Mine is quiche.
eggs
cheese
a splash of milk
steamed broccoli
bacon or ham
pie shell
Blend the first 5 together, pour into a pre-baked pie shell, and bake on 350 for about 45 min. Serve with fruit, or a salad and croissants. Quick and easy.
What's your easy dish?
ETA- For us, I use a deep dish pie crust and 6-7 eggs. About 1/4 to 1/3 cup cheese in the mixture. Just about 10 min. before I remove the quiche I sprinkle 1/4 to 1/3 cup of cheese (I use a blend of cheeses) on top and let the cheese get melted. It's really good.
I use the broccoli I have on hand. Usually after we have had steamed broccoli as a side dish, I'll use the leftovers for the quiche. I make extra for that very reason. I'll generally use around 1/2 to 2/3rds cup of steamed broccoli.
I used 6 or 7 slices of bacon, cooked crumbled in the quiche mixture. I reserve a little and put it on top with the cheese.
