Should I be worried here..........Kyle just informed me that 3 "friends" who happen to be cheerleaders are coming over in a bit to "watch him work-out":scared1: You can bet Mom will be watching the girls watch him.;)
I may have missed something (or not) is Kyle still with his girlfriend (sorry, can't remember her name)? I can't imagine she would be too happy about that. Does he have groupies now? :lmao: I've never heard of such a thing.

You missed a lot - she (Abi) broke my boy's heart big time. We bought him a car to ease his grief and also I was really getting tired of sharing mine with him. He's a senior and having a great time, as he should. The girls were so cute, they only stayed about 30 minutes, he's just enjoying being unattached.;)

Those sides sound good. I hope you like it. I usually only have 30 minutes to an hour to marinate it and it still comes out very flavorful.

Sandy, The Portuguese Chicken was SO GOOD!!! We REALLY liked it! Bob said it tasted a lot like the chicken we had at a brazilian rest., only better!

We did Roasted Potatoes that was totally Alexis's recipe! She has decided to call them "Princess Potatoes"! She told her Uncle Bob that she made them all by herself, although her Nana did help her by cutting up the potatoes! :confused3 :laughing: Here's her instructions/recipe:

Princess Potatoes- Iron Chef Alexis

Peel and cut up some potatoes
Put some EVOO on them
Put on some salt & pepper & garlic
Also some fresh chopped up stuff that looks like a shamrock (parsley)
and some herbs in a bottle
Then sprinkle on lots of sprinkle cheese
Cook in the oven until they are good

Sprinkle cheese is what she calls grated parmesan. We actually used basil, oregano and greek seasoning. Because she likes using the pepper grinder, these potatoes were very peppery! They really were very good!

Instead of spinach, I made threw a bunch extras in bagged coleslaw & will call that Portuguese Coleslaw. (Onion, tomatoes, cucumber, parsley, pickled jalapeno peppers, pimento stuffed olives with red wine vinegar, salt, pepper & a bit of sugar.)

I think you did try it...this is the one you marinate overnight then sear and cook with the soy sauce, garlic, sugar and thyme. Do you need the recipe again? Maybe you didn't like it...

I forget the olive oil at times and when I do remember the mashed taters always come so much better.

Lauren & Kathy, I do have CRS but could it be because I am OLD?! :laughing:

Never tried olive oil in mashed potatoes before! I will try that next time I make them, thanks!
 

I am currently (and have been for the last 5 hours) simmering chicken bones, veggies and spices in water. Still tastes pretty watery! Might have to succomb to some chicken paste in the water!

For found stocks like this (ones where the meat has already been cooked) the key is to break the bones up and then barely cover with water. You can add boullion or stock to fill it out if necessary. Good luck!

I wouldn't be worried about Kyle. However, if Caili ever told me she was going over a guy's house to watch him work out, I would tell her to get a life. And I don't want any boys watching her working out either...she's working on her Russian splits right now, and she's only six. Who knows what she will be doing in 10 years.

Thanks, Lauren. I am feeling a bit better after my carb fest. I hold fast to to the saying, "Feed a cold, starve a fever." Luckily, I usually don't have a fever, so I get to feed my illness. :thumbsup2
 
Kevin and Robin were supposed to come over for dinner tonight. Yesterday I made a lemon cheesecake pie and was going to make stuffed pepper soup with smoked sausage, with parmesan black pepper bread. Now they aren't coming. So we will be having Boo patties instead.

Oh don't get me wrong, I'm not upset. I just think communicating something like that through texting is tacky.
 
Quick run through this morning girls. I'm off to the store for more cold medicine, but I wanted to say thanks to Kathy for the steak recipe and to Sandy for the chicken recipe. I think the steak is on tonight's menu and I'm planning on doing the Teriyaki thighs this weekend sometime if I feel better.

Glynis - don't know if this is quick enough to be helpful, but I haven't had a problem really with the shells breaking apart. I fill them with a large spoon, but the trick is cooling the shells enough that I can hold them open to fill. I usually double the recipe and still have shells left over. That means the ones that stick to the pot or tear while cooking get thrown away. If they are just a little torn, you can still fill them as the meat does run out like a cheese filling might. But really, in all the times I've made it I only end up using maybe 2 or 3 of the partially torn ones.

I'll check in later after I've been medicated.
 
Homemade cheese stuffed pizza! The boys always look forward to that, and much cheaper than pizza take-out!

I think that is just great! Remember to tell him what my dear friend once told me - always trade up. I agree with you that he should just enjoy himself his senior year, but having all this attention certainly does remind him that perhaps the last girl isn't the LAST girl, doesn't it?!?

And thanks for asking, I am feeling a bit better. Not to be gross, but my fever broke sometime around 3:30 this morning thank heavens, so I don't have the body aches. Now I just have the coughing, sore throat and stuffy/runny nose. Much better than yesterday. Heck, I even feel well enough to cook today.

IHOP for us. The pancakes are yummy!

I love IHOP. My DH just shakes his head whenever I see one of the commercials. He doesn't understand my love for their pancakes. Silly man.

:thumbsup2 I know how you feel. I think the next few years are going to have me wishing longingly for the preschool/kindergarten days of boyfriends and girlfriends. Ah, the good old days. During Hailey's first round of pre-school, she had 2 boyfriends. On Valentines day, one boy bought her a bouquet of suckers and the other a box of candy. Proving once and for all that with men it isn't what you have to say, it's all about how you look. :rotfl: I spoke with the moms of both boys and one had no idea Hailey couldn't speak. All she knew was that her son was in love with her and that he thought she was pretty.


Because I have the time to prep the marinade (and have all the ingredients on hand), I'm making Sandy's teriyaki chicken thighs. Maybe princess potatoes to go with if I have all the ingredients, rice pilaf if I don't. But now, I'm going to lie on the couch for a while.

Tonight we're having pancakes.

I love pancakes but cannot make them to save my life. I always order them when we have breakfast out.

I know that I have missed a lot and am sorry. I hope all of you under the weather are feeling better.

I am at my Aunts again this evening and she requested crepes so crepes it is :thumbsup2 DD and I will also have them but DH would not touch them if that was the last food in the kitchen, so more for us!

Mine are not a classic crepe. I used to make them super thin, and no color but they just taste so much better with a little sugar and a little extra egg added and then in the pan until there is a little color. I have already made them and will heat them up at her house.

Little vent: I cannot stand my cousin. I actually detest her. She is in charge of all my Aunts business and it is way too late to change that, but I am not the one in the family who is known to have patience with fools so I am not doing well here. Her newest dictate: do not purchase anything for Auntie until we clear it with her. The offense was a roll of paper towels my sister brought over my aunt asked for. I tossed out a quart of sour milk and was told the "sale date" was not met so it was still good. The nurse in charge of my Aunts services told this cousin that she has no problem having her arrested if she sees any signs of neglect and now I know why. She cannot understand that this lovely woman is not always in control of her thoughts or her actions so getting angry with her is counter productive. She then tried to tell Gail and I we really were not needed here so we simply told her to feel free to do all of the work there, we would continue to "visit" her every day.
 
Tonight we are meeting friends for steak at The Keg. Anyone been there before? We haven't, and I'm a bit worried about their prices. I may be drinking water and eating off DH's plate ;)
