Dinner tonight will be chicken dumpling soup. It's actually from a Disney cookbook, and the recipe is actually called "Snow Day Soup". It's a version of chicken dumplings that kids as young as my kids can help make, and so they want to try it. We'll see if it's any good. I'll be making a cherry pie to celebrate President's day. It's a tradition my mother started when I was in kindergarten, and I like to carry it on. Of course, until recently, I would just buy a premade cherry pie, but I've found a recipe that I like and that is easy, so I make it myself now.

I don't think I am going to cook this evening. We have errands this morning and then if Kady want to go to a movie Buddy and I will take her. Then I need to go to my Aunts and help her with dinner and bed. I think I'll call and see if she wants a fish sandwich, my cousin said that they called and asked her on Friday and she ate one even though she had just finished lunch. No wonder she would not eat any dinner for me. If I do that I'll bring some home for us, I am truly a junk food fast food junkie![]()
Mrs. Disney Ron, I did see those recipes. I am going to make a variation on the chicken-escarole sometime this week. Personally I think 1/2 cup of cpaers would be overpowering, and I don't get the need for all those pinenuts, so i am going to change it up a bit.

Been lurking for a while, got an answer to EVOO and thought I'd share one of my favorite recipes from Southern Living back in the day!! This is from 1978, I believe. OMG is it good!!! It is definately not a salad.
FESTIVE CRANBERRY SALAD
3½ c. fresh cranberries
1 c. water
1 c. sugar
1 6-oz. pkg. cherry flavored Jell-o
1½ c. cold water
2 16-oz. cans seedless white grapes
1 20-oz. can crushed pineapple, drained
1 c. chopped pecans
1 12-oz. container Kool Whip, thawed
2 3-oz. pkg. cream cheese, softened
2 c. miniature marshmallows
Wash the cranberries. Combine cranberries and 1 cup of water in a saucepan; cook 7 - 10 minutes, or until all berries pop. Drain berries, reserving juice; add hot water, if necessary, to measure 1½ cups.
Combine cranberries, cranberry liquid, sugar and gelatin; mix well, stirring to dissolve the gelatin. Add cold water and chill until the consistency of unbeaten egg white.
Combine grapes, pineapple and pecans; mix well. Fold into the gelatin mixture. Pour into a 13" x 9" x 2"-inch baking dish. Cover the dish and refrigerate overnight.
Combine the whipped topping and cream cheese; mix well. Fold in the marshmallows. Cover and chill overnight.
Remove topping from refrigerator and let stand for 15 minutes, or until slightly softened.
Spread the topping mixture over the gelatin mixture.
Cut into squares to serve.
Yields: 15 servings
If you can't find canned grapes, I just use fruit cocktail! You used to be able to find canned grapes around the holidays, but not anymore.
First, thank you for the recipe, I added it to my file so that I don't miss it again.
Would you share the pie recipe? i don't bake pies often and when I do they are not generally fruit pies, but I want to try a cherry pie for Washington's birthday. My Mom's birthday as well so I want something a little special but no cake.

Ann- I love to cook as well but there is something nice about having good food served to you and then your coffee served to you, dessert and an after dinner drink and then someone cleans up the table and does the dishes while you are gazing at the fireworks.

Caili remains fever-free, so I think she has finally kicked the flu. Liam gave me a scare this morning because he threw up!I think it was an isolated incident though, as he has been fine ever since. If I had to deal with the stomach bug right now, I might lose my mind.
