Morning all--gonna try to be better about posting! Tonight will be Peanut Chicken and Jasmie rice. The peanut chicken is kinda like a "shake and bake" made by Thai Kitchen.

Any of ya'll having wacko weather? It was 75 on Sunday, Snow on Tuesday, 60 yesterday and now we're under a winter weather warning until Friday morning. More snow in Arkansas in March!!!!!!!:eek:
 
What are those dates? I may be making a trip with my SIL, BigMama...around Nov 6...

Try and bump it up a week or two, looks like we'll be there 10/25-10/30!

Hi Everybody!

We had a huge Shepard's pie last night with a salad and rolls. We also had a chocolate mousse cake for dessert. I have a fruit tart in the fridge for tonight with leftovers from last night. The girls had WW dinners so that they could control their points.

My DH family was supposed to come by for dinner but yesterday was very emotional so it was just us.

I have read everything but have not had time to post much.

Welcome Margi- I envy your sister. I always pout if my entire family is not here for meals, she is a lucky woman to be able to cook for all of you.
 
Hey guys. I've lurked for some time now. I gave my SIL a number of the recipes pulled from this thread (wasn't smart enough to lurk before the large thread was pulled) and she's made two of them now. She's a SAHM and cooks for her family, my Dad, my family (me, DH, DS12 and DS9) and my sister's family. It's usually 2 - 3 times during the week during sports season and 4 - 5 times during the rest of the year. It works well for her because my Dad buys all her groceries, and works well for us because my kids get homecooked meals that I wouldn't have time to prepare after a full day's work, hour commute, sports/homework etc. The only thing I don't like is working 10 hours and then having to clean up her kitchen, but hey, it could be worse! ;)

:hug: Nancy sweetie, you have too much on you right now to worry about posting. We would like you to check in so we know you are ok, but don't worry about catching up. We understand.

Sheryl, last night I made the baked chicken with panko. I pounded the chicken breasts and then sliced into tenders. I then coated with sweet and sour dipping sauce and then panko. I was trying to cut out the fat, so I just baked them. Kenny really liked them, but I was so-so. The sauce was a really good coating and the flavor came through really well, I just wish I had browned the tenders some before baking. I may try this again, and brown in Pam if nothing else.

Tonight we are making pizzas. Not making the dough before anyone asks. Publix makes a good pizza dough, so I'm buying theirs. The kids are having cheese - yawn. Kenny and I are have BBQ shrimp with bacon and smoked gouda (and some veggies if I can sneak them on).

WFD tonight: Nothing too exciting, but i am sure it will be yummy: Shake n Bake boneless pork chops, roasted taters ( again with fresh herbs from the Aerogarden ;)...corn, stuffing and apple sauce.....
 
Tonight's dinner will probably be leftovers. I still have beans & turkey patties in the fridge. But Becky really has me craving some kind of Asian food!!!

Marcij, Welcome!!! I'm impressed with your sis! That's quite a crowd she's cooking for! I'm sure she could teach us all a thing or two! That sounds like a great system y'all have worked out! Win-Win situation for everybody. :goodvibes And OKWMom is soo right, most of the time we forget to mention the dinner, so stop in & chat anytime!

Gretchen, I'm sure if you would have fried them in some good ole grease or butter, a la Paula Deen, they would have been super! ;) But definitely not so figure friendly! It sounds like it's a great idea that just needs some tweaking! I will have to give that a try soon, I know Alexis would love that!:goodvibes

Man does your pizza sound good!:thumbsup2 (your's not the kid's :laughing: ) How are you going to fix the shrimp? Real barbeque sauce or Nawlins style barbeque shrimp? Either way it really sounds like a super combo!!!

She's made the lime chicken and now the warm lemon cake. Cooking for this large a group there are a lot of picky people, so she'll probably slowly try some of the other recipes that aren't too spicy, as lots of the kids aren't in to spice, and my sister is nursing so that creates some issues as well. Thanks everyone for sharing the recipes. Y'all are a great group of people and very inspirational!

