What's for Dinner Tonight? (recipe index in OP)

This has been kind of an up and down day. The down part was that the Patriots lost, Liam started crying when he found out, and then he got sick to his stomach, so he couldn't go to school. (yeah, the teacher is really going to believe that he was actually sick!)

The up part was that I had Caili's Kindergarten conference, and she is doing awesome...actually, beyond awesome. She is reading at the fourth grade level and the teacher is creating a special reading and response thing because of her. Caili also had a great skate tonight. I think my toes have finally thawed.

For dinner, I had some leftover fried rice, some eggrolls that Beck gave me yesterday that I didn't make for the game, and baby bok choy.

Glynis -- :eek: on the snow in the house! We get a lot of snow here, but it hasn't ever come inside.

Wendie -- I am thinking of you. :hug:

Sorry, I know there were other things I wanted to reply to, but after reading through the previous three days, things are escaping me.

We used to live in Baton Rouge, but this past May, we bought a house in Denham Springs.
 
Tonight I was lazy...I had a grilled cheese sandwich and some chips.
 

Thanks for the link. I agree. Every recipe I want to keep/try later/etc. will be saved in Word. I am looking into making a blog for the recipes and keeping it in my signature. That way the recipes can be accessed by everyone quickly.

Does that sound like an idea?

I love the idea! If anyone can keep a blog up, it will be you! You did such a great job with the other thread!
 
We ended up having a lot of food yesterday. DD and I went to BJ's for soy milk for Kady and ended up picking up frozen snack, you know....just in case...ran to Big Y after adn when we got home my neighbors were here. Well we decided to consolidate our foods and ended up with way too much.

She made chili with stew beef and black beans and a killer artichoke dip
I had
chicken nachos, which we never got to
BBQ little smokies
Chips and onion dip
buffalo wings
honey BBQ chicken bites
fried chicken and cole slaw.

I bought the chicken from Big Y and it was terrible. I have a lot but tried one piece and tossed teh rest. I think that the oil was gone by but that they continued to fry and it burned the chicken and the crust.

Chocolate chip cookies for dessert. I think we had more food but I cannot remember...I am drowning in a mess here and cannot think straight :confused3

Tonight we are going to have the chicken nachos for dinner. They were amazing!

Are these the lime chicken nachos? That's a family favorite here!
 
Can I be totally honest and say that I am totally lost with the thread! I missed some things and cannot find the info...

What happened to Glynis? Did it snow in her house? Glynis, you OK?

I'm just fine. Thanks for worrying! We had a massive snow storm yesterday, and while we were asleep our back door blew open and by the time I woke up, there was 2 inches of snow on my living room floor. We managed to get it all cleaned up and there was no real damage done! It did take quite a while for our house to warm up, though.

It was quite a storm. We ended up getting 14 fresh inches of snow in our yard. That's on top of the 8 inches that were already there.

I should have mentioned that he is feeling better. I think he ate too much watching the game (just the first half) and breakfast didn't agree with him.

As for Caili, the thing I have been laughing about is that she got her worst grade in Phys Ed. She is this little star on ice, but she got a "not yet meeting expectations" in gym. If she ever becomes some champion skater, this will be a really funny story that she essentially failed gym in Kindergarten.
 
Well, we had a warm sunny day, and a lot of snow melted off the roads. It was so nice to see the sun again. I took advantage of it, and did my weekly shopping. Glad I did, since we have at least 3 more major storms brewing in our future this coming week!

Dinner tonight are the braised pork chops posted by Lauren! They are a keeper!!! My kids loved them and ate without complaint. That NEVER happens! Thank you Lauren!!!
 
I am cooking up nothing because my energy company has me so upset I can not bare to eat. I was craving Mexican before that battle hit though. Does anybody have a good Mexican recipe for tomorrow night when perhaps I feel better enough to eat.
 
We had more snow last night then previously forcasted. I'm running out of place for the snow who wants some. Lauren expect your box soon :rotfl2: We are going to be getting more snow tomorrow:rolleyes1

It was 82 and shorts weather today - I had to turn the AC on!! I really don't want the snow but I was hoping for at least 1 ice day this year. May not happen.

I make dinner most nights for my wife and I since I get home before she does. Tonight I made mexican lasagna. Layers of flour tortillas, taco meat, refried beans, shredded cheese, etc. topped with more shredded cheese, and bake til golden brown on top... awesome tasting. YUMMY :)

I made something similar a few weeks ago - so yummy!!

I made baked spaghetti and it was very good.

I've never made this; do you have a recipe?

I am cooking up nothing because my energy company has me so upset I can not bare to eat. I was craving Mexican before that battle hit though. Does anybody have a good Mexican recipe for tomorrow night when perhaps I feel better enough to eat.

