Just a super quick check in before I head to bed......I have missed a couple of days.....We had an ice storm on Wed. and the power was out for 5 hrs and the cable (which is our internet) was out until early this morning....I was at school today subbing and never had a moment to get online as I had no breaks ( I was working in the special ed classroom and I refuse to take a break as it upsets some of the students).

Glynis---How are things going for your neice and family....My prayers have been sent to all of you!

Nancy---I send you, Buddy and all family members big hugs and prayers.....Please PM me if you need to talk.......if I can do anything please let me know!!

Aimee--I hope that you get home in a safe and fast manner!! Let us know when you arrive home!

Supper tonight was a request from Ross....my glazed meatloaf with fresh green beans and brown rice.....it was soooo good...perfect winter meal!
 
Tonight I am making breakfast for dinner: scrambled eggs with sausage, and biscuits.

My fajita meat is maranading in orange juice, lime juice, jalepeno, cilantro, cumin, salt and canola oil. Can't wait!
I didn't read far enough in the directions and I cut the meat before marinading. :blush: I hope it will still be ok.

I am going to make pico de gallo and guacamole. Mmmm.

Man does your pizza sound good!:thumbsup2 (your's not the kid's :laughing: ) How are you going to fix the shrimp? Real barbeque sauce or Nawlins style barbeque shrimp? Either way it really sounds like a super combo!!!

I want to talk to you about how you do the smoked gouda. I tried using fresh shredded smoked gouda on pizza and it was SO dry. I don't know what happened? :confused3 Tell me how you do it and make it work.

The pizza turned out really good, even though I had to start it after Kenny got home and was not able to sneak in any veggies. I wasn't following a recipe, I just sort of threw together what sounded good, but I'll list the ingredients and steps I followed.

Aimee, I am blushing as I type this, but the smoked gouda I used was from a Christmas gift basket we received. It was Hickory Farms and I just removed the packaging and grated it. I tried it before I used it on the pizza (and Kenny had to give it more than one taste) and it seemed fine, but drier than some cheese I've used. I think the difference was that I also mixed in some mozzarella.

Anyway, here is the pizza recipe, such that it is:
pizza dough (I used store bought - Publix multi grain)
1 - 1 1/2 lbs shrimp, peeled and deveined
6 - 8 slices of bacon (I used pre-cooked - in a hurry), cut into 1 inch pieces
1 small onion, chopped
butter, about 1/2 tbl.
cajun seasoning, to taste
seasoning salt, to taste
8 oz. shredded smoked gouda
4 oz. shredded mozzarella
BBQ sauce (I used Sweet Baby Rays, maybe 1/4 cup, I didn't measure)

Preheat oven to 325. Put dough on a cookie sheet that you have sprayed with Pam and flatten it out to the size/thickness you want. Spread BBQ sauce over dough.

In a sautee pan, sautee onions in butter for about 1 - 2 minutes. Add bacon and cook for about 1 more minute. Add shrimp and seasonings and cook until shrimp just turn pink. Spread this mixture over BBQ sauce.

Top pizza with shredded gouda and mozzarella.

Bake for 15-20 minutes or until crust is done and cheese is bubbly. Mine took only 15 minutes.


Maybe I'll get to loss some weight. It's ok not to feel sorry for me.

If I keep feeding this cold, pretty soon I'll have to go to work in sweat pants.:lmao:

Yes, he took a picture of his dinner with his phone and sent it to me! He said that this is a sea bream that was caught that afternoon off the dock adjoining the hotel. He said the fish was really delicious but the vegetables were bland. I told him I was making him an honorary member of our WFD thread! He can NEVER make fun of me for taking dinner pictures again! :laughing:

Dinner tonight for me was leftover Indian food. The kids had pasta and bratwurst, carrots and naan. Well, Liam didn't really get any naan because when I sent Caili to the neighbor's house to get Liam for dinner, he said he wasn't coming home yet and stayed an extra 25 minutes. When he decided to join us, he was shocked that we had started eating without him. He was even more surprised that his share of naan had already been consumed by Caili. I'm guessing he won't be showing up late for dinner anymore. ;)

Yum. That is another of my guilty pleasures.

Tonight I'm not cooking. Kenny is eating the left over pizza and he is getting take out for the kids. I'm meeting a friend for dinner and drinks. And after the week I've had at work and with my family issues, I really need a nice dinner and a couple of drinks with a friend.

John is supposed to be back by Portugal at 5 PM. He told me that he is sick of Portuguese food, so I am thinking of something very traditional--probably a roast chicken and mashed potatoes.

