's the recipe that I use:

Cherry Pie

Pastry for a double-crust pie (I use store made)
2 1/2 Tbsp. quick cooking tapioca
1/8 tsp. salt
1 C. sugar
6 drops red food coloring
3 C. drained water-packed red sour cherries
1/2 C. cherry juice (I use the stuff I drain off the canned cherries)
1/4 tsp. almond extract
1 Tbsp. butter

Preheat oven to 400 degrees.
In a large bowl, combine all ingredients except pastry and butter. Let stand 15 minutes. Pour into pie shell; dot filling with butter. Cut air vents in top crust and place over filling; press top and bottom crusts together on edge of pie pan. Crimp or flute. Brush with milk and sprinkle with sugar. Bake at 400 degrees for about 45-50 minutes. You can put foil around the edge of the crust if it starts getting too brown.

I always put the pie on a cookie sheet to catch any drips.

Ann- I love to cook as well but there is something nice about having good food served to you and then your coffee served to you, dessert and an after dinner drink and then someone cleans up the table and does the dishes while you are gazing at the fireworks.

Caili remains fever-free, so I think she has finally kicked the flu. Liam gave me a scare this morning because he threw up! :eek: I think it was an isolated incident though, as he has been fine ever since. If I had to deal with the stomach bug right now, I might lose my mind.

I'm in the mood for comfort food. Truth be told, I could just make the same gnocchi dish as last night and be happy, but I have a chicken to use, so I am going to make a chicken stew. Since Glynis mentioned dumplings, those sound like a good idea too, so I'll make those to put on top. I guess I had better get started.
 
I'm having Ziploc Chicken, salad and corn.

I found this on Recipezaar. First time trying it.

Ziploc Chicken Recipe #197245

20 min | 5 min prep | SERVES 8 -10 1 teaspoon garlic salt
2 tablespoons onion flakes
1 cup barbecue sauce, I Use KC Masterpiece
12 ounces beer
2 1/2-3 1/2 lbs boneless skinless chicken breasts, Cut Into Large pieces

Combine barbecue sauce, garlic salt, onion flakes, pepper and beer in a gallon size Ziploc freezer bag.
Close Ziploc and mix thoroughly.
Add chicken to ziplock and make sure all pieces are covered in marinade.
Lie bag flat in freezer until frozen solid.
Chicken can be frozen up to 4 months.
Move chicken to the refrigerator 2-3 days before serving. Chicken will need time to thoroughly defrost and absorb the marinade.
Remove and discard marinade.
Grill chicken pieces on a low heat until internal temp reaches 165 deg, about 7 min per side or 7 min total on a george forman grill.
For smaller portions place desired amount of chicken in quart size freezer bag and add enough marinade to cover chicken. Freeze as above.
