Yeah...we don't have a lot of 'light beer' here. ;)
We also don't have any of those dwlz restaurants.
My favorite breakfast is a plain yogurt (European) with 1/3 cup All Bran buds and a packet of Equal. It's 2 points and full of fiber!
It's hard to know what points are in the local food. They don't really put nutrition info on their food. They don't have HFCS in ANYTHING :cloud9: even Coke has real sugar and tastes so much better. And, for the most part, they are thin. Hmm...maybe I should only buy non-American food....

On the coffee, yes and yes.;) Oh, and I also order French Press ground.;) I love having it in the bean, but then I have to find a power converter. I never know where I had it last.

Have you read "French Women Don't Get Fat" ? I loved that book! It really made sense for me, living here in New Orleans. It's all about proportions, not denial of any certain foods, eating healthy foods and using the fit of your clothes to keep you on track.

BUT, I think if I had all of that great beer around, I would seriously be in trouble!

I love French pressed coffee! Well, I love good coffee, period. But I would be sad without my Cuisinart grind & brew, too. I've found DH & my favorite blend to be 1/2 columbian & 1/2 sumatran. But I also really love CC's coffee & chicory with steamed milk (cafe au lait).

I would think you could get some great coffee's in Belguim?

My DD visited Europe recently, she ate Gelato everyday & didn't gain an ounce! :confused3 She thought it was all the walking & steps climbing. Even though she a serious exercise buff, her calves & thighs were sore.

ETA: Shovan, I agree that your legs do feel nice and fit when you are out travelling, but for the most part I am running kids around. Also, is your DD at an age where 'I didn't gain an ounce' is a way of life? :lmao:

I couldn't decide what to make for dinner tonight, so I finally settled on cheddar-potato soup with carrots and broccoli. It was pretty tasty and easy. Here's a pic:

Here's the recipe...please know that I made this up and I cook based on approximate measurements most of the time. I adjust seasonings and ingredients as necessary.

Cheddar-Potato Soup with Carrots and Broccoli (serves at least two)

2 tbsp butter
1 onion, finely chopped
2-3 potatoes (I used red bliss, so they were smaller, and I used three), peeled and cut into cubes
1-2 carrots, peeled and cut into slices (I used baby carrots, so more like six)
2 tbsp flour
2 c chicken stock
1 chicken bouillion cube
1/2 tsp dried oregano
1 slice bacon, cooked and cut into small pieces
1 small head broccoli cut into small florets
Milk
1-2 c cheddar cheese (depending on taste)
Worcestershire sauce
Salt and pepper

Melt the butter in your soup pot, medium heat, add onion and saute until beginning to soften. Add the potatoes and the carrots and cook for two minutes. Add the flour, and stir well for 1 minute. Add the chicken stock, bouillion and oregano. Increase the heat to med-high, and stir until liquid begins to boil and thicken. The potatoes will tend to sink to the bottom and stick, so you need to stir frequently. (Don't let it boil too hard!)

Once liquid is boiling, decrease the heat but maintain a simmer so the potatoes cook (about 20 minutes). If necessary, add more chicken stock. (This mix will be thick...only add stock if the liquid levels are so low that the vegetables aren't cooking.) Once potatoes are soft, add the broccoli and cook until bright green. (I think next time, I would precook the broccoli separately, then add to the soup at the end.)

Add milk until soup is the right consistency for you. Heat well, then add the cheddar cheese and worcestershire sauce to taste. Season with salt and pepper as desired.

I also added fresh chopped parsley to mine, and if I had chives, that would have gone in too.


Wow!! I made this and we've just finished eating it. It came out fantastic and looked exactly like your pic. Dh loved it, too. I wasn't sure when to add the bacon so I just cut it up and then cooked it before I added the butter. It came out perfect like that. It was so good - I will be definitely be making it again. :cheer2:

My trip home to NOLA was great. I was only there from Wednesday to Sunday so I had to cram a lot in. I went dress shopping with my Mom cause my brother is getting married in June. She found something very pretty so shopping was a success. Here is what we ate:

roast beef po' boys at a neighborhood restaurant Come Back Inn
boiled crawfish at home
oyster po' boys at Bozo's
chargrilled oysters and 1/2 stuffed lobster at Drago's
catfish at Middendorf's