Hi, Marci!!! Glad you came out of lurkdom here! The recipes here are the best!!! I've tried so many of them, and there hasn't been one that my family hasn't raved about! So many of them are easy and fast, and I know that with your hectic schedule, that would fit the bill at your house!

No dinner last night as everyone was out, I think tonight is going to be fairly simple. Steak on the grill, with some sort of veggies. I have another busy weekend ahead so probably more of the "old standbys"

PS. Has anyone one done boneless, skinless chicken breast in the crockpot with Salsa?

Yup did it just last night. let the chicken cook for about 4 hours on high with the salsa, then shredded it, added a jar of Ragu double cheese sauce, and about a cup of sour cream, then served it over brown rice. So yummy!!!
 
I have book club tonight so the family is being ordered to clean the fridge out while I am gone. There is leftover mac and cheese, leftover tortellini soup, and leftover spicy chicken. If they go hungry it's their own fault.

Book club is discussing Jane Eyre. I haven't read this book in about 4 years so it was fun to go back and do it again! I look forward to this night all month! Getting away from the kids, eating good food with good friends and discussing books, all my favorite things rolled together!

Tomorrow I'm going to my bowling league and then out to lunch with the ladies that were on my publicity committee for the school play. We're celebrating that it's over and we lived without too much bother! I think we're heading to the Cheesecake Factory for lunch and cheesecake!!! Yum! I can't wait!!!
 
Hey all! I'm stuck in Charlotte!! Anyone live here? I need a place to crash =)

They have canceled one of my flights, I got on another but with the huge snow and sleet that just came into DALLAS today it's evitable the late one will be canceled too. I'm sitting and waiting. The agent put me on the 705 flight in the morning just in case...

I may be getting another rent car (turned mine in) and finding a hotel for the night. It's a great city, so if that ends up happening I will rent a GPS in my car so I can find my way around.

I'll scroll back and catch up!

(Oh - last night we had Tex Mex in North Carolina! Again, wasn't my choice but it wasn't as bad as I expected. For lunch we had sushi at a awesome asian diner in downtown Asheville.)

Yes, you can just do salsa by itself with chicken and stick it in soft tacos/burritos/etc. It's my cheap easy standby meal.

I want to talk to you about how you do the smoked gouda. I tried using fresh shredded smoked gouda on pizza and it was SO dry. I don't know what happened? :confused3 Tell me how you do it and make it work.
 
Aimee Sorry to hear you are stuck. I used to travel many moons ago to Franklin NC. Unfortunately I lost contact with a lot of people I knew there. I hope you are able to get home tomorrow.

I just had to share something funny with you guys. As I think I told you all, John is in Portugal right now. He said he was going to send me some pictures. Look at what he sent:

Yes, he took a picture of his dinner with his phone and sent it to me! He said that this is a sea bream that was caught that afternoon off the dock adjoining the hotel. He said the fish was really delicious but the vegetables were bland. I told him I was making him an honorary member of our WFD thread! He can NEVER make fun of me for taking dinner pictures again! :laughing:

Tonight I am making myself a mushroom pizza. I'll post pictures later.

Glynis -- Have fun at Book Club! We have one in my neighborhood, but I almost never get to attend. I like reading the books though.

Dinner tonight for me was leftover Indian food. The kids had pasta and bratwurst, carrots and naan. Well, Liam didn't really get any naan because when I sent Caili to the neighbor's house to get Liam for dinner, he said he wasn't coming home yet and stayed an extra 25 minutes. When he decided to join us, he was shocked that we had started eating without him. He was even more surprised that his share of naan had already been consumed by Caili. I'm guessing he won't be showing up late for dinner anymore. ;)

I ate at the hotel bar - always an interesting place... ;) Pulled pork, onion rings, cole slaw, and white wine. Was pretty good actually.
