What is your favorite cookie ever? Recipe?

That must be it.....maybe it's to warm in my kitchen as my dough never looks like my mom's dough would look. Mine is always kind of .....melty now that I think about it. I've tried adding more flour to thicken it up but that just makes them taste yuck!
Just pop it into the fridge for a few minutes.

I've also thought maybe I'm using the wrong butter. What do you all recommend. Do you use real butter, margarine, etc.
Definitely use real butter. Store brand is fine.
 
OK, I was inspired to get out my recipe for Rolo Cookies. I don't know if it's really very secret, but I've never seen this recipe anywhere and the cookies are fabulous!! It is not super easy but they are very impressive when you get finished.

Rolo Cookies

2 1/2 cups flour
3/4 cup cocoa
1 tsp. baking soda
1 cup sugar
1 cup brown sugar
1 cup margarine (softened)
2 tsp vanilla
2 eggs
1 cup chopped pecans
48 Rolo candies (unwrapped)
1 tbs. sugar

Oven 375. Spoon flour, cocoa, & baking soda into small bowl. In large bowl, beat 1 cup sugar, brown sugar, & margarine until light & fluffy. Add vanilla & eggs, beat well. Add flour mixture: blend well. Stir in 1/2 cup pecans. For each cookie shape tbsp. dough around rolo candy covering completely. (This is tricky because the dough is kind of sticky...it's easier if you have cold hands!) In a small bowl combine 1/2 cup pecans & tbsp. sugar. Press one side of each ball into pecan mixture. Place, nut side up, 2 inches apart on ungreased cookie sheets. Bake at 375 for 7-10 minutes or until set and slightly cracked. Cool 2 min. remove to wire racks.

The candy melts inside the cookie so the cookie had a delicious caramel center:woohoo: Happy eating!

RASPBERRY ALMOND SHORTBREAD THUMBPRINTS

Taste these buttery thumbprint cookies filled with raspberry preserves and drizzled with an almond glaze. They're special to serve, yet easy on your baking budget.


Preparation time: 45 min Baking time: 14 min
Yield: 3 1/2 dozen cookies


Cookie Ingredients:
1 cup LAND O LAKES® Butter, softened
2/3 cup sugar
1/2 teaspoon almond extract
2 cups all-purpose flour
1/2 cup raspberry jam*


Glaze Ingredients:
1 cup powdered sugar
2 to 3 teaspoons water
1 1/2 teaspoons almond extract

Combine butter, sugar and 1/2 teaspoon almond extract in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour. Beat, scraping bowl often, until well mixed. Cover; refrigerate at least 1 hour.

Heat oven to 350°F. Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Make indentation in center of each cookie with thumb (edges may crack slightly). Fill each indentation with about 1/4 teaspoon jam.

Bake for 14 to 18 minutes or until edges are lightly browned. Let stand 1 minute; remove from cookie sheets. Cool completely.

Combine all glaze ingredients in small bowl with wire whisk until smooth. Drizzle over cookies.

*Substitute 1/2 cup of your favorite flavor jam.

Pignolia (Pine Nut) Cookies! They cost a bit to make because the almond paste is expensive, but they are soooo good! :thumbsup2

The only cookies I have been successful with are the refrigerated cookie dough. :sad1:

Oh now you've reminded me of that cookie dough - nestle is was. When we were Disney holidaying I ate that stuff all the time. Occasionally cooked it but half the time ate it straight out of the pack, it was soooooo yummy.

Looked all over for it back in the UK but no such luck, tried online to no avail.

I would of brought home a years supply of the stuff if it didn't need refrigerating and we didn't have a baggage allowance :rotfl:
 
My favorite kind of cookie is a Monster Cookie!! :lovestruc

* 3 eggs
* 1 1/4 cups packed light brown sugar
* 1 cup granulated sugar
* 1/2 teaspoon salt
* 1/2 teaspoon vanilla extract
* 1 12-ounce jar creamy peanut butter
* 1 stick butter, softened
* 1/2 cup multi-colored chocolate candies
* 1/2 cup chocolate chips
* 2 teaspoons baking soda
* 4 1/2 cups quick-cooking oatmeal (not instant)

Directions

Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or nonstick baking mats.

In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.

Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags.
 
Ok so I had to bake chocolate chip ones today after reading this thread! and half of them are gone already(the kids really I swear it!)