He said the fish is very fresh, but the only vegetable he has been served the whole time he's been there is kale and plain boiled potatoes! Maybe there's a big kale farm in Lisbon or something. :laughing:

The weather was really bad here yesterday. I was sitting in the car line at school waiting to get DS and it was horrible. Hail the size of ping-pong balls was hitting my car and I was terrified the wind was going to flip it over. I thought a tornado was coming through. They finally let the kids out after the worst of the storm passed. On our way home there were branches all over the road and the traffic lights were out. Man, I never want to be stuck in a car again when something like that happens. Watching the news later, I found out there were 97 mph wind gusts. :scared1:

mmm that does sound good! i think i will have to make my turkey meatloaf next week some night..i have a aton o' frozen ground turkey to use up. What do you glaze yours with?

thats so funny..my mom is portuguese and one of her famous meals is her KALE SOUP..so delicious..so kale must be a big portuguese thing after all! lol

Do you use a fry daddy or just fry in your heavy pan on the stove? I love all things fried but it makes a huge mess in the kitchen because we don't have a fryer anymore so I don't do it very often.


Who knows what I'll have for dinner. I'm still in Charlotte, my morning flight was cancelled and I'm now on a 625 flight tonight, hoping to be home by 830 tonight. The hotel is letting me stay until 2pm so I thought I'd have a big breakfast here and then an early dinner at the Chili's at the airport but I slept until now - 11:30!! I missed breakfast all together.

So, I may get ready and go on to the airport and eat a big meal there and make DH drive through someplace late tonight when I land.

Stupid American Airlines doesn't even give you a pack of peanuts anymore. Grrr.

Shrimp Artichoke Linguine

1 large onion, thinly sliced
1 bunch green onions, chopped
1/2 c. fresh parsley, chopped
1 c. chopped green and red bell peppers
1 stick margarine
4 Tbsp. EVOO
2 lbs. medium peeled shrimp
1 can cream of mushroom soup
1 4 oz. can mushroms, drained
1/2 tsp. liquid crab boil(This is what makes this dish, don't leave it out!)
3/4 tsp. salt
1 1/2 tsp. garlic powder
1/2 tsp. white pepper
1 can artichoke hearts, quartered and drained
2 1/2 Tbsp. cornstarch
3 Tbsp. lemon juice
12 oz. linguine
3/4 c. grated Parmesan cheese
1 lemon cut into wedges

In a large skillet saute onions, parsley and peppers in 1/2 stick margarine and EVOO. Add shrimp and saute until pink. Add mushrooms, mushroom soup, crab boil, salt, white pepper and garlic powder. Mix and cook two to three minutes. Add artichokes. Combine cornstarch with 1/4 c. cold water and blend with mixture to thicken. (I have never had to thicken with cornstarch, but recipe calls for it). Cover and simmer about 15 minutes until flavors blend. Add lemon juice and heat one minute.

Cook linguine in salted boiling water. Drain, add 1/2 stick margarine and 1/2 c. grated parmesan cheese, toss and mix well.

Serve Shrimp Artichoke mixture over linguine with lemon wedges and sprinkle with parmesan cheese.

OK, it was really good. Here is the recipe for the Pico. Our avacado was not ripe enough to turn it into Guac, but we still had a few chunks of avacado in our fajitas and on our chips.

Hmm. I see the Pioneer woman didn't actually type out the recipe. I do think this one needs the photos so you 'get' not to make it too tomatoe-y.

Here is the fajita marinade. As I wrote before, I cut the meat into strips first before marinading.

Marinade:
1 orange, juiced
2 limes, juiced
3 tablespoons canola oil
2 garlic cloves, minced
1 jalapeno, seeded and minced
1 tablespoon fresh cilantro, finely chopped
1 teaspoon cumin
1 teaspoon salt
2 1/4 pounds skirt or flank steak, trimmed of fat
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 red onion, thinly sliced

12 flour tortillas, warm

In a small bowl, whisk together marinade ingredients. Place steak in a shallow container, and pour marinade over it. Refrigerate, covered, 8 hours or overnight to tenderize meat.
Drain the marinade from the meat. Grill the steak in a ridged grill pan over medium-high heat for 4 minutes each side. Transfer the steak to a cutting board and let stand.

In the same pan with the steak juices, add the bell peppers and onions. Saute the mixture for 3 minutes until the vegetables are limp. Thinly slice the steak against the grain on a diagonal.

Spread some guacamole on a tortilla, top with a few slices of steak, peppers and onions and salsa fresca. Roll up the tortilla to enclose the filling.

May also serve with sour cream and shredded cheese.

I've been here since morning reading, but before I could chat I had to copy those 2 great shrimp recipes! Gretchen's pizza sounds so good! As does Kathy's linguine!

Not sure what's for dinner. I'm feeling funky. I was supposed to get my hair colored this morning & a visit to the Whole Foods next to the Salon. But went back to bed instead. Now I'll look as crappy as I feel. :upsidedow ( I finally believe the doc's diagnosis of fibromyalgia, just aching & tired too often.)

And we had some bad weather come through here last night. Had me awake & nervous during the night. Now it's damp & cold outside. What's for dinner will probably be whatever's in the house or that I can get nearby.

It was really yummy! It's 7:30 here.;)
Saddest part was running out of ice so I could only have a margarita when I was nibbling on the Pico and not with dinner.:headache: ;)