We love both of these:

Beef and Rice Enchiladas

Ingredients
8 flour tortillas (medium sized)
1 pound ground beef
2.5 cups seasoned rice (I cheated and used a pack of Lipton Sides "Taco Rice" and it was pretty tasty)
1-2 cups Mexican blend cheese
1 can (10oz) enchilada sauce (I often use more than 1 can)
2-3 Tbls sour cream (optional)

Directions
1) Cook and season ground beef and prepare rice.
2) Warm the tortillas
3) If desired, mix the can of enchilada sauce with the sour cream.
4) Put enough sauce on the bottom of a 9 x 13 dish so the tortillas will not stick and preheat the broiler.
5) Assemble the enchiladas; lay out the tortilla and put down a bit of cheese, then some rice, then some ground beef, then a bit more cheese and some of the sauce. Roll up tight and place into the dish seam side down. Repeat this for the rest of the tortillas.
6) When they are all in the dish cover them with the sauce (amount to your liking) and top with cheese. Broil for ~10 minutes or until the cheese is melted and bubbly.


Chicken Enchiladas (similar to sour cream enchiladas)

1 can cream of ck soup
2 cups sour cream
2 Tbs Butter
1/2 cup onions
2 cups shreadded chicken
1 Tsp chili Powder
1 can 4 oz chopped green chili's
Tortilla shells
2 cups Jack cheese

I usually just toss frozen chicken breasts in my slow cooker for a few hours for the shredded chicken.
-mix together the soup and sour cream and set aside.(I usually double the recipe amount because I like lots of sauce.)
-In a sauce pan Saute the onions in the butter and chili powder.
-add the chicken, chili's and I think about 1/4 cup or so of the soup mixture to the onions.
-spread some of the soup mixture in the bottom of a baking pan.
-roll chicken mixture into tortillas, put in baking pan
-spread the remaining soup mixture over the top
-sprinkle the jack chees over the top of that. (again, I usually use more cheese then the recipe calls for)
-Bake in a 350 degree oven about 25 minutes or until heated through and cheese is bubbly.
 
Tonight it's leftover chicken tortilla soup. Boy was it good! I will post a recipe here in a little while.

I'm off to do some blog research.

My family loves Mexican lasagna. I have been craving it, but don't make it often as my DH thinks "it doesn't look like food" :lmao:

Yes indeedie! We had so much food that we only "taste tested" them and they were awesome! I had planned on having then for dinner last night but never got home from my Aunts until 7:30. Poor Liam :sick:. Losing a big game can make you ill. I have been a little sick after my beloved Lady Huskies lose a close one.

Kady is not "meeting expectations" in gym either. Marisa asked the teacher what to do and she laughed. "It's gym." Kady dances and takes gymnastics at a local dance academy so she wasn't worried about her becoming a slug :rotfl:

I may be old fashioned but I just don't get trying to "score" little ones in a gym class. I think that the most active children, like Caili have a difficult time staying still. There is no denying that she is an athlete in the making!

Here are two of my favorite Mexican dishes. Both are Rachel Ray's with my variations.


Baked Chimichangas
1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely chopped Preheat your toaster oven to 400 degrees F or high. Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.


I steam the cabbage a bit until soft, and I mix the cheese into the rest of the ingredients. You can use 8 or 10 inch tortillas. You can make them ahead and then reheat, or make them ahead and pop them into the oven.

[FONT=&quot]3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (14-oz) can stewed tomatoes or fire-roasted chopped tomatoes
1 cup medium heat taco sauce
1 (15-ounce) can black beans, drained
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped[/FONT]
[FONT=&quot]Preheat the oven to 425 degrees F. [/FONT]
[FONT=&quot]Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil – twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add stewed tomatoes or fire-roasted chopped tomatoes and taco sauce. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste. [/FONT]
[FONT=&quot]Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. [/FONT]

I have Andrew home today with a terrible cold/infection. Tom is also sick. A is going to the doctor later. I was supposed to volunteer at school today too...oh well.

I also have the electricians here today...I feel like all these guys are my best friends!

We are having Lindsay's Crockpot Chicken and I have to go out so I can get the rest of the ingredients I need. I will serve it with white rice and broccoli.

Nancy - My DH won't eat mexican lasagna either. Except, not only does he not think it looks like food, he also doesn't think it tastes like food. The only thing that even resembles mexican food that he will eat are Kathy's mexican stuffed shells. :confused3

I have no idea what I'm fixing for dinner tonight. I've been working most nights and last night at 10:30 I realized I didn't have anything defrosted and the fridge is bare. It needs to be simple and quick, and fairly bland. All three of the kids have come down with a bug and 2 of the 3 are now throwing up.

What a lovely morning we had. DH is taking the 2 vomiting children to the Dr. Our first therapist of the day called this morning at 6 to say she would be 2 hours late, so my baby is going to my mother's for the morning. So we spent the morning cleaning up after the 2 sick kids and packing a bag for H. After cutting some corners from my morning routine (no leg shaving, half of my makeup, only half drying my hair), I managed to make it to work only 15 minutes late which I think was pretty darn good considering. I look lovely, but I'm here.

I'm thinking chicken soup for the kids and alcohol for the adults. Any better suggestions? ;)

Hope that your babies feel better soon. I remember when my own were little, one would get that nasty bug and within hours they all got it. I never could keep up with all three, and God forbid that i get sick as well. :upsidedow

Funny thing is my DH raised cows, cleaned up after cows, fed the cows.......and he could not clean up after sick kids....I would have had one more to clean up after one more...:sad2:
