We didn’t do a turkey this year but in the past I have diced it up and used it in stir fry with onions, peppers, mushrooms, and broccoli in flour tortillas or just over rice.
Read an article in the NYTIMES about Cali living and they were saying how common it was to make turkey tacos. Works for me!
There was still alot left, so the favorite sides went into the fridge for leftovers. The other sides (mashed potatoes, carrots, & green beans) were packed in freezer bags for easy sides for future dinners. The turkey is in the fridge for today and then tomorrow it'll be chopped and freezer-packed for future pot pies.
