What to do with leftovers

We didn’t do a turkey this year but in the past I have diced it up and used it in stir fry with onions, peppers, mushrooms, and broccoli in flour tortillas or just over rice.

Read an article in the NYTIMES about Cali living and they were saying how common it was to make turkey tacos. Works for me!
 
I pushed everyone into making a to-go container (extra meal+dessert) yesterday before they left. :) There was still alot left, so the favorite sides went into the fridge for leftovers. The other sides (mashed potatoes, carrots, & green beans) were packed in freezer bags for easy sides for future dinners. The turkey is in the fridge for today and then tomorrow it'll be chopped and freezer-packed for future pot pies. :)
 
One year we made a casserole with the leftovers it was very good actually but between Thanksgiving of those ingredients and then eating it for a few days afterwards we realized no matter how good of an idea that was at the time we got tired of eating it and it was more tedious than enjoyable.

While we're big on leftovers on the daily, for the Holidays we generally try to only have a little bit of leftovers we take with us from whatever place we went to. Based on my cousins reactions over the years we're all on the same page of trying to minimize what leftovers we are sent home with.
 

I am making what my cousin called Turkey Garbage Soup, God rest his soul. I just take all the bones and bits, all the spices and whatever leftover scraps aren't worth a container minus the fruit rinds and drop it into a pot to boil all day with a can of chicken broth & it makes the most wonderful soup!

There are some legs that I think I'll make as a turkey salad in the blender with a bit of soup broth and mayo. This is by far the best way to make the tougher meat into a meal for sandwiches, crackers or on top of a salad.

We have 20 somethings trying to fly on their own so plates were made and sent with love.
 
Gumbo, of course. :) Mine is in the crock pot now -- it's the very best part of Black Friday around here. Make it with Andouille if you can; that is the best type of sausage to complement turkey (though any cased sausage will do, really, though chicken sausage will usually end up falling apart.

As you don't cook the rice in the gumbo (you add it fully cooked at serving time), gumbo doesn't take up as much room in the freezer as other soups do, and it's always better a few days later.)

Any turkey still left over after the gumbo is made will become Tetrazzini.

We just eat the same thanksgiving meal over and over until it's gone. We make so much food, it will last us several days. We don't get tired of it really, this is the only time of year we have most of the items. It's really nice after all that cooking over the last couple of days that all we have to do now is pull things out of the fridge and reheat them.

I'm (re)heating Thanksgiving dinner 2.0 for dinner tonight. That usually takes care of the left overs. Turkey, stuffing, mashed potatoes/gravy, sweet potatoes, jello salad and a macaroni salad from yesterday.
 
After kids take some and I make a plate for brother to take, not a lot left. Maybe one dinner and a few sandwiches. Not enough to make into soup or whatever.
 
Soup made and put in freezer. Just a bit of leftovers in fridge, those that are still standing at the end of the day will get tossed.
