Mine is quiche.

eggs
cheese
a splash of milk
steamed broccoli
bacon or ham
pie shell

Blend the first 5 together, pour into a pre-baked pie shell, and bake on 350 for about 45 min. Serve with fruit, or a salad and croissants. Quick and easy.

What's your easy dish?

ETA- For us, I use a deep dish pie crust and 6-7 eggs. About 1/4 to 1/3 cup cheese in the mixture. Just about 10 min. before I remove the quiche I sprinkle 1/4 to 1/3 cup of cheese (I use a blend of cheeses) on top and let the cheese get melted. It's really good.

I use the broccoli I have on hand. Usually after we have had steamed broccoli as a side dish, I'll use the leftovers for the quiche. I make extra for that very reason. I'll generally use around 1/2 to 2/3rds cup of steamed broccoli.

I used 6 or 7 slices of bacon, cooked crumbled in the quiche mixture. I reserve a little and put it on top with the cheese.
 
I make Chilli

1 pound of ground turkey
2 14 ounce cans of tomato sauce OR 2 14 ounch cans of diced tomatos
1 can of red kidney beans (do not strain)
1 package of McCormick Chili seasoning
water

brown the turkey
mix the water and seasoning and pour over the turkey
add the sauce
add the beans
cook for 15 minutes

Pick up a pizza dough at the bakery, add cheese and previously made sauce. A quick salad on the side and we are done!
 

Brush a fillet of salmon with olive oil, add some spikes.

Broil for 8-10 minutes turning once.

Done.

The following day I will often "re-invent" it by adding shredded cheese to the leftovers and baking it in the oven.. Yum! :goodvibes
 
I think most of my meals are under 4 ingredients. We eat pretty plainly.

Meat/Fish, grilled or broiled

Veggie

Rice/Pasta with butter/cheese (sometimes we just have 2 veggies and no starch)
 
Marinaded chicken breast
Rice
Veggies

If I don't have time to bake the chicken breast, I have cooked ground turkey in the freezer. I just thaw it quick, add some taco seasoning, and throw it on some tortillas for taco night.
 
Salsa Chicken:

Boneless chicken breasts, taco seasoning mix, salsa, shredded cheese.
In that order. Bake. Done
 
I love this because it's easy peasy and a full meal.

Pork chops
Potatoes (peeled and cut into chunks)
Onions (peeled and cut into wedges)
Red pepper (cut into chunks)
1 can of beef broth
Just a sprinkling of Lipton onion soup mix (about 1/4 of a package)

Brown the pork chops. Add the other ingredients to the pan. Bring to a boil and then lower heat to a simmer. Cover and cook for 30 minutes.
 
1 lb. boneless cooked Chicken Breast cubed (or Turkey)
1 32 oz box chicken broth
1 jar med chunky salsa
some chopped cilantro
1 cup cooked rice (optional)

Mix all together in a pot, heat, serve with tortilla chips, diced avacado & cheese if you like.
 
1 box Velveeta Macaroni & cheese
Cooked Hambuger meat
Small jar of salsa (med or hot to your liking)

Brown meat, cook mac n cheese, add salsa. Mix all together & serve

Grilled Quesadillas:

Soft tortilla shells
butter/margarine
shredded cheddar/monterey/pepper jack cheese (your choice)
black beans (we buy them in a bag in the refrigerated section)
sour cream
salsa


We take the tortillas and lightly butter them on one side. Take one tortilla and place in a skillet (buttered side down). Spread it with a layer of black beans, then top with shredded cheese. Place another tortilla (buttered side up) on top of that. Once the bottom tortilla is golden brown, flip the whole thing over and brown the other side. Cut it into wedges, and serve with sour cream and salsa if you wish. (and sometimes we add some chopped jalepenos for a little added spice.)

I know these sound more like an appetizer or a party food, but we make them all the time for dinner because they're quick, they're cheap, and they're very filling with the black beans! One tortilla each is all we need for dinner!

I do the same thing with my spaghetti. The day after, I put the leftovers in a baking pan, add extra sauce if needed, mix some cheese throughout, and sprinkle some shredded cheese on top and bake it in the oven. Spaghetti bake. :)

Which jarred vodka sauce? A restaurant nearby makes a great homemade vodka sauce. :love: Put at $15/plate, that is a budget breaker to have often. I tried one jarred vodka sauce that was just vile! :scared1:

I see you live in NYC, if you are near a Fairway, they make the best homemade Vodka sauce in the refrigerator section for $5.99 a quart container.
