Luke was up bright and early today. Ron has to work both jobs today so he won't be home till about 11pm:sad1: . I think I will do my grocery shopping and a Target run to prep for our trip.

WFD- I think I am going to make myself some linguine w/ tuna sauce. What about you?

Tonight it's leftover stuffed pepper stoup. I added some smoked sausage to it and boy was it yummy!!!!!!!!!

Hmmm, I wish I saw this post last night. I will definitely be taking a swig from the bottle tonight!!!! You know, it's funny. When I told you I tried the port and thought it was yummy, I had just pretty much touched the cork and licked my finger. I was letting my mom try some and we both had a little glass. Boy is that stuff stout!!!! Whew!!! I drank probably less and 1/4 cup and my face was burning!

Corn Casserole Recipe courtesy Paula Deen
Show: Paula's Home Cooking
Episode: Country Cooking - Southern Sides

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar (good with or without this)

Preheat oven to 350 degrees F.
In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Johnny is home sick today, I knew we couldn't stay healthy forever, it seems like everyone is sick!! I'm going to try and get him a Dr. appt today. I've got an appt. with my hairdresser this afternoon so I think we'll get Chinese tonight.;)

I am off to the store now. A couple friends that I worked with are coming out tomorrow and I want to have some snacky things on hand...Andrew is also off today and Monday so I am taking my little lover boy to breakfast! ;)

Caili is finally fever-free!

I am making pizza for dinner tonight. I need to use up more of that cheese I bought.

Now, I am off to scrub my house...
 
Today is a fast food day for me. I am having lunch with two of my kids and bringing them their fave fast food meal - one is at 11 and one is at 1230. I guess I'll just eat twice? ;) Thankfully two different restaurants.

I have a retreat tonight and I always treat myself to Taco Bueno on the way out to the campsite.
 
Last night I made a cheddar soup. I think I read all the posts on another thread about everyone making the le cellier soup and I got inspired. This is a different recipe though...no beer in it. I served it with multigrain bread and NO vegetables at all. Because I did not want any!

It was good. John actually called me last night around 6 and said, "I feel like going out to dinner tonight, do you want to go?" I was like, ummm....it's going to be really crowded! Him: Why? Me: :rolleyes: We don't really do Valentine's Day, as you can tell!

Tonight we are having a bunch of stuff--starting out with some radishes with salt and butter, olives, and a couple of slices of hard sausage for John, then a spinach salad with some sliced chicken and dried cranberries, and then I have a wheel of espoisses that we'll devour with some baguette. Yum.
 
Caili is finally fever-free!

Hope your DH is feeling better soon. I wish I had a hair appointment today. I REALLY need my hair cut, but the lady who cuts my hair only works on Saturdays and it seems like I always have something to do every Saturday. :sad2:


And speaking of being busy on Saturday... My mom is having a chili potluck, kinda. She has asked everyone to make a small pot of chili and then we're all going to throw it in one big pot at her house tomorrow. I thought it sounded a little weird, but she said she's always wanted to do that.

Tonight I'm making teriyaki chicken thighs, rice, and peas.

Almost forgot, I tried a new recipe last night for Baked Ziti - it was easy and very hearty, definitely a keeper. This recipe makes a ton - it would be great for a potluck dinner.

Baked Ziti

1 pound dry ziti pasta
1 onion, chopped
1/2 pound lean ground beef
1/2 lb. Italian sausage, casings removed
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
1 1/2 cups sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese

1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
2. In a large skillet, brown onion, ground beef and sausage over medium heat. Add spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.
 
Actually, Caili is not fever free any more. She's right back up at 102 degrees, according to my Mom. I told Laura to expect this, becuase it happened to me when I had the flu. I felt better for a little bit, and then, wham! I was down for the count for another five days.

Oh my goodness, that little Cailli has not had an easy time, poor baby.

Kathy- your ziti bake resembles my pasta bake and it is so good! I love the sour cream addition.

I need a hair cut and the works as well! I did not make an appointment the last time and that is the worst thing I can do! Then I am groveling to get in :sad2:

Sandy- I know how you feel, I am grouchy :crazy: because my hair is out of control

Dinner tonight is going to be McDonald's Fillet-O-Fish:cheer2: I love them but I am too cheap to pay full price, they are on sale so I will pick up a bunch on the way home from my Aunts. One for me and the rest for Buddy. I feel a little badly becasue when I left today I put the leftover American Chop Suey out for him, remembered it was Friday so Marisa called to warn him. The poor man ate eggs for lunch but really wanted the ACS. Oh well.

This looks like the one I have used - it is SO good! I've made it for new parents to freeze. I never do the sausage, though, just sub ground beef. I bet Dh would love it if I did ;)