And Lives- I like to use Land o Lakes UNSALTED butter in my cookies. And they are nice and fluffy- (i added the extra flour too)
 
All time favorite cookie: Chocolate Chip
1st runner up: Cream Cheese and Cinnamon cookies

Cookie Dough:
1 cup butter
1 cup cream cheese
4 teaspoons sugar
2 cups flour

Filling:
1 cup walnuts, finely chopped
1/3 cup sugar
1 Tablespoon brown sugar
1 teaspoon cinnamon
1 egg for wash, beaten

Mix butter, cream cheese and sugar until creamy.
Add flour and mix. Divide dough in half and form a ball with each half.
Wrap each dough ball in wax paper and refrigerate at least one hour.
Make filling by mixing walnuts, sugar, brown sugar, and cinnamon.
Roll out dough ball thinly into a circle. Cut the circle into quarters, and
then each quarter into four sections to create 32 triangles.
Sprinkle half the filling mixture over the 32 triangles. Roll each triangle
starting from the wide end.
Place on lightly greased baking sheet (or use parchment). Brush with
egg, then sprinkle with granulated sugar.
Bake at 375° for 15-20 minutes.
Repeat with other dough ball (keep refrigerated until use).

It still gets about 250 hits a day, even in this heat! :sunny: I'll be posting a couple new recipes I've found after Labor Day and the kids are back in school, and it's baking weather again. (Of course anyone can add new ones at any time. :cool1: :thumbsup2 )
 
Poor Man Turtles

Pre heat oven to 375, cover a cookie sheet (large) with foil

You can make however many you want--I usually make at least 4 dozen.

Pretzels--at Christmas time you may be able to find the round circles--with no pretzel in center, else just use the mini regular pretzels.

Rolo's -- I buy the rolos that are at the checkout in the candy section--there are 7 or 8 in a roll, and you don't have to unwrap them:-) it saves so much time. Just open the package and they are there.

Pecans halves.

Place pretzels on cookie sheet, place Rolo on top of pretzel. Put in oven at 375 for 4 four) minutes. Take out and press pecan half in center and squish down the Rolo. Cool on foil and cookie sheet until cold. Store in airtight container, they keep quite well.
 
My kids LOVE these. The recipe is from the Quaker Oat package. We do omit the raisins. (No one in my family would ever eat a raisin)

Vanishing Oatmeal Raisin Cookies

Ingredients

1/2 cup (1 stick) plus 6 tablespoons butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker® Oats (quick or old fashioned, uncooked)
1 cup raisins

Preparation

Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

:thumbsup2 Oh yes, I vote for these! My family absolutely LOVES them! I make them half with just raisins and the other half with Ghirardelli milk chocolate chips! MMMMMM MMMMM MMMMMM!

They get eaten SO fast in my house. Cookies are my downfall so I don't make them as often as I'm sure they'd like 'cause that cookie dough is oh so yummy and can disappear as fast as the finished baked goods! :rolleyes1
 
My favorite cookies are soooo easy to make!

No Flour Needed Peanut Butter Cookies
1 cup peanut butter
1 cup sugar
1 egg

Mix all ingredients. Roll into a ball. Make an "X" on each ball with a fork. Cook at 350 until golden brown (for me this usually takes about 10-15 minutes) I make these every single year on the night before Thanksgiving. They are my uncle's favorite cookies as well so I always make a big tub of them for him (like 4 dozen) and some for everyone else to enjoy as well. It is also very very easy to double triple etc the batch!

May I ask how much extra flour do you use? Mine tend to come out flat, but everyone LOVES them and this is my most requested dessert. I do use the Nestle Milk Chocolate morsels instead of the semi-sweet. Yummy!!! Now I want to make them tonight (just to eat the raw dough).

I probably use 3 cups of flour. i wish i could take a picture of them now to show you how nice they look and the taste wonderful!!!!
 
butter cookie recipe:
1 cup sugar
1 cup butter
1 egg
1 tsp vanilla
2 cups cake flour

Cream butter, add sugar, continue to cream, add egg and vanilla, slowly add flour. Dough will be stiff. Spoon onto cookie sheet. Use a knife dipped in water to flatten the cookie.
Bake at 375 for 8-10 minutes. Edges should be browned with lemon colored centers.