I'm glad you liked it! I added the bacon after I added the stock, but doing it your way probably gave it a great smoky bacon taste. :thumbsup2

Spaghetti and Meatball Stoup
Lindsay

1 carrot, diced
1 medium yellow onion, chopped
3 garlic cloves, chopped
1 (14 oz.). and 1 (8 oz.) can of tomato sauce
3 cups chicken stock
1 package portobellini mushrooms, thinly sliced
1 pound ground beef or turkey
1/2-cup Italian bread crumbs
1/2- cup grated cheese
1 large egg, beaten
2 T. chopped parsley leaves
1/2 lb. spaghetti, broken in half
1-cup basil, torn or shredded


1. Combine beef/turkey, cheese, breadcrumbs, egg and parsley. Roll into 1 1/2 inch balls. Set aside.

2. Heat a medium soup pot over medium heat. Add EVOO. Sauté carrots, onion, garlic, and mushrooms for 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil. Cook for about 5 minutes.

3. Remove lid and slide meatballs in soup. Bring back to a boil and add noodles. Reduce the heat and simmer soup for 10 minutes or until meatballs are done and spaghetti is tender. Stir in basil and remove from stove. Serve with bread and cheese.
 
We had chicken breasts (baked, marinated and coated in parmesan cheese), vegetable fried rice, and baby peas.
 
Still hanging around--had to stay late at work, so it was out to eat tonight. Good thing we're starting to get some decent eateries in our little town. Back to cooking tomorrow--thinking Thai:thumbsup2

I made Asian food tonight...the photos are not great, because I finished preparing everything right before Idol came on and as I have said I like that show! Here is the egg drop soup (too much for one person!):

in the back you can see some rangoons to the right and some tofu to the left. The tofu was my favorite part, it is silken tofu drained and topped with cilantro, hot chile, scallion, soy sauce, and SMOKING HOT sesame oil to wilt the greens. I tried for a close up but I was rushing so it's not that good:

Tonight is leftover spaghetti and meatball stoup with spinach, salad and bread. Ohhhhhhhhhhhhhhhhhhhhh, adding the spinach directly in the soup made it to die for!! It was 10,0000 times better!!

Lindsay, Glad your soup came out so good too! Did you use ground beef or turkey? Any other changes to that recipe other than adding the spinach?

Here's last night's dinner. Grilled Greek turkey patties w/grilled bell pepper, hummus, and lemon-yogurt sauce. We ate them like you would gyros, stuffed in the pita with all the extras. DD came over for dinner, once I mentioned feta cheese & calamata olives. She approved!

Hey guys. I've lurked for some time now. I gave my SIL a number of the recipes pulled from this thread (wasn't smart enough to lurk before the large thread was pulled) and she's made two of them now. She's a SAHM and cooks for her family, my Dad, my family (me, DH, DS12 and DS9) and my sister's family. It's usually 2 - 3 times during the week during sports season and 4 - 5 times during the rest of the year. It works well for her because my Dad buys all her groceries, and works well for us because my kids get homecooked meals that I wouldn't have time to prepare after a full day's work, hour commute, sports/homework etc. The only thing I don't like is working 10 hours and then having to clean up her kitchen, but hey, it could be worse! ;)

She's made the lime chicken and now the warm lemon cake. Cooking for this large a group there are a lot of picky people, so she'll probably slowly try some of the other recipes that aren't too spicy, as lots of the kids aren't in to spice, and my sister is nursing so that creates some issues as well. Thanks everyone for sharing the recipes. Y'all are a great group of people and very inspirational!

No dinner last night as everyone was out, I think tonight is going to be fairly simple. Steak on the grill, with some sort of veggies. I have another busy weekend ahead so probably more of the "old standbys"

I didnt get to Moms yesterday due to heavy rains so I am going today.

I am making sausage, peppers and onions...I am going to the store by Moms and get my hands on some good rolls. We have crappy bread here. I will serve it with a salad.

I need to catch up but have to run now...have a great day all!

Yes, Glynis recipe for Lime Chicken is basically salsa and lime juice and a couple other ingredients. The salsa alone comes very similar. I tend to only cook chicken in the crock for about 4 hours on low since mine cooks very fast. Hope this helps!
